Oh gosh, this olive garden zuppa toscana healthy knockoff soup is absolutely amazing.

In fact, I was a little bummed because my husband gobbled it down so fast that there are no leftovers. Sigh. But the other good thing is that it is really easy to make, so guess what i’ll be making again very soon, lol!Olive Garden Zuppa Toscana

It started out with a few extra potatoes from Sunday dinner, and turkey sausage that was sitting in the fridge. I always have kale on hand, and then a brilliant idea came to me–“could I make a healthy version of Olive Garden’s Zuppa Toscana soup?! So I started playing and this is what I came up with.

Oh, and it If you’ve been following us, you’ll know that we are BIG fans of the benefits of making organic bone broth at home. So of course, I will have to say that this Olive Garden Zuppa Toscana Knockoff is the perfect recipe to use our Homemade Chicken Broth in as well, so you can get the most health benefits from this soup!

K, so long story short, lol. YES! This is a delicious recipe.

  • 1/4 cup certified organic avocado oil
  • 1 pound of ground turkey Italian sausage
  • 1 medium onion, chopped
  • 6 cloves garlic, minced
  • 1-2 teaspoons organic fresh basil
  • 1-2 teaspoons dried organic oregano
  • 1-2 teaspoons dried organic thyme
  • 2-3 tablespoons crushed red pepper flakes
  • 2-3 medium red potatoes, chopped
  • 4 cups organic chicken broth
  • 2 cans heavy coconut milk
  • 1 teaspoon sea salt
  • 3-4 cups chopped kale

In a large pan, saute ground turkey, onions, and garlic in avocado oil over medium heat until onions are softened. 

Add all other ingredients except kale to the pot. Cover and cook for 30 minutes

Add the chopped kale and simmer for 15 minutes.

Serve

These raw strawberry thumbprint cookies are so easy you’ll almost feel robbed. Ok, I said “almost” lol, but not really, because you’ll be eating them right away and they won’t take all day long to make–in fact, try about 10 minutes actually.

Raw Strawberry Thumbprint Cookies
Cookie Ingredients
1 1/2 cups raw organic almonds
1/4 cup unsweetened certified organic coconut flakes
1/4 cup organic cold-pressed coconut oil – softened
2 teaspoons pure organic vanilla
1 tablespoon raw honey or organic maple syrup
dash of Himalayan sea salt
Strawberry Jam Gel Ingredients
1/3 cup diced strawberries

1 tsp lemon juice
2 tsp ground certified organic flaxseed
1 tablespoon raw honey or organic maple syrup
1. Place all cookie ingredients together in a food processor, and mix well.
2. Roll into 1″ balls
3. Place each ball on platter or tray and press thumb into it, set asideRaw Strawberry Thumbprint Cookies
4. Make Strawberry Jam Get by placing ingredients together in a bowl and just smash together with a fork. 
6. Drop scoops of the Jam into the indentions in the cookies. I use a baby spoon so it’s easier and not messy at all.
7. Place in freezer for 15-20 minutes, then move to the refrigerator (if they don’t get all eaten up!

I’ve really missed whipped cream smothered lavishly on my desserts. I even figured out a knock-off by accident one day, after I accidentally put my homemade ice cream in the fridge. It was actually pretty good, and it definitely got me thinking….

So here is what I came up with and I can’t believe how perfect it turns out. Since it’s raw, there will be variables, so I’ll explain those below. Let me know if you try it, and what the reaction of your world is when they are hit with the truth…no guilt, no nothing, just pure delicious refreshment and satisfaction. Vegan Whipped Cream

Makes 2 cups

  • 1 can pure coconut milk, canned
  • 1 teaspoon pure Bourbon Vanilla Extract
  • 12 drops pure Liquid Stevia
  • 2 tablespoons raw honey or organic maple syrup
  • 1-2 tablespoons coconut milk
  1. Refrigerate the can of coconut milk overnight. Make sure it’s not “light” so the cream will separate as it chills.
  2. Next day–remove the coconut milk from the fridge, and scoop out the cream and drop it into a mixing bowl.
  3. Add the vanilla, stevia and raw honey or organic maple syrup
  4. Whip on high for several minutes.
  5. Serve
  6. Keep in refrigerator.

