What do these Cinnamon Spice No Guilt Paleo Diet Cookies and guacamole have in common? Actually not one thing. Well almost.
I’m not sure if it was the guacamole or just a guy thing that started up a conversation that led to these cookies. I was working on a shoot for Franklin Covey, in Phoenix, Arizona. One night, after work, I went out with the guys to find the best Mexican Food around. And it was. I really think we nailed it..
Then the guys started talking and every one of them wanted to order guacamole. The cute waitress with a delicate apron wrapped around a teeny waist lifted a single eyebrow. “So we want 7 guacamoles here?”
“Yep” came the choir of mens voices.
She headed off for the kitchen and of course, our talk was all about food, restaurants, and back to more food. I always knew that Rodney was a connoisseur of food so I shouldn’t have been surprised to learn that he liked to cook. Not only that, but that he even had a recipe posted online for his Cinnamon Spice Cookies.
I was intrigued. I pulled it up on my phone. I hadn’t heard of that flavor of cookie and Rodney seemed pretty darn proud of his edible concoction. I looked through the list of ingredients and must have had that thoughtful look as I contemplated whether I’d be able to restructure it to a healthy option or not. I could feel a smile work it’s way across my face. “I think I can do it!”
Maybe my timing wasn’t right because the waitress had just laid down 7 heaping plates of guacamole. Every eye was suddenly fixed on me. I looked around at the huge green piles of guac laid before them. I could tell that not one of them had any desire to part with even a small glob of the precious guac but they looked at me, almost wincing with fear that I was ready to tackle their sacred plates.
I had to laugh. It was actually quite hilarious, these guys were so funny and there was no way they would be able to down that much guac in one setting–even as much as I love the stuff, the thought of it kinda grossed me out for them.
“Rodney, I think I can come up with a conversion for your cookies.” He chomped down on that guac and shot me a look of doubt. That was all I needed. Ready or not Rodney, here I come.
So there. Plain and simple, that is what inspired this recipe for Cinnamon Spice No Guilt Cookies.
So when you taste it and love it, don’t thank me. Thank Rodney.
Oh, and as for that guacamole? Failure. Those silly guys looked about as green as their guac about 1/2 way through the sludge. Lol. They and that guac totally made my night.
So anyway, here we go:

Cinnamon Spice No Guilt Cookies
- 3/4 cups extra virgin cold pressed coconut oil
- 1 egg
- 1 tablespoon lemon juice
- 2 tablespoons coconut milk
- 1 tablespoon organic vanilla extract
- 1 1/2 cups almond flour
- 1/2 cups coconut flour – organic
- 1 cup coconut sugar
- 1 tablespoon organic cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1-2 handfuls chopped pecans (optional)
Preheat oven to 350 F or 175 C.
Place WET INGREDIENTS in a blender and mix well.
Place DRY INGREDIENTS in a large mixing bowl. Add the WET INGREDIENTS MIXTURE to the bowl, and mix together well.
Drop by teaspoons onto a cookie sheet lined with parchment paper. Flatten slightly by pressing a glass against each cookie. Bake 8-10 minutes. Remove, cool, and devour.
