I know, I’m screeching into St. Patty’s day by posting this recipe just in the nick of time! But I can’t blame it on the pie that was too frozen to cut and I had to wait for it to thaw–no not at all. I actually had planned to share some delicious frosted cookies with green frosting, but we devoured them and I totally forgot to get any pictures-ugh! What was I thinking?

But then, when I realized I had an overabundance of avocados on my hands and they were all about as ripe as they could be, my green recipe quest shifted. So I dreamt up a yummy, creamy pie, and I’m really happy I did, because this is such a yummy treat!

I guess I shouldn’t be too concerned because I’m always doing something green 🙂 So pinch me not, because what I’m sharing is perfectly safe whether it’s St. Patricks day or any other day of the week, month or year, AND absolutely worth the wait. Ok, I’ve justified myself long enough, lol…

Let’s get going–and no, this recipe’s not some decorative goodie to check off that list and hope to never make it again, because it is very yummy! I believe you’ll not only want to make this delicious dish, but that you’ll have others nudging you and asking you to please make it again soon.

Lime Cream Pie

Pre-make 1 Cookie Crust (recipe found in our Beauty In Every Bite Cookbook) or another grain free or raw crust

INGREDIENTS

3 large ripe avocados – skinned and pitted
1 1/2 cups cashews or 1 cup cashew butter
1 1/2 cups thick coconut milk
1/2 cup coconut flakes
1/2 cup raw honey
1/2 cup lemon juice

Place all of the above ingredients in the blender and blend until smooth. Pour into a prepared crust and place in the freezer for 1 hour. Remove and serve. Cover and keep remaining pie in the freezer.

And that should set you back about 7 or 8 minutes, think you can handle that? 🙂

And to know they are sugar-free, grain-free, dairy-free, soy-free, and gluten-free (of course)…so basically guilt-free and so delicious! And if that isn’t enough, they are super easy too.

Grain-free, Sugar(free) Cookies & Frosting Recipe

Makes 4 1/2 dozen

COOKIES.

1 1/3 cups  coconut oil
1 cup coconut sugar
2 1/2 cups tapioca starch (flour)
2 cups almond flour
1/2 cup coconut flour
2 teaspoons baking powder
1 teaspoon sea salt
4 hormone-free omega 3 eggs
2 teaspoons liquid stevia (or stevia leaf)
1 teaspoon pure vanilla extract

Instructions.

  1. Preheat oven to 400 degrees F (or 200 degrees C)
  2. In a large bowl, stir together sugar and coconut oil
  3. Add in flours, baking powder, and sea salt. Stir until combined.
  4. Add in eggs, stevia, and vanilla. Mix together well.
  5. Roll into 2″ balls and place on ungreased cookie sheets. Smash flat with the bottom of a cup, placing cookies about 1″ apart.
  6. Bake 8-10 minutes, then remove and cool on a rack.

 

FROSTING.

1/3 cup raw honey
1/2 cup coconut oil
1/2 teaspoon dehydrated beet powder (I dehydrate my own and keep it on hand all the time, but you can buy it online as well)
2 tablespoons fresh lemon juice

  1. Mix lemonjuice and Blendfresh together in a little cup or bowl and set aside.
  2. Place remaining ingredients to a mini blender and mix together.
  3. Add the red color mixture to the frosting and blend together until mixed in and consistency is smooth.
  4. Spread frosting onto cookies and serve.

We spend an average of 14-15 hours a day, working on film sets. They bring us food all day long, and most of it is, well….ummmm, appreciated, but not what we eat.  

So these bars are a must have in my day–they are absolutely wonderful and provide the all of the nutrients I need for a great fix and a wonderful boost. I actually love that most of the crew gravitates to my snack bag and is so enthralled with everything I pull out. It’s fun, and it’s smart and only takes a few minutes to throw these together, so why not???!

The other day, we headed up to the mountains for a family reunion. I’d like to say that we’ve been such an outstanding example of healthy eating that everyone in our family refuses to eat anything not so good. But, I guess the right answer is “not so much”…we are human, and we live in a human world, and even our family members are not yet converted. BUT, many are thinking it’s important, and in our world, that is a step! 🙂

So before heading up, I threw together a delicious raw strawberry pie (recipe in our BEAUTY BITE DESSERTS COOKBOOK and it was devoured just about as fast as it took me to open the lid. Of course it made me happy to see everyone lap it up and rant and rave about how yummy (AND healthy) it was!  That is happiness, I must admit. But the real good is that it gets people thinking…there are amazing replacements that make transitioning so much more simple and fun.

Then they pulled 3 dutch ovens off of the flames, and served some very delicious looking peach cobblers. Yes, my mouth was watering, but I knew they were loaded with not so good ingredients. So I called it good with my last bite of strawberry pie. BUT, I couldn’t get those peach cobblers off my mind.

With a mound of peaches in the fridge and more coming off our tree, I decided to do some experimenting, and that is what led me to this recipe, which has been a HUGE HIT! I’m so happy with it, and know you will love it too.