We love to transform and improve recipes to make them absolutely mouth-watering, but delicious.  So when one of our viewers challenged us on making a knock-off of Olive Garden’s Pasta Alfredo, what could we say?  Ta-da, here it is 🙂

Oh AND–this recipe contains a few ingredients that could “scare” you!  Not because they are bad, but just the opposite, they are absolutely amazing and super power loaded with nutrients.  So when they look foreign and weird, don’t panic–just head to the health food grocery store and snag them.  Once you realize how wonderful they are, they’ll become essential in your new pantry anyway.. Promise 🙂

OLIVE GARDEN Pasta Alfredo Healthy Knock Off

INGREDIENTS

  • 1 lb. grain-free quinoa or gluten-free brown rice fettuccini noodles (these are way cheaper in bulk, thus this particular link, but it’s nice to have extras on hand because you’re going to really love this recipe, lol! 🙂
  • 1 can pure coconut milk
  • 1 teaspoon certified organic garlic powder
  • 1/3 – 1/2 cup rice milk cheese, mozzarella flavor – to taste (optional)
  • 2 Tablespoons lemon juice (or juice of 1 lemon)
  • Himalyan sea salt – to taste
  • organic rainbow peppercorns ground – to taste (these are really pretty as well as tasty)
  • 1 tablespoon certified organic Italian Herb Seasoning
  • 1 tablespoon organic chia seeds – ground
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Himalayan sea salt
  • 1/3 cup organic extra virgin olive oil (cold pressed)

INSTRUCTIONS

  1. Boil the  noodles as directed.
  2. Place all the rest of the ingredients, except the olive oil, in a high powered blender and blend 2-3 minutes, until pretty warm, but not too hot.
  3. Add in the olive oil, just for about 10 seconds
  4. Pour over a bed of warm fettuccini noodles.
  5. Laugh at how much time & money you just saved & at how much better you feel than if you would’ve eaten somewhere else! 🙂

Fried Chicken Gone Healthy!

Ok, so it’s not really fried, but will definitely give Fried Chicken a run for its money–hmmm, maybe not the best cliche, lol, sorry about that. It’s never been one of my strong points. But that said, this faux fried chicken is super simple, delicious, and cuts out all the grease, grime, gluten, grain, and will definitely make you the star of the show (well, table anyway 🙂

So get those Southern cravings ready because this recipe will quench them and make you wonder what took you so long. 🙂 Do I say that every time I post a recipe, sheesh. But the truth is, this is really delicious and I think you’ll absolutely love it and I hope it rocks your world! No need to crave fried chicken any more, yay. 🙂

And about the chicken, Tiffany and I ate a Raw Diet for 1 1/2 years and loved it. We did miss some of that savory home cooking, so we adjusted it back to a High Raw & Mediterranean Blend. So yes, we do eat chicken and wild salmon. When it comes to chicken though, there are some things to know.

Our concern has always been more about eliminating toxins and embracing as many nutrients as we possibly can, so we only eat organic chicken. And we know what it eats, because I have a son who raises chickens with a friend on the side. Most of the chicken feed available now days is genetically modified corn or soy, so chicken can be sold as “natural” even if it has had that type of diet. As far as we’ve been able to find, in the States, I believe it must be truly organic through and through if it is USDA Certified. But I could be wrong…because I still don’t know if that means they raise it on non-gmo grains exclusively, do you know? I’d really love to find that answer if anyone knows it, so we can let everyone in on what it really means.

A little off topic, but you know what’s so weird to me? The chickens Trent raises for us get BIG. And they don’t use any hormones or antibiotics at all. So WHY do you think they use them?? I know what I think, but I’d love to hear your thoughts and feedback on it!

When you buy a “natural” chicken, it may say it has “no hormones or antibiotics added” umm, does that make you even just a little bit mad? Of course they haven’t “added” any hormones or antibiotics to that dead chicken. Sadly that is all that it means.

So needless to say, we eat meat sparingly, so when we do eat it, we want it to be good. And this is a great recipe that we want you to love, because it is so much better for you than the alternative.

FRIED CHICKEN GONE HEALTHY

Yes, one last thought before we begin, I highly recommend using certified organic ingredients whenever you can, so I’ve searched high and low for the best deals on each of the following certified organic ingredients that we love to use…k, enough abuse, here ya go:

  • 2 eggs (optional – read why below)
  • 1 full chicken cut into pieces

FLOUR MIXTURE

  • 1 cup almond flour
  • 1 cup certified organic coconut flour
  • 1 tablespoon certified organic italian seasoning
  • 1 1/2 teaspoons certified organic sea salt
  • 1 teaspoon certified organic turmeric powder
  • 1 teaspoon certified organic fresh peppercorns
  • 1/2 teaspoon certified organic garlic powder
  • 1/2 teaspoon certified organic chipotle pepper

I’ve actually found that if I wash the chicken, then cover it and stick it in the fridge for several hours or even overnight, it becomes tacky enough that I don’t need any eggs in this recipe. The flour mix will stick perfectly and it’s not near as messy, but if you prefer the mess, be my guest (actually that would be LOTS of FUN!)

1. Preheat oven to 450 F. or 230 C.

2. Prep the chicken as described above. If you’d rather use eggs, then skip this step.

3. Place all of the flour mixture ingredients together in a bag and shake together.

4. If you didn’t prep the chicken in the fridge, just place 2 eggs in a bowl and dip each piece in the egg mixture) otherwise ignore this step. Sheesh, have I confused you? I am so sorry–it sounds a little complicated, but it really isn’t. I promise!

