We’ve had so much fun with Pinterest, especially in the recipe category! Mainly because people post amazing recipes, but many of them aren’t exactly healthy. We post them in our “Recipes to be Converted” board and decide which ones to do based on the repins and the likes we get.
I had just barely posted this pin when I noticed it was flourless, so I thought maybe I’d post it in our “Healthy Recipes” board, but when I went to the website it was posted on, I realized I could make a few tweaks to make it even healthier.
Soooo, after posting it on instagram, etc. I was flooded with requests to share the recipe. So of course, that is what I’m doing. You guys have great power over me, haha! 🙂
I really love the taste & texture of these cookies. If you’re not a fan of coconut, just leave it out and you’ll have a little flatter cookie with a brownie-esque taste. Hmmm new word, but I think I like it 🙂 I guess those are the perks of being the one doing the posting, lol.

chocolate walnut brownie cookies
If you go onto our Pinterest (naturesknockout) you’ll find that we love to pin. This recipe was born from one of those repins, and thank goodness, it is so yummy!
!1/2 pure cocoa bar, 4 oz. (70% or higher) 1/4 cup coconut oil
1 teaspoon pure stevia extract
1 egg, hormone free
1 teaspoon pure vanilla extract
1/2 cup almond meal or almond flour
4 Tablespoons organic cocoa
1/2 teaspoon gluten-free, aluminum free baking powder
1/2 cup chopped organic walnuts
1/4 cup certified organic coconut flakes (optional)
1/4 cup coconut sugar
!Preheat the oven to 350oF or 175oC.
Place the cocoa bar into a zipper bag and crush it into small chunks. Set them in a glass cup and set that into another glass bowl of hot
tap water in order to slightly melt the cocoa chips. Just set that aside and combine all of the other ingredients into a large glass bowl. Mix with a wooden spoon.
NOTE: The coconut is optional. If you use it, the texture is more chunky (as pictured) and thick; if not, they are just as yummy, but a little more flat.
Next, throw the walnuts into that zipper bag and crush them. Pour the crushed nuts into the mixture, and then stir in the semi-melted chips as well.
Drop by tablespoons onto an un-greased cookie sheet. Makes 1 dozen. Bake between 15-17 minutes. Store in the refrigerator.
