Chicken & Yellow Rice

My grandpa used to run a restaurant in Key West, Florida where he served the most amazing yellow rice. He was a chef and put as much love into his dishes as he did food, so for me, yellow rice brings back wonderful, delicious memories.

Years ago, I asked him for his recipe, and he was happy to share, but a very sad thing happened–I lost his recipe. So this is kind of a monument to my sweet grandpa, with a twist of very healthy alternative ingredients. I know his recipe took all day to cook and was so savory…but the first time I made this version, it reminded me of that chicken and yellow rice dish he always created with love.

For those vegans and vegetarians amongst us, it’s also very good without the chicken and could easily be added to your recipe file as well.

One really exciting note, this is a great way to add turmeric to your diet which is the most anti-inflammatory spice in the world. Besides that, this dish is gluten-free, sugar-free, dairy-free and soy-free, of course! 🙂

Chicken & Yellow Rice Recipe

1 cup brown rice, soaked rinsed
2 1/2 cups vegetable broth
3 shallots or 1/2 yellow onion, chopped
1 carrot – chopped
1-2 cups diced free range, wild chicken (optional)
2 tablespoons avocado oil
2  garlic cloves
1 1/2 teaspoons sea salt
1 teaspoon turmeric
1/2 teaspoon cumin
1-2 sprigs cilantro – chopped

Place rice and broth in a large pot and bring to a boil.

Stir in all other ingredients, and lower heat. Cover tightly and cook for 45 minutes. Check starting at 30 minutes to be sure you don’t burn the bottom of the rice. Once rice is finished, remove from heat and allow to sit 5 minutes. Fluff with a fork and serve.
