Gluten free spaghetti tip
The other day I had dinner at a friends house. I think social settings can make things so awkward for a person with a “different than normal” diet, but it doesn’t always have to be difficult if we learn to think creatively.
So when I showed up for dinner and saw spaghetti sauce, enriched white noodles, and french cut green beans laying in waiting…I realized I had 2 choices.
#1 – I could eat what was served and feel like blahhhhh afterward, or
#2 – I could eat lots of what I could eat and avoid all of what I shouldn’t eat, or I guess there’s a #3 – I could freak out and leave, but of course I’d never do that!! 🙂
So, I chose #2 and got a smile on my face and headed right for those green beans. I often make angel hair pasta at home, using zucchini noodles, so green beans looked like a pretty good noodle replacement to me.
And ya know what? They were delicious -whew, lol!!
The funny thing is, I could’ve just eaten the regular noodles, but I really don’t like the way I feel afterward. So I did something a little bit differently, and walked away with more nutrients in my tummy and the host was happy too! I loved her food and was able to make it a little creative and a lot of fun. Soooo, it was a win-win all the way.
