Look over the ingredient list and don’t get scared!  There may be some new ingredients you aren’t used to.  But they are nutrient rich and excellent additions to your pantry.  So head to a health food grocery store to find them.  Get ready to fall in love with a whole new world!

This recipe is gluten free, grain-free, dairy free, sugar free & no one will ever know!

I LOVE Snickerdoodles!  They take me all the way back to 7th grade, when I was so excited to sign up for Home Economics (not because I thought I’d be an amazing homemaker, but because we’d get to make cookies–dahhhh, a person has to have priorities 🙂

But for some reason our teacher was more into sewing than cooking which I really wasn’t thrilled about.  So when she finally agreed to let us make some cookies, my life changed for the better.

The cookies we made were Snickerdoodles and they were ahhhmazing!  I don’t know if it was because we had been starved in that class, and our bodies were trying to hoard, but I couldn’t get enough of those yummy treats.

So when it came to changing our diets, I was determined to come up with a good, safe alternative, come heck or highwater or whatever those cliche’s might be 🙂

The really exciting thing is, I think we did it!  This recipe is not only gluten-free, grain free, dairy-free, and sugar free, but it also has some ingredients that help boost our nutritional intake-yay!

Snickerdoodle Cookies recipe, NO gluten, refined sugar, dairy, or soy!

  • Prep Time: 10 minutes
  • Cook time: 10-12 minutes

1ST INGREDIENTS
coconut oil – 1/2 cup
(hormone & antibiotic free) egg – 1
lemon juice – 1 teaspoon
liquid stevia – 1/2 teaspoon
vanilla extract – 1/2 teaspoon

2ND INGREDIENTS
3/4 cup almond flour
3/4 cup tapioca flour
1/3 cup coconut sugar
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon baking soda
SUGAR COATING MIX
2 tablespoons organic coconut sugar
1 teaspoon cinnamon

Instructions:

  • Preheat oven to 350°F or 175°C.
  • Combine FIRST ingredients in blender and mix well.
  • Place SECOND ingredients in a large bowl.  Stir, then add in FIRST ingredients from blender and mix.
  • Drop into walnut sized balls and roll in sugar coating mix.  Slightly press down with the bottom of a cup.
  • Bake 10-12 minutes.  Don’t over bake and cool on rack.  We prefer to leave out overnight and the next day they will have a perfect delicious crispness!

I was in the mood for pumpkin something. Or maybe I should say pumpkin anything, ok, well anything without any refined sugar, dairy, gluten, grain, soy, or chemicals.

Some people would say that meant nothing but pumpkin, but then I beg to differ because these cookies are crave worthy whether you need to eat healthy or not! They are so mouth-wateringly delicious, super simple to make, and hands down the very best pumpkin cookies we have ever tasted.

So I guess you could say that ummmm never meant what it does now. Just try these paleo pumpkin cookies and let us know how happy you are with this recipe!

Paleo Pumpkin Chocolate Chip Cookies

WET INGREDIENTS

  • 1 cup coconut oil
  • 2 eggs
  • 1 teaspoon pure liquid stevia drops
  • 2 cups chopped pumpkin
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract

DRY INGREDIENTS

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • a dash of salt

1-2 cups dark chocolate pieces –  optional. I use a cocoa bar that is at least 70% cocoa and place it in a bag and pound it into pieces

INSTRUCTIONS:

  1. Preheat oven to 350º F.
  2. Place WET INGREDIENTS in a blender and blend until smooth
  3. Place DRY INGREDIENTS in a large bowl and add the blended mixture to them. Mix well
  4. Drop spoonfuls of dough onto ungreased cookie sheets. Place them about 2 inches apart
  5. Bake 13-15 minutes
  6. Remove and cool.

WET INGREDIENTS

  • 1 cup coconut oil

We just celebrated my dad’s 85th birthday today, which blows me away. One, because he is the most inspirational 85 year old around and can out-run all of us put together, and Two, because it’s just weird and wrong. How did he get to be that old.

If you know my dad, you can’t help but have a huge smile on your face because he’s such a cutiepie, lol. And he’s proud of every one of those 85 years and works it all the time.

And does that have anything to do with Key Lime Pie?

Actually, it does! Not only is ti by far the BEST Key Lime Pie Recipe I’ve ever tasted AND it’s not just free of sugar, grain, gluten, dairy, soy, and chemicals, but also super easy and pumped to the max with phytonutrients, omega 3 fatty acids, protein and the list goes on and on.

The reason I made this pie today was for my cute Daddy because he grew up in Key West, Florida and loves Key Lime Pie. So instead of the usual birthday cake, we thought this would put a much broader smile on his face.

And how did this recipe come to be?

I was running late, with overlapping meetings and very little time. I needed it to set up faster than I had time for.

So I searched for Key Lime Pie recipes, and found a recipe that caught my eye, which was a vegan one. But it required baking and there was no way I wanted to heat up these healthy ingredients and compromise their nutrients. So I searched through a few more recipes and figured out which ingredients I thought would blend well for flavor, and still give me a texture that would be thick enough to serve quickly.

