These raw strawberry thumbprint cookies are so easy you’ll almost feel robbed. Ok, I said “almost” lol, but not really, because you’ll be eating them right away and they won’t take all day long to make–in fact, try about 10 minutes actually.

Raw Strawberry Thumbprint Cookies
Cookie Ingredients
1 1/2 cups raw organic almonds
1/4 cup unsweetened certified organic coconut flakes
1/4 cup organic cold-pressed coconut oil – softened
2 teaspoons pure organic vanilla
1 tablespoon raw honey or organic maple syrup
dash of Himalayan sea salt
Strawberry Jam Gel Ingredients
1/3 cup diced strawberries

1 tsp lemon juice
2 tsp ground certified organic flaxseed
1 tablespoon raw honey or organic maple syrup
1. Place all cookie ingredients together in a food processor, and mix well.
2. Roll into 1″ balls
3. Place each ball on platter or tray and press thumb into it, set asideRaw Strawberry Thumbprint Cookies
4. Make Strawberry Jam Get by placing ingredients together in a bowl and just smash together with a fork. 
6. Drop scoops of the Jam into the indentions in the cookies. I use a baby spoon so it’s easier and not messy at all.
7. Place in freezer for 15-20 minutes, then move to the refrigerator (if they don’t get all eaten up!

Raw Banana Cream Pie

PIE CRUST RECIPE – how to make pie crust they’ll love!

  • 2 cups organic almonds
  • 1 cup unsweetened certified organic coconut chips
  • 1/2 cup certified organic dates – pitted
  • 1/4 teaspoon pink himalayan sea salt

Mix together in blender until crumbly. Then press it into a pie pan.

  • 6 medium bananas (2 will go in the filling, and slice the other 4 and drop them into the crust before adding the filling)

FILLING

  • 2 medium bananas
  • 1 cup raw organic cashews (these get a lot cheaper if you can buy them in bulk)
  • 1 cup whole coconut milk
  • 1/3 cup organic extra virgin coconut oil
  • 1/2 cup moist organic dates – pitted and pressed into cup
  • 2 tablespoons lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon pink himalayan sea salt

1. Refrigerate coconut milk overnight if you are using it to make whipping cream. 

2. Make the crust in a ceramic pie plate

3. Fill the crust with 4 of the bananas, sliced

4. Mix all of the filling ingredients in the blender until smooth in texture. Pour over the crust and sliced bananas

5. Freeze 2 hours, make our yummy vegan whipped cream recipe, and serve!

So here is what I came up with and I can’t believe how perfect it turns out. Since it’s raw, there will be variables, so I’ll explain those below. Let me know if you try it, and what the reaction of your world is when they are hit with the truth…no guilt, no nothing, just pure delicious refreshment and satisfaction. Vegan Whipped Cream

Makes 2 cups

  • 1 can pure coconut milk, canned
  • 1 teaspoon pure Bourbon Vanilla Extract
  • 12 drops pure Liquid Stevia
  • 2 tablespoons raw honey or organic maple syrup
  • 1-2 tablespoons coconut milk
  1. Refrigerate the can of coconut milk overnight. Make sure it’s not “light” so the cream will separate as it chills.
  2. Next day–remove the coconut milk from the fridge, and scoop out the cream and drop it into a mixing bowl.
  3. Add the vanilla, stevia and raw honey or organic maple syrup
  4. Whip on high for several minutes.
  5. Serve
  6. Keep in refrigerator.

I had a couple of thoughts on my mind. One was chocolate, but not the waxy stuff that’s loaded with trans fats and sugar….no not that.

But pure rich dark chocolate fudge. And then I had the thought of going green, which is what we always like to do, but this was a little different because it’s that magical green month of March. So I thought we’d live a little dangerously and try whipping up a dark chocolate fudge recipe today with a March inspired twist of mint.

AND it not only worked–it was incredible!

So yes, your taste buds are in for one rich and delightful treat–just saying. I sound like I’m totally bragging, yikes! Ok, so to set the record straight, I can’t take all the credit here…because I think there had to be heavenly intervention with this recipe for sure!chocolate quotes

Especially since this dark chocolate mint fudge is only good for you, but is also such a nutrient boost, and then some. Everything in them is rich in nutrients, or helps you to absorb those nutrients. Cacao is one of the most amazing natural sources of anti-oxidants, and it is in it’s purest form, never roasted, and the nutrients are never compromised either. 5 min. Dark Chocolate Mint Fudge Recipe….

