I can’t really say that the heavens opened when I figured out this recipe because, well, they didn’t. But I can say that my mouth did, and so did everyone else’s who has entered my house ever since. Even Jero, my 8 year old grandson who is finally learning that healthy CAN even be good, and not only that, but actually quite yummy.

“Actually” – did I just use that word, ugh. It’s a word that makes me laugh because I think it infers that you were expecting something much less, so when it “actually” rises to the occasion, it’s quite the thing. But as I describe these incredibly rich chocolate fudge cookies above, there is really no actually to it. They are amazing, hands down. Feet down, whatever you want to put down. This is a recipe you will savor forever

Guilt-free Chocolate Fudge Cookies

  • 3/4 cup coconut oil
  • 1 teaspoon pure stevia extract (this is one of the very few that is a true extract and not chemically altered)
  • 2 hormone free, free-range eggs
  • 2 tablespoons fresh lime juice
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 cup coconut sugar
  • 1/2 cup cocoa
  • 3 tablespoons carob
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1-2 handfuls of pure Carob Chips
  • 1 handful walnuts (optional)

Preheat oven to 350 degrees F.  I like to use parchment paper, so now is the time to add a piece of parchment paper to your large cookie sheet. Place all ingredients in a bowl and mix together well. Scoop out teaspoons full of dough and place on sheet about 3″ apart. Bake for about 8 minutes. Remove while soft and let cool if you can stand it.

I know, I’m screeching into St. Patty’s day by posting this recipe just in the nick of time! But I can’t blame it on the pie that was too frozen to cut and I had to wait for it to thaw–no not at all. I actually had planned to share some delicious frosted cookies with green frosting, but we devoured them and I totally forgot to get any pictures-ugh! What was I thinking?

But then, when I realized I had an overabundance of avocados on my hands and they were all about as ripe as they could be, my green recipe quest shifted. So I dreamt up a yummy, creamy pie, and I’m really happy I did, because this is such a yummy treat!

I guess I shouldn’t be too concerned because I’m always doing something green 🙂 So pinch me not, because what I’m sharing is perfectly safe whether it’s St. Patricks day or any other day of the week, month or year, AND absolutely worth the wait. Ok, I’ve justified myself long enough, lol…

Let’s get going–and no, this recipe’s not some decorative goodie to check off that list and hope to never make it again, because it is very yummy! I believe you’ll not only want to make this delicious dish, but that you’ll have others nudging you and asking you to please make it again soon.

Lime Cream Pie

Pre-make 1 Cookie Crust (recipe found in our Beauty In Every Bite Cookbook) or another grain free or raw crust

INGREDIENTS

3 large ripe avocados – skinned and pitted
1 1/2 cups cashews or 1 cup cashew butter
1 1/2 cups thick coconut milk
1/2 cup coconut flakes
1/2 cup raw honey
1/2 cup lemon juice

Place all of the above ingredients in the blender and blend until smooth. Pour into a prepared crust and place in the freezer for 1 hour. Remove and serve. Cover and keep remaining pie in the freezer.

And that should set you back about 7 or 8 minutes, think you can handle that? 🙂
