We happen to have 1 cute little peach tree in our backyard, and it knows how to make the yummiest peaches – So, ready for the first step? K, here goes…pick a dozen beautiful peaches (from your tree or favorite market 🙂
It’s always wise to rinse fruit well. Most recipes will tell you to blanch the peaches too. But I’ve figured out a way around that, not because I’m totally rebellious, you could blanch them for 1-2 minutes if you want, but I think it’s easier & faster to peel them….plus, in my book, the less cooking time = the more nutrients 🙂 So if you want to try my method out, just slice the peaches into 4-6 slices and peel the skin right off. It’s actually kind of fun (so maybe I’m a little warped, lol) but if you have any resistant peel, just use a little knife to help you out.

Here is a delicious peach crisp recipe you are going to LOVE…
Delicious peach crisp recipe
- Prep Time: 20 minutes
- Cook time: 10-12 minutes
- Yield: 12-15 servings
Ingredients:
FRUIT MIXTURE
10 cups fresh sliced peeled peaches
1 lemon (juiced) or 2 tablespoons fresh lemon juice
1 1/2 cups organic gluten-free oats
1 cup coconut sugar
1 cup chopped walnuts
1/2 cup almond flour
1 tablespoon cinnamon
1/8 teaspoon sea salt
1/2 cup coconut oil
1 1/2 teaspoons powder stevia
1/2 teaspoon vanilla extract
Instructions:
- Heat oven to 375ºF or 190ºC.
- Place peaches in un-greased 13×9 inch baking dish. Stir in lemon juice.
- In a large bowl, combine all topping ingredients. Just mix them until crumbly and then top peaches with the topping.
- Bake 10-12 minutes and remove.
- Serve warm with any of the toppings in our cookbook…ice cream, Sweet Leche, Coconut Cream, or Lemon Glaze Frosting-pictured
