It started with pinterest.  I saw a pin for chocolate ice cream and had a little tiny tinge of interest.  Okay, may more than just a little teeny tiny bit, because I went right into the kitchen and started whipping together my own healthy version.  And guess what?!!  It really is amazing!  And as always, it is gluten-free, sugar-free, soy-free and dairy-free, and guilt free of course!motivatinoal quote

Raw Chocolate Banana Split Ice Cream Recipe

2 frozen bananas (peel them before freezing or life will be very frustrating!)
2/3 cup almond, rice, or thick coconut milk
1 teaspoon pure vanilla extract or scooped out vanilla bean
2-3 pitted certified organic dates (yes, take out the pits–I’ve learned that the hard way too 🙂
2-3 tablespoons raw certified organic cacao powder
chopped nuts to sprinkle on top
Mix all ingredients (except chopped nuts) together in a blender until blended well.  Pour into a glass bowl and place in the freezer for at least 30 minutes.  I took mine out a little early-ugh, yes…I was maybe a little impatient.  But it was still delicious!

Remove from freezer and scoop into bowls.  Sprinkle with chopped nuts.

Makes 2 servings (unless you feel like being a pig of course –only speaking from experience, heh-heh!)

Raw Hot Fudge Recipe, without heat and gluten free, sugar free, dairy free, and soy free!

Ready for the most amazing chocolate fudge syrup? Yes, it’s gluten-free, sugar-free, dairy-free, and soy free, and sooooo yummy! It’s our own version that we cooked up, almost by accident and we’ve been celebrating ever since, lol.

You know how things sometimes happen for a reason?  Well, this is one of those “things”…alleluia!  My sister was staying with us on a visit and she started asking what she should use to improve her skin.  That’s like asking a pack of wolves if they’d like to eat you, haha, so of course, I marched her down to my kitchen and started whipping up some nutrients in a dish.  I loaded it with antioxidants and omega 3 fatty acids and moisture.  I slapped it on my face and had her do the same.  But before I knew it, she was licking her bowl clean…. ummm, excuse me?! 🙂

It’s a little hard to take someone seriously with chocolate slopped all over her face, but…as I thought about it, I realized she was onto something, hmm.  I knew it should taste pretty yummy with the ingredients it contained, so I licked my own lips and as far around my lips as my tongue could reach…and yes, you guessed it, before long I had licked my own bowl clean.

It really tasted great and I could see that it had some real potential.  I thought about how to thicken it and mixed up a few versions before, viola! This recipe came together. And it’s delicious on any of our baked goodies or on good old fashioned cut up apples, bananas, strawberries….ummm get the idea?

Raw Hot Fudge Recipe

  • 1/4 cup raw cacao powder
  • 2 Tablespoons organic coconut oil
  • 2 tablespoons raw honey
  • 2 tablespoons organic tapioca flour (starch) or organic almond flour
  • 1/4 teaspoon organic cinnamon (optional)
  • 1 teaspoon probiotic powder (optional)
  • few drops of extra virgin olive oil (use to thin it and for added Omega 3’s)

Mix all of the ingredients together in a mini blender for the most incredible fudge topping.  If you want it thicker, let it set in the fridge for 30 minutes before serving. It can be used over many of the desserts in this book or it makes a delicious dip for bananas, apples or fresh pineapple.  

And btw, don’t forget that if there’s anything left over, your face will be forever grateful if you decide to share.  And if you do, just apply it directly to the skin and allow it to set 10 – 15 minutes.  Use a moist cloth to remove.

Caramel Crunch Sticky Buns Recipe

  • Prep Time: 5-10 minutes
  • Cook time: 20 minutes
  • Yield: 12-15 servings

Caramel STICKY BUN INGREDIENTS

  • 2 bananas – peeled
  • 3 Bob’s Red Mill Egg Replacements (or 3 hormone free eggs if desired)
  • 1/3 cup organic cold pressed un-refined coconut oil
  • 1/2 cup certified organic dates (pitted)
  • 1 Tablespoon pure organic vanilla extract
  • 2/3 cup organic coconut flour
  • 1/4 teaspoon pink himalayan sea salt

CRUNCHY TOPPING

  • 1 cups raw walnuts
  • 3 heaping tablespoons raw honey
  • 1/4 cup, unrefined organic extra virgin coconut oil
  • 1 Tablespoon organic cinnamon powder
  • 1 teaspoon coconut flour

Instructions:

  1. Preheat oven to 350F or 180C.
  2. Grease muffin tin cups with coconut oil.
  3. Mix together all of the sticky bun ingredients in a food processor.
  4. Pour into the muffin tin cups, 3/4 full.
  5. Place in oven for 12-15 minutes.
  6. Mix Topping ingredients together in a small bowl.
  7. Remove sticky buns from oven when complete and spoon topping over the buns.
  8. Place back in oven for 5 minutes.
  9. Remove and cool enough to serve.

Enjoy our Grain-free Pecan Pancakes Recipe.  Gluten-free, dairy-free, sugar-free, soy-free. Fast and easy to make and delicious!

And what better way, than to start a new day right, than by eating wonderful, delicious things that will also make our bodies healthier, and yes, more beautiful!

Mmmmm, you’re in for a treat!  They are super simple to whip together and take about the same amount of time as any pancake mix that isn’t going to make you feel better, or look better, for that matter either.

Grain-free Pecan Pancakes

Ingredients:

1/3 cup almond flour
1 banana
1/8 cup almond butter or sunbutter
3 fresh eggs, hormone free, omega 3
1/2 teaspoon pure stevia powder (if you can have unrefined sugars, you could substitute with 2 tablespoons coconut sugar)
1 teaspoon pure vanilla extract
coconut oil – use for frying in skillet and instead of butter to serve
raw honey – instead of syrup
raw pecans – shelled

Instructions:

Heat skillet on medium.

Place all ingredients in a blender and pulse a few times.  Don’t over mix.  Place a dab of coconut oil onto hot skillet and then pour pancakes onto the hot surface.  Cook until bubbles form, and flip once.  Remove from skillet and serve with a little coconut oil and pecans.  Drizzle raw honey over the top.