And this is what I came up with. I can’t wait to hear how it works out for you!

I didn’t add any liquid, but if your blender is screaming at you, it may be necessary to add a tablespoon or two of rich coconut milk. If you can get it to work without, it will be super light and fluffy and amazing.

I took it to the family party and this pie was a huge hit. It truly was delicious and seriously the best raw key lime pie I have ever tasted!  I’ll add affiliate links to the ingredients we LOVE and highly recommend. Best Raw Key Lime Pie Ever!

CRUST: For lack of time, I’ll direct you to my favorite pie crust recipe, my “Cookie Crust” recipe in my “Beauty In Every Bite Desserts Cookbook. I used almonds for the flavors of this pie (instead of walnuts) and it was so light and yummy!

FILLING:

  • 1 cup cashews (soaked)
  • 1/3 cup organic coconut oil
  • 1 avocado
  • 1/3 cup raw honey – if you can find it local, that’s best, if not, here’s one we love
  • 1 scoop of Green Superfood, lemon lime flavor
  • 2 tablespoons pure organic maple syrup
  • 3 limes, mostly peeled, leaving a sliver of peel on each
  • 1/2 teaspoon Probiotic Powder or 1 Tablespoon homemade water kefir
  • 1/2 teaspoon pure vanilla extract
  • dash of himalayan sea salt (fine grade)

DIRECTIONS

Mix all of the filling ingredients together in the above order in a high powered blender (my favorite is Blendtec)  Mix until light and fluffy. If you need a little moisture, add rich coconut milk, one teaspoon at a time.

Refrigerate 30 minutes. Serve.

Mmm, dessert pizza — I was always a sucker for dessert pizza, and somehow convinced myself that all desert pizzas must be healthy too–after all, they had fruit, right?! ummm, not so much. So this was another request from some of our pinner family and we’re so glad they wanted a healthy version. It is delicious, and if you want to eat gluten-free, refined sugar-free, chemical-free, dairy-free, and soy-free, this is for you. Or, if you aren’t concerned about those things and just want to minimize the guilt in your life…step on up and try this delicious dessert pizza out! And as long as you never tell them, no one else will know that it’s healthy too!

DESSERT PIZZA

DOUGH

WET INGREDIENTS
1 cup almond flour or buckwheat flour
1/4 cup organic coconut flour
3/4 cup organic tapioca starch
3/4 teaspoon baking soda
1/4 teaspoon organic aluminum free, gluten free baking powder
1 cup coconut sugar or certified organic dates -pitted

DRY INGREDIENTS
3/4 cup organic extra virgin coconut oil (soft, but not oily)
1 teaspoon pure stevia extract
1 small hormone free egg
1 teaspoon pure vanilla extract

Preheat oven to 375ºF 190ºC

Place dry ingredients together in a bowl. Mix with a spoon.

Stir in the coconut oil and wet ingredients . Mix with beaters until dough forms.

Grease the bottom of a round pizza pan with coconut oil and roll the dough onto the pan, pushing it toward the edges.

FROST

Cool completely and frost with NK Free of everything Frosting
Refrigerate for 10-15 minutes.
Place fruit of choice on top and serve. The fruit we used was fresh pineapple chunks, strawberry slices and blueberries.

Last week I posted some very yummy Strawberry Cheesecake Bites and we got some very nice notes from some of you, who loved them (thanks so much for that, btw! 🙂 So this week we played a little more and came up with another really special treat, that is easy to make, yummy, and of course GRAIN-FREE, GLUTEN-FREE, SUGAR-FREE, DAIRY-FREE, & SOY FREE, and if you need to be nut-free, we’ve got some great alternatives so that you may have your wish. But they are simple to make and guaranteed to be liked by all.

So if that’s not enough, maybe I’ll even give you the recipe, jk, lol!  Here goes:

Strawberry Cupcake TArTs

If you have nut allergies, you can use ground raw sunflower seeds instead of almond flour (just grind them into flour in a blender or a coffee grinder)….

INGREDIENTS: Btw, before we get started, we’ve got some super exciting news!!   • 1 1/3 cups Organic Tapioca Starch Flour
  • 1 cup Organic Almond Flour
  • 1 cup coconut sugar
    1/3 cup Organic Coconut Flour
  • 1 teaspoon Raw Organic Green Stevia Powder
  • 3/4 teaspoon Pink Himalayan Sea Salt
  • 1 cup Pure Coconut Milk – canned
  • 3 eggs
    3/4 cup Organic Extra Virgin Coconut Oil  
  • 2 teaspoons Pure Organic Vanilla Extract – this vanilla is AMAZING!

 DIRECTIONS:

  1. Preheat oven to 350F (175C)
  2. Place all ingredients together in a deep bowl and beat together well. Pour into greased mini cupcake tins or a tin with paper liners.
  3. Place in heated oven for 20 minutes (longer if using regular sized tins)
  4. Cool, then top with our “Cheesecake” filling found in our Raw Strawberry Cheesecake Bites Recipe
  5. Top with sliced strawberries and serve!!!

