I’ve really missed whipped cream smothered lavishly on my desserts. I even figured out a knock-off by accident one day, after I accidentally put my homemade ice cream in the fridge. It was actually pretty good, and it definitely got me thinking….

So here is what I came up with and I can’t believe how perfect it turns out. Since it’s raw, there will be variables, so I’ll explain those below. Let me know if you try it, and what the reaction of your world is when they are hit with the truth…no guilt, no nothing, just pure delicious refreshment and satisfaction. Vegan Whipped Cream

Makes 2 cups

  • 1 can pure coconut milk, canned
  • 1 teaspoon pure Bourbon Vanilla Extract
  • 12 drops pure Liquid Stevia
  • 2 tablespoons raw honey or organic maple syrup
  • 1-2 tablespoons coconut milk
  1. Refrigerate the can of coconut milk overnight. Make sure it’s not “light” so the cream will separate as it chills.
  2. Next day–remove the coconut milk from the fridge, and scoop out the cream and drop it into a mixing bowl.
  3. Add the vanilla, stevia and raw honey or organic maple syrup
  4. Whip on high for several minutes.
  5. Serve
  6. Keep in refrigerator.

How could a milkshake be guilt free?? Mmmm, it’s Peach Shake time, and right now I’m sitting here with a big box of those yummy things in my fridge. I wish I could figure out a way to get them to ripen week by week so we can enjoy them fresh off the tree, but I haven’t figured out that one yet. But I’m not going to complain, because I look forward to the harvest every year. And when they are on, this is a milkshake to die for…or should I say to LIVE for?!  Especially one that tastes so delicious, and full of so much good, yet none of the bad!  See for yourself, this vegan peaches & cream shake is amazing!

Vegan Peaches n Cream Shake Recipe

1 cup almond milk or coconut milk

2 fresh or frozen peaches (pitted)

1 spear of pineapple

1/2 teaspoon pure vanilla extract

1/2 scoop Organic Vanilla Protein Powder

1 teaspoon Aceola Cherries vitamin c powder

1 teaspoon organic flaxseed

1 handful of ice cubes if peaches are frozen, 2 handfuls if fresh

1 frozen banana – optional

Instructions:

Place all ingredients in the blender and mix until smooth.  If you want more nutrients, add 1-2 cups of your favorite greens (kale, collards, spinach).  It will change the color, but add a lot of nutrients, while keeping the flavor really tasty.

Egg Muffins, whether you’re on the Paleo, Gaps, Southbeach Diets, this makes a super easy and fun breakfast idea any day.

I found this idea on pinterest , and am so sorry that I can’t find the original source for it. But I loved the idea and whipped it up today with what was in my fridge.

Makes 6 Egg Muffins

Life begins the second

you decide you are

ready to LIVE it,

and no longer

wish to merely exist.

Paleo Egg Muffins Directions:

Preheat the oven to 375F and start chopping up fresh veggies. You could us just about anything, but this is what I had in my fridge today:

  • 1/4 red onion
  • 1/2 avocado
  • 1 bunch organic cilantro
  • 1 tomato
  • 1 red or green pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon basil
  • 1/2 teaspoon chili powder (if you like a kick)
  1. In a mini blender or a cup, whisk together 4 eggs and 1/4 cup almond or coconut milk and the spices. Set aside.
  2. Grease the muffin tin cups with avocado oil.
  3. Chop the vegetables, then drop a mix of them in each tin.
  4. Pour the egg mixture over the vegetables, almost to the rim of each cup
  5. Almond or rice milk cheese (optional)
  6. Bake for 20 minutes

Serve warm with organic ketchup or serancho hot sauce. When I’m just making 6 muffins, I’ll often mix up a batch of grain free muffins to bake in the other 6 tins. Try our recipe for Caramel Sticky Buns with these, or just on their own for a real treat!

Before you get too far, I have a great little tip. You can save lots of $$$ by making your own coconut milk for this recipe, and really ANY recipe that calls for it. SO we have a LITTLE GIFT on our sidebar! When you subscribe, we will hook you up with just how you can make your own DIY coconut milk.

I haven’t found anyone who doesn’t love this Thai Coconut Soup–even amongst our unlovers of coconut friends! Even kids come flocking and asking for more of this soup and of course, we are happy to give them something so yummy, simple, and healthy!

And oh-did I say easy? Because if you’re into that, this low temperature Thai Coconut Soup is not only easy, it’s easy on the body and maintains many more nutrients than many recipes that are cooked to death, and holding onto very few, if any of the nutrients.

And this Thai Coconut Soup recipe is gluten-free, grain-free, dairy-free, sugar-free and soy-free too. 

One note, because this soup is barely heated before serving, make sure that if you decide to add meat, that it is pre-cooked. We just don’t want to see you get sick eating our food! With that, get going and let us know how you love this!

Thai Coconut Soup

4 cups chicken or vegetable organic broth
3 cans coconut milk
1 cup fresh mushrooms – sliced
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice
2 shallots, finely chopped
2 tablespoons minced ginger
2 teaspoons natural red curry paste
2 stalks lemon grass – bruised
2 tablespoons organic coconut sugar
1/4 teaspoon organic crushed red pepper
Organic sea salt to taste
1 lb. cooked & diced hormone free chicken or shrimp – (optional)
1 tablespoon organic extra virgin olive oil

Pour coconut milk and broth into a large pan. Heat on medium heat until it feels warm, then add the rest of the ingredients and slightly cook for just a few minutes until ingredients are warmed. Remove from heat and stir in the olive oil.

