Mmm, dessert pizza — I was always a sucker for dessert pizza, and somehow convinced myself that all desert pizzas must be healthy too–after all, they had fruit, right?! ummm, not so much. So this was another request from some of our pinner family and we’re so glad they wanted a healthy version. It is delicious, and if you want to eat gluten-free, refined sugar-free, chemical-free, dairy-free, and soy-free, this is for you. Or, if you aren’t concerned about those things and just want to minimize the guilt in your life…step on up and try this delicious dessert pizza out! And as long as you never tell them, no one else will know that it’s healthy too!

DESSERT PIZZA

DOUGH

WET INGREDIENTS
1 cup almond or buckwheat flour
1/4 cup coconut flour
3/4 cup tapioca starch
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1 cup coconut sugar

DRY INGREDIENTS
3/4 cup coconut oil (soft, but not oily)
1 teaspoon pure stevia extract
1 small hormone free egg
1 teaspoon pure vanilla extract

Preheat oven to 375ºF 190ºC

Place dry ingredients together in a bowl. Mix with a spoon.

Stir in the coconut oil and wet ingredients . Mix with beaters until dough forms.

Grease the bottom of a round pizza pan with coconut oil and roll the dough onto the pan, pushing it toward the edges.

FROST

Cool completely and frost with NK Free of everything Frosting
Refrigerate for 10-15 minutes.
Place fruit of choice on top and serve. The fruit we used was fresh pineapple chunks, strawberry slices and blueberries.

    Just wanted to point out that the ingredients list says coconut sugar, but the instructions say date sugar. Which one should we use? Can’t wait to try this out!!! LOVE your cook book! :)

      Oops, thanks for finding that–I’ll fix it right now! It should be coconut sugar, since it will be baked. And thanks for sharing your love for the cookbook–YAY!! That’s so great to hear! xo :)
