I’ve always loved pancakes, and I love that breakfasty (oops, new word!) way they smell up the whole house and make things feel so yummy and comfy. Maybe it’s because my dad had a little Saturday morning tradition and he would whip up a big yummy breakfast for us, but there is something really comforting to me about breakfast foods, especially warm light pancakes.
So with that in mind, I’ve been experimenting with some healthy ingredients and am happy to say that we have whipped up some pretty amazing pancakes! AND if you like trying new things, and don’t really want to stand there and wait for them to turn just right, pancake after pancake, I think this is going to be a real treat and a HUGE relief to you! Because in stead of waiting and flipping, you can whip them up in just 3 or 4 minutes, put them in a bread pan, and let them bake, go get dressed, do your hair, or whatever else you needed to get done.

These have all of the flavor and moist light delicious taste of pancakes, but are really just a fraction of the work!
I’ve been playing with banana flour lately and it’s becoming a real true love! It’s a grain-free flour that’s made from green bananas. It is actually classified as a resistant starch, which means it acts a lot like soluble and insoluble fiber by easing the passage of food through the digestive tract, yet is slowly digestible like soluble fiber. It’s being used to aid in weight loss, and studies are indicating that it may greatly reduce risk of obesity, diabetes, and colon cancer. So yeah, a LOT of coolness going on there!

Alright, let’s go…
1 ½ cups pure coconut milk (if you want to make whipped cream from it, used canned and follow our whipped cream recipe)
¼ cup USDA Certified Organic avocado oil
1 tablespoon coconut sugar or ¼ teaspoon pure liquid stevia
1 1/2 cups banana flour
1 ⅓ tablespoons aluminum-free gluten-free organic baking powder
½ teaspoons pink Himalayan sea salt
topping items: strawberries, banana, maple syrup — those are what I used, but it’s up to you, let me know what you try!
- Heat oven to 350º
- Grease 1 bread pan with coconut oil.
- Mix all of the above ingredients together in a mixing bowl
- Pour into the pan and place in preheated oven for 20 minutes.
- Remove, slice, and serve with topping items of choice.
