RAW Pumpkin Pie

We LOVE pumpkin!  I mean, what’s not to love? It’s loaded with antioxidants, Vitamins C, E, and lots of A, beta carotene, lutein, zea-xanthin, and the list goes on and on.
 
So WHY would anyone bake away all of the wonderful nutrients in their pumpkin? And with pumpkins everywhere, why buy it canned?!! It’s SO easy to puree with a blender, and then you can keep all of your nutrients, yes, every single one of them.
That said, I’ve been on a quest to come up with an incredible RAW pumpkin pie recipe that everyone could love.
 
Well, they say 3’s a charm, and I must admit that whoever “they” is, knows what they’re talking about. It took me 3 times to get this just right and I couldn’t be happier with the finished results.
 
In fact, I’ll go so far as to say, WHY would anyone ever eat an unhealthy version again, because this PIE is AMAZING! Also, we know many of you are new to stocking your pantry, and so we will provide some affiliate links to help you down your path. Raw Pumpkin Pie

RAW Pumpkin Pie

INGREDIENTS

CRUST

2 cups raw almonds
2 cups organic raisins
1 teaspoon organic pumpkin pie spice
 
Mix together in a food processor, then press into a pie dish and set aside.

 

PUMPKIN PIE FILLING

PREPARE AHEAD
2/3-1 cup coconut milk (I like canned, and not the “lite” version)
1 tablespoon flaxseed
 
2 cups raw pumpkin
2 tablespoons coconut oil
1 tablespoon organic vanilla extract
1/2 teaspoon raw organic stevia
1/3 cup date sugar
1/2 scoop Organic Vanilla Protein powder
1 tablespoon organic pumpkin pie spice
pinch of Himalayan sea salt
 
1. Refrigerate coconut milk overnight.
2. In the morning, separate the coconut milk from the cream. Reserve 1 cup of the milk and set the cream aside.
3. Grind flaxseed in the dry blender
4. Add the reserved coconut milk and all of the rest of the ingredients to the blender. If it has a whip setting, mix until whipped smoothly, then pour into the crust and refrigerate for 1 hour.
 Raw Pumpkin Pie

WHIPPED CREAM (optional)

1 cup cold coconut milk cream (left from making the pie)
1/4 cup raw honey
1/4 cup tapioca flour (aka starch)
1 teaspoon pure vanilla extract
 
Mix together in the blender until frothy, refrigerate for 1 hour.
Drop a dab on each piece of pie, and indulge!

Grain Free Pear Cake, Insanely Delicious

Awe gosh.  I just finished this Pear Cake post, complete with recipe, links, and all, then went to save it on. Then whooosh, it vanished. Oh ugh. Goodbye 4 hours of work. I know, I should’ve copied it somehow, somewhere before trusting my wordpress. Sigh. But lucky for you, this delicious grain free pear cake is much more foolproof than our site can be,, and super easy to make too.

SO I’m back and just going to tell you that I came up with this scrumptious recipe after I bought a case of fresh pears for a screaming great price. But after my husband said it wasn’t such a good deal if I didn’t use them all, I was more determined than ever to use every last one.

It’s not the limitations

that hold us back,

it’s our way

of looking at them. 

It’s been a week of pear everything at our house, and we’ve eaten some yummy dishes and desserts. So he’s not complaining at all, and I’m actually quite loving it (the pears, but the no complaining is wonderful too, lol)

One little side note: I chunked up a couple of my pears and pureed the rest, so the chunks are in my cake. But I’m actually not a fan and think it would be better to just puree them all right into the Wet Ingredients.. Just saying–feel free to do what you wish to your pears! 🙂

With that, here is our Grain Free Pear Cake,  an Insanely Delicious Recipe AND to make it simple, we’ve found a market with the best deal ever on quality organic ingredients. PEAR CAKE RECIPE

Wet Ingredients

  • 2 large free range eggs
  • 2/3 cup USDA certified organic avocado oil
  • 5 fresh pears – cored and chopped

Dry Ingredients

  • 2 cups coconut sugar
  • 2 cups banana flour
  • 1 cup organic unsweetened coconut shreds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon pink himalyan sea salt
  • 1 teaspoons natural baking soda
  • 1/2 teaspoon aluminum & gluten free baking powder
  • 1 cup chopped pecans
  1. Preheat oven to 325º
  2. Grease a bundt pan with organic coconut oil
  3. Mix and puree WET INGREDIENTS in a blender
  4. Stir together DRY INGREDIENTS (except pecans) in a large mixing bowl.
  5. Add the Wet Ingredient mix into the Dry Ingredients and mix for 2 minutes.
  6. Stir pecans into the batter.
  7. Pour mixture into the greased pan.
  8. Bake for 50-60 minutes

That’s it!! SOOOO simple, and seriously delicious AND NO GUILT- YAY!!! Enjoy and let us know how you love it!