Serve 🙂

That’s it!! If you have a starving family that’s ready to eat now, this is a great quick-fix (unless you decide to grow the vegetables from scratch 🙂

3 Simple Steps to become Healthier

I have this crazy urge to talk about empowerment… Partly because of a suggestion by momsbestnetwork.com 🙂 and party because its a huge focus for Natures Knockout.

Right now I’m working on a film in Austria and Germany (loving it by the way :). But as I travel, I get a chance to visit with a lot of people from all walks of life and being so passionate about natural & organic possibilities, my conversations always go there–I know, sometimes I remind myself of Bubba in Forest Gump, ugh lol!

3 ways to be more healthy

But the other day we had a little downtime on set, so I started into some yoga. Before I knew it, bodies were strewn all around me in all kinds of poses. Haha-I loved it, of course 🙂 but amongst them was a cute Austrian mother who expressed a wonderful passion for natural and organic goodness.

She shared her desire to convert her family over to more healthy products and foods as well, but wasn’t quite sure how to get hem there.
Contrasting that, I had a conversation with a group of people on set who were talking about all of the toxins we’re bombarded with and mentioned they “should” do better, but felt it too hard. One of them said, “Why waste time worrying about all of the toxins, because they’re in everything.”

Hmmmmm, of course I couldn’t turn around at leave it at that. So I shared some thoughts.

It’s not about feeling powerless and giving up! — it’s about empowerment!

Knowledge is power. When you meet someone who has embraced healthy changes, you can see the fire in their eyes. They are usually infectious with energy and a zest for life…that is empowerment.

3 ways to be more healthy

And, if you’re a mother wanting to help your kids be more healthy, big praise and kudos! You have the power to change nations, no matter where you are.

Here are some basic steps we’ve taken to make these changes ourselves…

1. Start with a desire, and prepare to make changes one step at a time.

2. Focus on replacing, not depriving:

  • a. Replace the words “should” and “need” with “will” and “want”
  • b. Replace guilt with gratitude – embrace the good steps you take every day
  • c. Don’t compare yourself to anyone, we’re all at different places in our journey
  • d. When changing out a product, head to our Chemical Spy at naturesknockout.com and check our ingredient database with over 3000 chemicals we have concerns over, or our I-spy videos to learn red flagged ingredients yourself ….or join us in our journey and watch our recommendations. Also, our store is filled with thousands of products that are NK approved, check them out.
  • e. When changing out foods, take recipes you love and replace prepackaged, processed foods, genetically modified, chemically laden ingredients with fresh, clean and nourishing ingredients.   • f. When it comes to toxic thoughts — start by recognizing them, when they come-don’t beat yourself up, just let them come and watch them go, then quickly replace them with positive thoughts.3 ways to be more healthy

3. Start today! Just find one thing to work on replacing today and do it.

That’s it, just take it one day at a time, seeking to do a little bit better every day and congratulating yourself each step of the way.

ps I have a cute follow-up of the Austrian mom I mentioned above…she came back to visit our set yesterday and had gone to our website and already tried out our Almond milk recipe–YAY!! She said her family loved it, and that she went on to make granola from the remaining pulp–MUAH, love it! I was so thrilled for her–she took that first step and ran with it!

And you’ll be surprised at how simple it is to make too! It came about because I had some overly ripe, ok black bananas, on my counter and wasn’t about to throw them away. I’ve made delicous banana bread, and amazing Caramel Sticky Buns with black bananas, so I decided to try something else that I could share it with you.

Grain-free Frosted Banana Bars Recipe

Wet Ingredients

  • 3/4 cup almond or coconut milk
  • 1 cup mashed ripe bananas
  • 1/2 cup coconut oil
  • 2 hormone free eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon pure organic liquid stevia
  • 1 teaspoon pure organic vanilla extract

Dry Ingredients

  • 1 cup coconut sugar
  • 1 cup tapioca starch
  •  2/3 cup banana flour
  • 1/3 cup organic unsweetened coconut (grated)
  • 1 level teaspoon baking soda
  • 1 level teaspoon organic gluten free, aluminum free baking powder
  • 1/2 teaspoon pink himalayan sea salt

Directions

  1. Preheat oven to 350F
  2. Grease a large 13x18x1″ cookie sheet with coconut oil
  3. Place all “Wet Ingredients” in the blender and blend until smooth, set aside.
  4. Place all “Dry Ingredients” together in a large bowl. Stir together.
  5. Pour Wet Ingredients in with Dry Ingredients, then mix well with a hand mixer.
  6. Pour mixture into the cookie sheet and place in oven.
  7. Bake 20-24 minutes.
  8. Remove and cool completely
  9. Frost with Lemon Icing

Oatmeal Surprise Cookies

Gluten-free, grain-free, sugar-free, dairy-free, soy-free & guilt free!

Super easy recipe and as always, it’s gluten-free, sugar-free, dairy-free & soy-free! 

1 1/2 cups organic oats – gluten free

1 cup unsweetened coconut chips

 1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/4 cup almond meal (use pulp from almond milk recipe 🙂

3/4 cup organic walnuts – chopped (bulk)

1 cup organic raisins (bulk)

2 large ripe bananas

1 large hormone/antibiotic free egg

1/4 cup coconut oil

1 teaspoon pure vanilla extract

1 teaspoon liquid stevia

Lightly grease a cookie sheet with coconut oil. Preheat oven to 350ºF or 175ºC  

Mix all ingredients together with a hand mixer, then spoon onto baking sheet.  

Bake 17-20 minutes. Remove and cool on a wire rack.
