Why for cheaters? Maybe because you don’t even have to roll these cuties out! If you’re formally a fast food lover, because of the word “fast” then I think this is the perfect recipe for you.

And whether the people you’re cooking for are into eating clean and healthy or not doesnt’ matter one bit. They won’t feel like they are missing a thing when these yummies come warm, right off the stove.

These Grain-free tortillas are for real, but if you don’t have a lot of time, or don’t want the fuss of having to roll them out to cook them, congratulations, you have just hit the tortilla lottery! 🙂  So yeah, call it for cheaters, for whatever you want, but we all know that the true title of this recipe should be Grain-Free Tortillas for Smarties!

You simply throw all of the ingredients in the blender, and whamm, you’re just about done! And  they really taste great too. They are soft, yet hold together well for stuffing full of fajitas or taco filling, or even for egg burritos.

PALEO Grain-Free Tortillas

Ingredients

  • 2 eggs
  • 1/2 cup water
  • 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1/4 teaspoon sea salt

Directions

  1. Heat a crepe pan over medium heat.
  2. Place all ingredients in a blender and mix well.
  3. Spray or pour avocado oil on the pan
  4. Quickly pour tortilla mixture onto the hot pan, turning to cover all the way to the edges of the pan.
  5. Allow to bubble, then turn with a spatula. Cook until done.
  6. Serve

Indian Veggie Wrap Recipe

I was in a wrap mood the other day…..no, not rap 🙂  but I was really craving an Indian Veggie Wrap… So I whipped this together with what I had in my fridge–I think you could really use what you want, but this indian veggie wrap recipe was really delicious!

Of course I tweeted it, yeah, I’m a nerd, but when something is so good, it pretty much has to be shared!  Then one of our viewers that we love, @mommawins asked me to share my Indian veggie wrap recipe!  So, loving a challenge, here it is in all it’s glory. Alright, let’s get onto this recipe.

INGREDIENTS

MAKES 6

6 homemade grain free tortillas (or certified organic corn or brown rice tortilla)
1 can or 1 1/2 cups refried beans

1 large organic carrot – grated
1/4 raw beet – shredded thinly
3 organic radishes – chopped
1 bunch cilantro
1 handful fresh sprouts
1-2 leaves red chard
1/2 teaspoon Punjabi Masala – this spice is a staple in our kitchen, it’s delicious on many things!
1/2 teaspoon kelp – excellent natural detoxifier (great source for naturally occuring iodine)
sea salt to taste
fresh peppercorn to taste
 
DIRECTIONS

Warm the tortilla on the stovetop, then add the above ingredients to your liking!This isn”t going to be an exact science, just more of a “prepare to your liking” recipe. So I’ve listed everything in the shopping list that will be delicious on these wraps, but you can pick and choose from the list, rather than adding everything on it, unless you want the diva treatment, which we love, of course!  🙂

Once you have all of the ingredients prepared in bite size pieces or smaller, just warm your tortilla on the stove for about 1 minute, then pile the yummies onto it and go crazy!

Walnut Fudge, or Almond Fudge with no sugar, gluten, dairy or soy & make it in 5 minutes!

INGREDIENTS

  • 1 cup organic cold pressed coconut oil
  • 1 cup organic maple syrup or certified organic brown rice syrup
  • 1 cup unsweetened certified organic coconut chips
  • 1/3 cup raw organic cacao powder
  • 2 tablespoons certified organic carob powder – (or just add in this much raw cacao instead)
  • dash of pink himalayan sea salt
  • 1 cup raw walnuts (or almonds) 

DIRECTIONS

Just drop ingredients, except nuts into a food processor and mix well Then add in nuts and pulse 2-3 times.

Holiday’s or not, health nut or not, this is a Delicous Raw Fudge Recipe you’re sure to love!!  And, it’s grain/gluten-free, sugar-free, dairy-free, soy-free, peanut free, unhealthy fat free and super fast and easy too!  A special bonus for our friends on the Paleo, Mediterranean, and South Beach Diets – whew!

This video shows how super fast and simple it is to make this, but if I’ll also post it all down below. But before I do, there’s something really cool about this recipe that I want to share with you…

This very recipe is what I used to free myself from my sugar addiction.  And yes, I was a true addict, I have to admit.  I loved anything with sugar and ate it constantly, so even the thought of ever getting off of sugar was something I really couldn’t have even imagined.

it’s heaven, right?!

