Easy Lemon Icing – (no sugar, dairy, grain, gluten, or soy)
- 1 1/4 cups organic extra virgin coconut oil (shortening consistency)
- 3/4 cups softened unfiltered raw honey
- 2 Tablespoons lemon juice (or juice of 1 lemon)
- 1/4 cup organic tapioca starch flour
Note: your coconut oil needs to be a shortening consistency-for warmer climates, you may need to place the coconut oil in the fridge for an hour before using. Now let’s get going!!
I like to cream together the coconut oil and honey. Then I add the lemon juice and tapioca starch, and continue whipping on high speed with the mixer. Before long, I have a beautiful soft spread of icing. Make sure to only apply it to goodies that are completely cooled (except for your face 🙂 because the icing will melt on anything that is warmed over 70 degrees F.