  • 1 1/2 cups organic extra virgin cold pressed coconut oil (slightly softened)
  • 1 cup certified organic dates – pitted
  • 1/4 cup raw honey
  • 1/2 cup certified organic raw cacao powder
  • 1/2 teaspoon Pure Organic Bourbon Vanilla Extract
  • 1/3 teaspoon pink himalayan sea salt
  • 8 drops Organic Peppermint Essential Oil – we recommend that you don’t ever use any essential oils for eating UNLESS they are organic – why here: Are Essential Oils Safe?

Place all ingredients in a food processor and mix until smooth.

Spread into a glass or ceramic 9×9 dish or a pin pan. Freeze 20-30 minutes. Remove and go crazy! Cut them into small bite size pieces as they will be RICH!

What do these Cinnamon Spice No Guilt Paleo Diet Cookies and guacamole have in common? Actually not one thing.  Well almost.

I’m not sure if it was the guacamole or just a guy thing that started up a conversation that led to these cookies. I was working on a shoot for Franklin Covey, in Phoenix, Arizona. One night, after work, I went out with the guys to find the best Mexican Food around. And it was. I really think we nailed it..

Then the guys started talking and every one of  them wanted to order guacamole. The cute waitress with a delicate apron wrapped around a teeny waist lifted a single eyebrow. “So we want 7 guacamoles here?”

“Yep” came the choir of mens voices.

She headed off for the kitchen and of course, our talk was all about food, restaurants, and back to more food. I always knew that Rodney was a connoisseur of food so I shouldn’t have been surprised to learn that he liked to cook. Not only that, but that he even had a recipe posted online for his Cinnamon Spice Cookies.

I was intrigued. I pulled it up on my phone. I hadn’t heard of that flavor of cookie and Rodney seemed pretty darn proud of his edible concoction. I looked through the list of ingredients and must have had that thoughtful look as I contemplated whether I’d be able to restructure it to a healthy option or not. I could feel a smile work it’s way across my face. “I think I can do it!”

Maybe my timing wasn’t right because the waitress had just laid down 7 heaping plates of guacamole. Every eye was suddenly fixed on me. I looked around at the huge green piles of guac laid before them. I could tell that not one of them had any desire to part with even a small glob of the precious guac but they looked at me, almost wincing with fear that I was ready to tackle their sacred plates.

I had to laugh. It was actually quite hilarious, these guys were so funny and there was no way they would be able to down that much guac in one setting–even as much as I love the stuff, the thought of it kinda grossed me out for them.

“Rodney, I think I can come up with a conversion for your cookies.” He chomped down on that guac and shot me a look of doubt. That was all I needed. Ready or not Rodney, here I come.

So there.  Plain and simple, that is what inspired this recipe for Cinnamon Spice No Guilt Cookies.

So when you taste it and love it, don’t thank me. Thank Rodney.

Oh, and as for that guacamole? Failure. Those silly guys looked about as green as their guac about 1/2 way through the sludge. Lol. They and that guac totally made my night.

So anyway, here we go:

Cinnamon Spice No Guilt Cookies

WET INGREDIENTS

  • 3/4 cups extra virgin cold pressed coconut oil
  • 1 egg
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut milk
  • 1 tablespoon organic vanilla extract

DRY INGREDIENTS

  • 1 1/2 cups almond flour
  • 1/2 cups coconut flour – organic
  • 1 cup coconut sugar
  • 1 tablespoon organic cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1-2 handfuls chopped pecans (optional)

Preheat oven to 350 F or 175 C.

Place WET INGREDIENTS in a blender and mix well.

Place DRY INGREDIENTS in a large mixing bowl. Add the WET INGREDIENTS MIXTURE to the bowl, and mix together well.

Drop by teaspoons onto a cookie sheet lined with parchment paper. Flatten slightly by pressing a glass against each cookie. Bake 8-10 minutes. Remove, cool, and devour.

Before you get too far, I have a great little tip. You can save lots of $$$ by making your own coconut milk for this recipe, and really ANY recipe that calls for it. SO we have a LITTLE GIFT on our sidebar! When you subscribe, we will hook you up with just how you can make your own DIY coconut milk.

