This Grain-free Frosted Banana Bars Recipe is so delicious, especially when topped with our Lemon Icing recipe, mmmm. We really hope you try it, if you haven’t yet. AND if you have, did you try it on something exciting? If so, please share!! Did you try it on your face? Did you try it on your cheeks? Did you try it on your neck? Or did you try it in your tummy? lol–ok, enough with the Dr. Seuss-isms, if that’s even a word. 🙂 The you really could do any of the above and have a wonderful skin softening spa treat!

And you’ll be surprised at how simple it is to make too! It came about because I had some overly ripe, ok black bananas, on my counter and wasn’t about to throw them away. I’ve made delicous banana bread, and amazing Caramel Sticky Buns with black bananas, so I decided to try something else that I could share it with you.

Also–with many of you working on filling your new Pantries with staples, so we have something very wonderful to share….IF you need a great place to get great quality organic ingredients, AND you’re wanting the very BEST PRICES on them, we highly recommend that you check out this new ORGANIC MARKET, their prices are a steal, in fact they are better than anywhere else we’ve seen, amazon included, and we know these items are all fresh! Here goes:

Easy Lemon Icing – (no sugar, dairy, grain, gluten, or soy)

  • 1 1/4 cups organic extra virgin coconut oil (shortening consistency)
  • 3/4 cups softened unfiltered raw honey
  • 2 Tablespoons lemon juice (or juice of 1 lemon)
  • 1/4 cup organic tapioca starch flour

Note: your coconut oil needs to be a shortening consistency-for warmer climates, you may need to place the coconut oil in the fridge for an hour before using. Now let’s get going!!

I like to cream together the coconut oil and honey. Then I add the lemon juice and tapioca starch, and continue whipping on high speed with the mixer. Before long, I have a beautiful soft spread of icing. Make sure to only apply it to goodies that are completely cooled (except for your face 🙂 because the icing will melt on anything that is warmed over 70 degrees F.