Raw Strawberry Thumbprint Cookies
Cookie Ingredients
1 1/2 cups raw organic almonds
1/4 cup unsweetened certified organic coconut flakes
1/4 cup organic cold-pressed coconut oil – softened
2 teaspoons pure organic vanilla
1 tablespoon raw honey or organic maple syrup
dash of Himalayan sea salt
Strawberry Jam Gel Ingredients
1/3 cup diced strawberries

1 tsp lemon juice
2 tsp ground certified organic flaxseed
1 tablespoon raw honey or organic maple syrup
1. Place all cookie ingredients together in a food processor, and mix well.
2. Roll into 1″ balls
3. Place each ball on platter or tray and press thumb into it, set asideRaw Strawberry Thumbprint Cookies
4. Make Strawberry Jam Get by placing ingredients together in a bowl and just smash together with a fork. 
6. Drop scoops of the Jam into the indentions in the cookies. I use a baby spoon so it’s easier and not messy at all.
7. Place in freezer for 15-20 minutes, then move to the refrigerator (if they don’t get all eaten up!

Raw Banana Cream Pie

PIE CRUST RECIPE – how to make pie crust they’ll love!

  • 2 cups organic almonds
  • 1 cup unsweetened certified organic coconut chips
  • 1/2 cup certified organic dates – pitted
  • 1/4 teaspoon pink himalayan sea salt

Mix together in blender until crumbly. Then press it into a pie pan.

  • 6 medium bananas (2 will go in the filling, and slice the other 4 and drop them into the crust before adding the filling)

FILLING

  • 2 medium bananas
  • 1 cup raw organic cashews (these get a lot cheaper if you can buy them in bulk)
  • 1 cup whole coconut milk
  • 1/3 cup organic extra virgin coconut oil
  • 1/2 cup moist organic dates – pitted and pressed into cup
  • 2 tablespoons lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon pink himalayan sea salt

1. Refrigerate coconut milk overnight if you are using it to make whipping cream. 

2. Make the crust in a ceramic pie plate

3. Fill the crust with 4 of the bananas, sliced

4. Mix all of the filling ingredients in the blender until smooth in texture. Pour over the crust and sliced bananas

5. Freeze 2 hours, make our yummy vegan whipped cream recipe, and serve!

So here is what I came up with and I can’t believe how perfect it turns out. Since it’s raw, there will be variables, so I’ll explain those below. Let me know if you try it, and what the reaction of your world is when they are hit with the truth…no guilt, no nothing, just pure delicious refreshment and satisfaction. Vegan Whipped Cream

Makes 2 cups

  • 1 can pure coconut milk, canned
  • 1 teaspoon pure Bourbon Vanilla Extract
  • 12 drops pure Liquid Stevia
  • 2 tablespoons raw honey or organic maple syrup
  • 1-2 tablespoons coconut milk
  1. Refrigerate the can of coconut milk overnight. Make sure it’s not “light” so the cream will separate as it chills.
  2. Next day–remove the coconut milk from the fridge, and scoop out the cream and drop it into a mixing bowl.
  3. Add the vanilla, stevia and raw honey or organic maple syrup
  4. Whip on high for several minutes.
  5. Serve
  6. Keep in refrigerator.

I had a couple of thoughts on my mind. One was chocolate, but not the waxy stuff that’s loaded with trans fats and sugar….no not that.

But pure rich dark chocolate fudge. And then I had the thought of going green, which is what we always like to do, but this was a little different because it’s that magical green month of March. So I thought we’d live a little dangerously and try whipping up a dark chocolate fudge recipe today with a March inspired twist of mint.

AND it not only worked–it was incredible!

So yes, your taste buds are in for one rich and delightful treat–just saying. I sound like I’m totally bragging, yikes! Ok, so to set the record straight, I can’t take all the credit here…because I think there had to be heavenly intervention with this recipe for sure!chocolate quotes

Especially since this dark chocolate mint fudge is only good for you, but is also such a nutrient boost, and then some. Everything in them is rich in nutrients, or helps you to absorb those nutrients. Cacao is one of the most amazing natural sources of anti-oxidants, and it is in it’s purest form, never roasted, and the nutrients are never compromised either. 5 min. Dark Chocolate Mint Fudge Recipe….

  • 1 1/2 cups organic extra virgin cold pressed coconut oil (slightly softened)
  • 1 cup certified organic dates – pitted
  • 1/4 cup raw honey
  • 1/2 cup certified organic raw cacao powder
  • 1/2 teaspoon Pure Organic Bourbon Vanilla Extract
  • 1/3 teaspoon pink himalayan sea salt
  • 8 drops Organic Peppermint Essential Oil – we recommend that you don’t ever use any essential oils for eating UNLESS they are organic – why here: Are Essential Oils Safe?