5. Coat a cookie sheet lightly with avocado oil.

6. Drop Chicken, one piece at a time, into the bag. Shake and coat well.

7. Place chicken on greased cookie sheet and bake for just 20 minutes for the juiciest most delicious chicken ever!

Dig in (before everyone else does!)

Hey Paleo, Gaps, Mediterranean, & Southbeach Dieters…watch out. This one’s for you. And for all of those who tease us all mercilessly and think we eat cardboard, we have one thing to say. Try it and go eat crow. Yup, that’s how we feel about that, lol. 🙂

I can’t really say that the heavens opened when I figured out this recipe because, well, they didn’t. But I can say that my mouth did, and so did everyone else’s who has entered my house ever since. Even Jero, my 8 year old grandson who is finally learning that healthy CAN even be good, and not only that, but actually quite yummy.

“Actually” – did I just use that word, ugh. It’s a word that makes me laugh because I think it infers that you were expecting something much less, so when it “actually” rises to the occasion, it’s quite the thing. But as I describe these incredibly rich chocolate fudge cookies above, there is really no actually to it. They are amazing, hands down. Feet down, whatever you want to put down. This is a recipe you will savor forever

Guilt-free Chocolate Fudge Cookies

  • 3/4 cup coconut oil
  • 1 teaspoon pure stevia extract (this is one of the very few that is a true extract and not chemically altered)
  • 2 hormone free, free-range eggs
  • 2 tablespoons fresh lime juice
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 cup coconut sugar
  • 1/2 cup cocoa
  • 3 tablespoons carob
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1-2 handfuls of pure Carob Chips
  • 1 handful walnuts (optional)

Preheat oven to 350 degrees F.  I like to use parchment paper, so now is the time to add a piece of parchment paper to your large cookie sheet. Place all ingredients in a bowl and mix together well. Scoop out teaspoons full of dough and place on sheet about 3″ apart. Bake for about 8 minutes. Remove while soft and let cool if you can stand it.

Oh gosh, this flavor takes me way back. I remember the first Orange Julius I ever had. I was in 7th grade and went to a new mall with my friends. One wet frothy taste and I was in love! But now that we’re living in a world full of gmo’s, unhealthy sugar, and even dairy loaded with hormones, antibiotics, and even pasteurized at such high levels that no nutrients remain, those delightfully delicious orange drinks aren’t exactly sharing the same love and affection that we would wish.

We’ve come up with the perfect recipe, not only loaded with nutrients, but amped up with fruits and vegetables, natural plant proteins, probiotics, fiber, AND a healthy fat, making it a complete meal. So here’s a quick Orange Julius Knock off recipe that we’re sure you’re going to LOVE!

ORANGE JULIUS KNOCKOFF

INGREDIENTS

1 1/2 cups organic coconut or organic almond milk
1 full orange, or 2 cuties, peeled (the juicier the oranges the better)
1 tsp. organic freshly squeezed lemon juice
1 teaspoon Greens superfood
1/2 scoop Raw Organic Vanilla Protein Powder
1 tablespoon organic extra virgin olive oil
1/2 banana
1 teaspoon organic flax seeds
2 tablespoons raw honey, organic maple syrup, or pure stevia powder
8 cubes ice

DIRECTIONS

Place all ingredients in a blender and blend 1-2 minutes until smooth and creamy. I usually like to start my day by adding the probiotic and fiber. But if you’ve had them already in your day, you can leave them out.

Egg Muffins, whether you’re on the Paleo, Gaps, Southbeach Diets, this makes a super easy and fun breakfast idea any day.

I found this idea on pinterest , and am so sorry that I can’t find the original source for it. But I loved the idea and whipped it up today with what was in my fridge.

Makes 6 Egg Muffins

Life begins the second

you decide you are

ready to LIVE it,

and no longer

wish to merely exist.

Paleo Egg Muffins Directions:

Preheat the oven to 375F and start chopping up fresh veggies. You could us just about anything, but this is what I had in my fridge today:

  • 1/4 red onion
  • 1/2 avocado
  • 1 bunch organic cilantro
  • 1 tomato
  • 1 red or green pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon basil
  • 1/2 teaspoon chili powder (if you like a kick)
  1. In a mini blender or a cup, whisk together 4 eggs and 1/4 cup almond or coconut milk and the spices. Set aside.
  2. Grease the muffin tin cups with avocado oil.
  3. Chop the vegetables, then drop a mix of them in each tin.
  4. Pour the egg mixture over the vegetables, almost to the rim of each cup
  5. Almond or rice milk cheese (optional)
  6. Bake for 20 minutes

Serve warm with organic ketchup or serancho hot sauce. When I’m just making 6 muffins, I’ll often mix up a batch of grain free muffins to bake in the other 6 tins. Try our recipe for Caramel Sticky Buns with these, or just on their own for a real treat!