I haven’t found anyone who doesn’t love this Thai Coconut Soup–even amongst our unlovers of coconut friends! Even kids come flocking and asking for more of this soup and of course, we are happy to give them something so yummy, simple, and healthy!

And oh-did I say easy? Because if you’re into that, this low temperature Thai Coconut Soup is not only easy, it’s easy on the body and maintains many more nutrients than many recipes that are cooked to death, and holding onto very few, if any of the nutrients.

And this Thai Coconut Soup recipe is gluten-free, grain-free, dairy-free, sugar-free and soy-free too. 

One note, because this soup is barely heated before serving, make sure that if you decide to add meat, that it is pre-cooked. We just don’t want to see you get sick eating our food! With that, get going and let us know how you love this!

Thai Coconut Soup

4 cups chicken or vegetable organic broth
3 cans coconut milk
1 cup fresh mushrooms – sliced
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice
2 shallots, finely chopped
2 tablespoons minced ginger
2 teaspoons natural red curry paste
2 stalks lemon grass – bruised
2 tablespoons organic coconut sugar
1/4 teaspoon organic crushed red pepper
Organic sea salt to taste
1 lb. cooked & diced hormone free chicken or shrimp – (optional)
1 tablespoon organic extra virgin olive oil

Pour coconut milk and broth into a large pan. Heat on medium heat until it feels warm, then add the rest of the ingredients and slightly cook for just a few minutes until ingredients are warmed. Remove from heat and stir in the olive oil.

Serve 🙂

That’s it!! If you have a starving family that’s ready to eat now, this is a great quick-fix (unless you decide to grow the vegetables from scratch 🙂

These Grain-free tortillas are for real, but if you don’t have a lot of time, or don’t want the fuss of having to roll them out to cook them, congratulations, you have just hit the tortilla lottery! 🙂  So yeah, call it for cheaters, for whatever you want, but we all know that the true title of this recipe should be Grain-Free Tortillas for Smarties!

You simply throw all of the ingredients in the blender, and whamm, you’re just about done! And  they really taste great too. They are soft, yet hold together well for stuffing full of fajitas or taco filling, or even for egg burritos.

PALEO Grain-Free Tortillas

Ingredients

  • 2 eggs
  • 1/2 cup water
  • 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1/4 teaspoon sea salt

Directions

  1. Heat a crepe pan over medium heat.
  2. Place all ingredients in a blender and mix well.
  3. Spray or pour avocado oil on the pan
  4. Quickly pour tortilla mixture onto the hot pan, turning to cover all the way to the edges of the pan.
  5. Allow to bubble, then turn with a spatula. Cook until done.
  6. Serve

  • 1 1/4 cups warm water

  • 1 tablespoon gluten-free active dry yeast
  • 1 1/2 cups organic tapioca starch flour

  • 1/4 cup organic coconut flour
  • 1/4 cup 99% pure organic psyllium husk powder
  • 1/4 cup USDA certified organic avocado oil
  • 3 large eggs (hormone free) OR 3 Bob’s RedMill Egg Replacements
  • 1 Tablespoon organic apple cider vinegar
  • 1 1/2 teaspoons pink himalayan sea salt
  • 1 teaspoon certified organic dried oregano
  • 1 teaspoon certified organic dried thyme
  • 1 teaspoon certified organic dried rosemary
  • 1 teaspoon certified organic basil

1. Preheat oven to 100°F
2. Grease a 9 x 5-inch loaf pan with coconut oil and set it aside.
3. Place warm water in a glass bowl, add honey and yeast. Stir together and set aside.
5. In a medium-sized bowl, combine almond flour, tapioca flour, coconut flour, and psyllium husk powder. Stir together.
6. Add oil, eggs, vinegar and yeast mix to the dry ingredients, beat on low just until combined. Then adjust the speed to high and beat about 7 minutes.
7. Place dough into prepared pan, then place inside oven. Also place a cup of water in a pie tin, below the bread inside oven, then close the door to proof.
8. After about 20 minutes, change the oven to 375ªF
9. Bake 35-40 minutes.
10.Remove and cool.

Serve with Organic Extra Virgin Coconut Oil and raw honey for an extra amazing treat–yummmmmm!
