click here Preheat the oven to 375F and start chopping up fresh veggies. You could us just about anything, but this is what I had in my fridge today:
- 1/4 red onion
- 1/2 avocado
- 1 bunch organic cilantro
- 1 tomato
- 1 red or green pepper
- 2 cloves garlic, minced
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon basil
- 1/2 teaspoon chili powder (if you like a kick)
- In a mini blender or a cup, whisk together 4 eggs and 1/4 cup almond or coconut milk and the spices. Set aside.
- Grease the muffin tin cups with avocado oil.
- Chop the vegetables, then drop a mix of them in each tin.
- Pour the egg mixture over the vegetables, almost to the rim of each cup
- Almond or rice milk cheese (optional)
- Bake for 20 minutes