But I did.  And this is how….I made this fudge recipe about once a week and kept it in my refrigerator.  Every day, while I was off working on sets or if I had an event to go to, I would constantly be flooded with incredible desserts.  I never realized how much sugar was constantly lying before me…just trying to lure me in.  But as long as I knew I had my fudge at home, waiting for me, I was fine and I could turn away even the most chocolatey temptation.  It was actually really cool 🙂  and I was very proud of myself!  So, I pushed many treats away and just kept on going.

Then, about 6 months into the ordeal, I went to work on a movie and time flew by too fast.  I didn’t have time to get to the health food store to restock some of my ingredients and had to go 2 weeks without my fudge.  But guess what?!!  That was also when I realized I was no longer addicted to sugar.  Because we had a caterer that was huge on elaborate desserts and yes, they were strewn everywhere, every single day.  But I had no cravings, urges, or need to indulge because I was finally free! Yay!!!  So that’s my story, and the funny thing is, I probably was off of sugar sooner than 6 months into it, but that’s okay, because I enjoyed a lot of this fudge anyway.

Oops, a little note–if you watch the video, we don’t use agave anymore at all.  We really don’t trust it and Tiffany gets really inflamed from it.  After I did this video, we did a lot of research, and concluded that it is processed at hot temperatures and that may be enough to cause a chemical reaction that could be potentially dangerous.  So instead, we use 3/4 cup raw honey or 1 cup pitted dates to sweeten this instead.

Anyway, happy fudge making, eating and savoring!! And enjoy all the time you save with this Delicious Fudge, no sugar, gluten, dairy or soy that only takes 5 minutes to make!

It’s delicious, moist and comes with another one of our motivational thoughts to keep you moving on down that road to health and beauty! xo

Pumpkin Crumb Cake – no grain, gluten, refined sugar, dairy or soy!

This was another Pinterest Inspired recipe that made me stop and force myself not to drool.  Then I went to work on mass reconstruction and conversion to make this amazing Pumpkin Crumb Cake – with no grain, gluten, refined sugar, dairy or soy, of course!

I’m really excited because we’re heading to my mom & dad’s for Thanksgiving this week and I’m doing desserts and sweet potatoes–ohmygosh, I have the best recipe for those too.  If you’d like that recipe, let me know asap and I’ll get it posted too!

But I love doing desserts because it’s so fun to come up with family favorites that I transform into yummy healthy alternatives.  The poor family actually had to choke down some pretty sad dishes through the early years, but now they actually like what I create–big whew on that (especially for them, lol!)

This recipe actually looks like a ton of ingredients and like it would be really hard, but the truth is, it’s really simple.  The secret is to have all of these ingredients all of the time. 🙂

And I guess you could use canned pumpkin if you need to, but it’s actually really fun to use those perfectly good pumpkins that may be sitting around as fall decorations (not the plastic ones tho-yikes!)

PALEO PUMPKIN CRUMB CAKE RECIPE.

  • Prep Time: 15 minutes
  • Cook time: 20 minutes
  • Yield: 12-15 servings

FIRST INGREDIENTS
1 cup USDA certified organic avocado oil
2 Bob’s Red Mill egg replacements
2 bananas
1 cup pitted certified organic dates
2 1/2 cups raw pumpkin meat – cut into chunks

SECOND INGREDIENTS
1 cup organic buckwheat or oat flour
1 cup organic tapioca starch
2 teaspoons organic baking powder- gluten & aluminum free
2 teaspoons organic ground cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon organic green stevia powder
1 teaspoon sea salt

TOPPING MIX
2/3 cup organic cold-pressed coconut oil
1 1/2 cups organic old fashioned (gluten free) oats
1 1/2 cups coconut sugar
1 1/2 cups organic almond flour
1 tablespoon organic ground cinnamon
1/2 cup walnut pieces

Instructions:

  1. Preheat oven to 350ºF or 175ºC.  Grease a 13”x9” cake pan, using coconut oil and gluten free flour.
  2. Combine all of the FIRST ingredients in the blender and mix until smooth.  Pour into a large bowl.
  3. Add in all of the SECOND ingredients; and mix together with a hand mixer.  Pour into pan and place in the center of the oven.
  4. Bake for 15 minutes.  Prepare TOPPING MIX by mixing all ingredients together in a bowl.
  5. Remove from the oven and sprinkle the TOPPING MIX over the top.  Place back in oven another 5-10 minutes.  Remove and serve.
  6. Store covered, in the refrigerator
