“Sugar” Cookies made healthy, yay!
I can almost feel myself getting emotional about these cookies, lol! But seriously, these were such a love of mine back in the day. I remember buying a big, huge pink coated sugar cookie every day. And I would savor every rich bite.
Grain-free, Sugar (free) Cookie Recipe
Those days came and went, but that warm feeling still comes as I think of the comfort and joy those cookies brought me. So when I figured out this recipe this week, I was beyond elated! And to know they are sugar-free, grain-free, dairy-free, soy-free, and gluten-free (of course)…so basically guilt-free and so delicious! And if that isn’t enough, they are super easy too.

Grain-free, Sugar(free) Cookies & Frosting Recipe
Makes 4 1/2 dozen
1 1/3 cups coconut oil
1 cup coconut sugar
2 1/2 cups tapioca starch (flour)
2 cups almond flour
1/2 cup coconut flour
2 teaspoons baking powder
1 teaspoon sea salt
4 hormone-free omega 3 eggs
2 teaspoons liquid stevia (or stevia leaf)
1 teaspoon pure vanilla extract
- Preheat oven to 400 degrees F (or 200 degrees C)
- In a large bowl, stir together sugar and coconut oil
- Add in flours, baking powder, and sea salt. Stir until combined.
- Add in eggs, stevia, and vanilla. Mix together well.
- Roll into 2″ balls and place on ungreased cookie sheets. Smash flat with the bottom of a cup, placing cookies about 1″ apart.
- Bake 8-10 minutes, then remove and cool on a rack.
1/3 cup raw honey
1/2 cup coconut oil
1/2 teaspoon dehydrated beet powder (I dehydrate my own and keep it on hand all the time, but you can buy it online as well)
2 tablespoons fresh lemon juice
- Mix lemonjuice and Blendfresh together in a little cup or bowl and set aside.
- Place remaining ingredients to a mini blender and mix together.
- Add the red color mixture to the frosting and blend together until mixed in and consistency is smooth.
- Spread frosting onto cookies and serve.