My husband laughed at these little creations when he first saw them, but as soon as he bit in, he was immediately silenced. Yes, I felt justified. A smile sprang to my face, and I raised my eyebrows, looking at him inquisitively. He knew he was caught.  I waited at least 2 seconds… “Don’t eat any more if you don’t like them.” As soon as he stopped chewing he surrendered, “They’re really good…”

YAY! Love it when that happens 🙂

We have a thing on set called “crafty” or I guess the more formal name for it would be “craft services.” And if you’ve ever been on a movie set, you’ll learn quickly just exactly what it is. 🙂

Okay, I won’t leave you hanging, It is…a never ending world of snacks for everyone on set. The thinking behind it originally was that productions could get more mileage and hours out of cast & crew if they fed them.

I like to think of those snacks as the fuel that we need to keep us going. If we don’t look at it that way, we could easily snack on not-so-good things and find our bodies crashing instead. So to me, it’s vital to have healthy snacks on set, otherwise our work tends to lag as we tire and our energy becomes sapped.

But I don’t do crafty and don’t have any desire to, so I’m grateful for those who do, and especially when they get the vision and provide us great healthy snacks.

So this is a crafty snack that was inspired on a recent commercial shoot we both worked on. The crafty girl made them with cheesecake (with dairy, sugar, and who knows what else) and the entire crew went crazy. We never tried them, but didn’t forget them either. In fact I looked them over and decided then and there that I would put together another version that would be healthy, I mean why waste all of those luscious strawberries on anything less than healthy?!

NOTE: If you have nut allergies, you could replace the cashews in this with young coconut meat or sunflower seeds and get awesome results as well!

RAW STRAWBERRY CHEESECAKE BITES

3-4 cups fresh organic strawberries
1 cup raw cashews (+a few extras to crumble onto the top of the finished berries)
1/4 cup lemon juice (plus a little more, if it needs to be thinned)
1/4 cup raw honey
1/4 cup coconut oil
1 teaspoon pure vanilla extract

  1. Rinse and drain the strawberries
  2. Using a knife, cut out the stems, leaving a circular hole in the strawberries. Place them upright in a dish or pan.
  3. Place all remaining ingredients in a blender, and mix together well.
  4. Pour mixture into the strawberries
  5. Dust with crumbled cashews

And serve. The great thing about these cute little raw strawberry bites is that they not only make people feel special, they help to revive their energy, and help them to perform better. Store in the refrigerator.

Grain-free Frosted Banana Bars Recipe

Wet Ingredients

  • 3/4 cup almond or coconut milk
  • 1 cup mashed ripe bananas
  • 1/2 cup coconut oil
  • 2 hormone free eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon pure organic liquid stevia
  • 1 teaspoon pure organic vanilla extract

Dry Ingredients

  • 1 cup coconut sugar
  • 1 cup tapioca starch
  •  2/3 cup banana flour
  • 1/3 cup organic unsweetened coconut (grated)
  • 1 level teaspoon baking soda
  • 1 level teaspoon organic gluten free, aluminum free baking powder
  • 1/2 teaspoon pink himalayan sea salt

Directions

  1. Preheat oven to 350F
  2. Grease a large 13x18x1″ cookie sheet with coconut oil
  3. Place all “Wet Ingredients” in the blender and blend until smooth, set aside.
  4. Place all “Dry Ingredients” together in a large bowl. Stir together.
  5. Pour Wet Ingredients in with Dry Ingredients, then mix well with a hand mixer.
  6. Pour mixture into the cookie sheet and place in oven.
  7. Bake 20-24 minutes.
  8. Remove and cool completely
  9. Frost with Lemon Icing

Hey paleo lovers, I’ve found some more amazing recipes for you to love! I was all set to post an amazing banana bar recipe, but decided to tempt you just a little and post the amazing and incredibly easy Lemon Icing recipe first. So next week, watch for the banana bars, which are so awesome with this icing on top! And believe it or not, in the mean time, this recipe can be whipped up for an amazing facial to add moisture and softness to the skin.

So in case that tweaked your interest, you only need to make about a teaspoon to slather all over your face and neck, leave it on 15 minutes and hop in the shower. Then take a moist, warm washcloth and gently dab it off. Let us know how you love it as a spa treatment!

Here goes:

Easy Lemon Icing – (no sugar, dairy, grain, gluten, or soy)

  • 1 1/4 cups organic extra virgin coconut oil (shortening consistency)
  • 3/4 cups softened unfiltered raw honey
  • 2 Tablespoons lemon juice (or juice of 1 lemon)
  • 1/4 cup organic tapioca starch flour

Note: your coconut oil needs to be a shortening consistency-for warmer climates, you may need to place the coconut oil in the fridge for an hour before using. Now let’s get going!!

I like to cream together the coconut oil and honey. Then I add the lemon juice and tapioca starch, and continue whipping on high speed with the mixer. Before long, I have a beautiful soft spread of icing. Make sure to only apply it to goodies that are completely cooled (except for your face 🙂 because the icing will melt on anything that is warmed over 70 degrees F.
