YES, We are sharing a Horchata recipe!!
With Cinco de Mayo upon us again, we couldn’t help but share a delicious way to celebrate. We also happen to love horchatas, so this may be a little bit of a selfish pleasure–but we think you’ll love this delicious cooler with a perfect south of the border flavor as well.

Alrighty, here we go…
1 cup organic brown rice, raw
5 cups water ( filtered )
3/4 cup pure coconut milk
2 teaspoons pure organic vanilla extract
1 tablespoon ground organic cinnamon
1 teaspoon raw organic stevia leaf powder, or 1/2 cup raw honey )
1. Place rice and water in blender and mix 1 full minute. Let set 4 hours.
2. Strain the rice, using a nut milk bag , squeezing out all of the extra water into a pitcher.
3. Pour the rice milk in the pitcher back into the blender and add all of the remaining ingredients.
4. Mix well and serve over ice.

NOTE: Some controversy has been going on about stevia. Here is what we say about that….
Stevia is an herb that has been thought to be helpful in fighting high blood pressure and improving insulin, which may be beneficial for diabetics. It is also full of anti-oxidants, which we love! Stevia has been given a bad rap, with controversy that it appears to be an endocrine disruptor, which can disrupt the hormonal balance and could possibly be a health concern. We feel that the stevia plant itself is incredible, anti-aging, and it’s leaves even contain an ingredient that can help in reversing cancer, rather than causing it. WE BELIEVE that the problem with stevia is that most of it has been altered to death, and is not in it’s original form (a green herb.) It shouldn’t be white, or trademarked if it is truly raw and organic. We grow our own stevia, right inside our kitchens, and highly recommend it. If you choose to buy it, we’d say to make sure it’s pure organic green stevia powder or pure stevia extract.