  • Prep Time: 15 minutes
  • Cook time: 20 minutes
  • Yield: serves 8

Ingredients:

PEACH MIXTURE
1 cup organic raisins – soak in 1 cup water while cutting up peaches
16 fresh peaches – peeled, pitted and sliced into thin wedges –
1/2 cup coconut sugar
1/4 cup honey
1 teaspoon stevia
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
2 tablespoons tapioca starch (flour)

PEACH TOPPING INGREDIENTS
1 cup tapioca starch
1/2 cup coconut sugar
2 teaspoons baking powder
1 teaspoon stevia powder
1/2 teaspoon sea salt
3/4 coconut oil
1/2 cup water

Instructions:
1. Preheat oven to 425 degrees F (220 degrees C).
2. Set raisins in water aside to soak, while cutting up peaches
2. Peel and slice fresh peaches
4. Drain raisins and add them to peaches.
5. In a 13×9″ baking pan, combine all ingredients in PEACH MIXTURE. Stir together to coat evenly and set aside.
6. In a large bowl, combine the TOPPING INGREDIENTS together until somewhat smooth.
7.Pour topping over PEACH MIXTURE and smooth it over the top.
8. Bake 20-25 minutes. Remove and serve with our COCONUT MILK ICE CREAM or WHIPPED TOPPING, in our BEAUTY BITE DESSERTS COOKBOOK

I actually made these GF Lime cookies – no grain either, btw, for you paleo fans!, for St. Patricks Day, but we were overflowing with posts, so I thought I’d wait. Besides, with the yummy touch of lime, they’re refreshing and light, and a perfect yummy treat for a warm summer day.

These are super simple AND a cool little bonus is they also have no starch–whoohoo!  So for all of our GAPS diet fans, these are going to be a special little treat for you too!  The only exception will be the frosting, but you can bulk it up with more cashews instead of the arrowroot powder. These GF Lime Cookies – no grain, etc., etc. actually don’t even need the frosting, but it adds a nice extra touch if you decide to add it.

GF Lime Cookies – no grain, gluten, refined sugar, dairy, soy, or guilt!

1ST INGREDIENTS

  • 1/2 cup coconut oil
  • 1 1/2 cups almond flour
  • 1/3 cup coconut flour
  • 1/4 cup organic maple syrup
  • 1 teaspoon raw organic stevia drops
  • 1 teaspoon organic baking powder, gluten-free, aluminum free
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt

2ND INGREDIENTS

  1. Preheat oven to 350ºF or 185ºC.
  2. Combine all of the 1ST INGREDIENTS together in a large bowl.  Mix together and cut the oil in with a pastry blender.
  3. Add 2ND ingredients to the mixture and mix with a hand mixer.
  4.  Drop on ungreased pan, and press with the bottom of a glass.
  5. Bake 12-15 minutes.

Simple Lime Frosting

  • 4 or 5 spinach leaves (for green color)
  • 2 Tablespoons almond or coconut milk
  • 2 Tablespoons lime juice
  • 2 Tablespoons raw honey
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon arrowroot (optional)
  • 1/2 – 3/4 cups raw cashews
  • dash of salt

Mix together 1st 5 ingredients in high powered blender. Then add the last 3 and mix well for a full minute. If more thickness is desired, add more cashews or arrowroot.

Oatmeal Surprise Cookies

Gluten-free, grain-free, sugar-free, dairy-free, soy-free & guilt free!

Super easy recipe and as always, it’s gluten-free, sugar-free, dairy-free & soy-free! 

1 1/2 cups organic oats – gluten free

1 cup unsweetened coconut chips

 1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/4 cup almond meal (use pulp from almond milk recipe 🙂

3/4 cup organic walnuts – chopped (bulk)

1 cup organic raisins (bulk)

2 large ripe bananas

1 large hormone/antibiotic free egg

1/4 cup coconut oil

1 teaspoon pure vanilla extract

1 teaspoon liquid stevia

Lightly grease a cookie sheet with coconut oil. Preheat oven to 350ºF or 175ºC  

Mix all ingredients together with a hand mixer, then spoon onto baking sheet.  

Bake 17-20 minutes. Remove and cool on a wire rack.

DIRECTIONS:

  1. Preheat oven (350º) or grill.
  2. Just cut tops off of oranges and remove the orange inside.
  3. Pour your chocolate brownie or cake mix inside individual orange skins, about 2/3 from the opening
  4. Bake in oven, or wrap in foil loosly and bake on the grill for about 30 minutes
  5. Place a spoonful of healthy frosting on top while still warm
  6. Serve

We happen to have 1 cute little peach tree in our backyard, and it knows how to make the yummiest peaches –  So, ready for the first step?  K, here goes…pick a dozen beautiful peaches (from your tree or favorite market 🙂

It’s always wise to rinse fruit well. Most recipes will tell you to blanch the peaches too.  But I’ve figured out a way around that, not because I’m totally rebellious, you could blanch them for 1-2 minutes if you want, but I think it’s easier & faster to peel them….plus, in my book, the less cooking time = the more nutrients 🙂 So if you want to try my method out, just slice the peaches into 4-6 slices and peel the skin right off.  It’s actually kind of fun (so maybe I’m a little warped, lol) but if you have any resistant peel, just use a little knife to help you out.

Here is a delicious peach crisp recipe you are going to LOVE…

Delicious peach crisp recipe

  • Prep Time: 20 minutes
  • Cook time: 10-12 minutes
  • Yield: 12-15 servings

Ingredients:

FRUIT MIXTURE
10 cups fresh sliced peeled peaches
1 lemon (juiced) or 2 tablespoons fresh lemon juice

TOPPING
1 1/2 cups organic gluten-free oats
1 cup coconut sugar
1 cup chopped walnuts
1/2 cup almond flour
1 tablespoon cinnamon
1/8 teaspoon sea salt
1/2 cup coconut oil
1 1/2 teaspoons powder stevia
1/2 teaspoon vanilla extract

Instructions:

  1. Heat oven to 375ºF or 190ºC.
  2. Place peaches in un-greased 13×9 inch baking dish. Stir in lemon juice.
  3. In a large bowl, combine all topping ingredients.  Just mix them until crumbly and then top peaches with the topping.
  4. Bake 10-12 minutes and remove.
  5. Serve warm with any of the toppings in our cookbook…ice cream, Sweet Leche, Coconut Cream, or Lemon Glaze Frosting-pictured
