Mmmm, my mouth is watering..Cashew Sesame Salad & Ginger Dressing

I was craving ginger when I came up with these 2 recipes. Maybe because I love the slightly hot zesty flavor, but actually….I also love the fact that it is loaded with anti-inflammatory qualities (which btw, helps keep our bodies young 🙂

So this is what I came up with…a delicious Cashew Sesame Salad & Ginger Dressing, which were so delicious and was super easy to blend together.

I really loved it and knew Tiffany would too. So when she came over to do a makeover video with me, I whipped up some of this amazing Cashew Sesame Salad & Ginger Dressing.  You can see how she liked it on the video below….  Afterward we gave our cute model, Sharlee, some too, and I wish we would’ve gotten that on camera, because she LOVED it too. But then, I don’t know who wouldn’t!  Lol!  🙂

Are you ready to try it?  Here is what you’ll need…

CASHEW SESAME SALAD
  • 1 apple – cored & chopped. Peel if desired and soak for a few minutes in water and lime juice to keep from browning 
  • 4-6 cups fresh spring greens 
  • 1 thinly sliced sweet onion
  • 3-4 thinly sliced radishes
  • 1 handful cashew nuts

Instructions:

Chop apple and place in a shallow bowl. Cover with water and lime juice. Set aside, then chop and mix together the remaining ingredients in a large bowl. Strain out apple chunks and stir them into the salad. Add dressing (below) just before serving.

 

ASIAN GINGER DRESSING

  • 3/4 cup extra virgin olive oil
  • 1/3 cup coconut aminos – this can be found at health food stores or online
  • 1/3 cup organic apple cider vinegar
  • 3 tablespoons raw honey
  • 2 cloves garlic, minced
  • 1/4 teaspoon ginger root powder
  • 1/4 cup water

Instructions:

Mix in blender and refrigerate for 1-2 hours before serving.  Unless–you’re starving and want to eat right away (it’s still yummy served right away too!)