Place all ingredients in a food processor and mix until smooth.

Spread into a glass or ceramic 9×9 dish or a pin pan. Freeze 20-30 minutes. Remove and go crazy! Cut them into small bite size pieces as they will be RICH!

What do these Cinnamon Spice No Guilt Paleo Diet Cookies and guacamole have in common? Actually not one thing.  Well almost.

I’m not sure if it was the guacamole or just a guy thing that started up a conversation that led to these cookies. I was working on a shoot for Franklin Covey, in Phoenix, Arizona. One night, after work, I went out with the guys to find the best Mexican Food around. And it was. I really think we nailed it..

Then the guys started talking and every one of  them wanted to order guacamole. The cute waitress with a delicate apron wrapped around a teeny waist lifted a single eyebrow. “So we want 7 guacamoles here?”

“Yep” came the choir of mens voices.

She headed off for the kitchen and of course, our talk was all about food, restaurants, and back to more food. I always knew that Rodney was a connoisseur of food so I shouldn’t have been surprised to learn that he liked to cook. Not only that, but that he even had a recipe posted online for his Cinnamon Spice Cookies.

I was intrigued. I pulled it up on my phone. I hadn’t heard of that flavor of cookie and Rodney seemed pretty darn proud of his edible concoction. I looked through the list of ingredients and must have had that thoughtful look as I contemplated whether I’d be able to restructure it to a healthy option or not. I could feel a smile work it’s way across my face. “I think I can do it!”

Maybe my timing wasn’t right because the waitress had just laid down 7 heaping plates of guacamole. Every eye was suddenly fixed on me. I looked around at the huge green piles of guac laid before them. I could tell that not one of them had any desire to part with even a small glob of the precious guac but they looked at me, almost wincing with fear that I was ready to tackle their sacred plates.

I had to laugh. It was actually quite hilarious, these guys were so funny and there was no way they would be able to down that much guac in one setting–even as much as I love the stuff, the thought of it kinda grossed me out for them.

“Rodney, I think I can come up with a conversion for your cookies.” He chomped down on that guac and shot me a look of doubt. That was all I needed. Ready or not Rodney, here I come.

So there.  Plain and simple, that is what inspired this recipe for Cinnamon Spice No Guilt Cookies.

So when you taste it and love it, don’t thank me. Thank Rodney.

Oh, and as for that guacamole? Failure. Those silly guys looked about as green as their guac about 1/2 way through the sludge. Lol. They and that guac totally made my night.

So anyway, here we go:

Cinnamon Spice No Guilt Cookies

WET INGREDIENTS

  • 3/4 cups extra virgin cold pressed coconut oil
  • 1 egg
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut milk
  • 1 tablespoon organic vanilla extract

DRY INGREDIENTS

  • 1 1/2 cups almond flour
  • 1/2 cups coconut flour – organic
  • 1 cup coconut sugar
  • 1 tablespoon organic cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1-2 handfuls chopped pecans (optional)

Preheat oven to 350 F or 175 C.

Place WET INGREDIENTS in a blender and mix well.

Place DRY INGREDIENTS in a large mixing bowl. Add the WET INGREDIENTS MIXTURE to the bowl, and mix together well.

Drop by teaspoons onto a cookie sheet lined with parchment paper. Flatten slightly by pressing a glass against each cookie. Bake 8-10 minutes. Remove, cool, and devour.

I can’t really say that the heavens opened when I figured out this recipe because, well, they didn’t. But I can say that my mouth did, and so did everyone else’s who has entered my house ever since. Even Jero, my 8 year old grandson who is finally learning that healthy CAN even be good, and not only that, but actually quite yummy.

“Actually” – did I just use that word, ugh. It’s a word that makes me laugh because I think it infers that you were expecting something much less, so when it “actually” rises to the occasion, it’s quite the thing. Guilt-free Chocolate Fudge Cookies

  • 3/4 cup coconut oil
  • 1 teaspoon pure stevia extract (this is one of the very few that is a true extract and not chemically altered)
  • 2 hormone free, free-range eggs
  • 2 tablespoons fresh lime juice
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 cup coconut sugar
  • 1/2 cup cocoa
  • 3 tablespoons carob
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1-2 handfuls of pure Carob Chips
  • 1 handful walnuts (optional)

Preheat oven to 350 degrees F.  I like to use parchment paper, so now is the time to add a piece of parchment paper to your large cookie sheet. Place all ingredients in a bowl and mix together well. Scoop out teaspoons full of dough and place on sheet about 3″ apart. Bake for about 8 minutes. Remove while soft and let cool if you can stand it.
