Glazed Doughnut Carrot Cake, Paleo

Doughnut inspired Carrot Cake

This Doughnut inspired Carrot Cake cake started after I juiced some carrots and apples and couldn’t bear the thought of throwing away the pulp. So I used it all, and then grated more carrots to equal the amount of carrots in this recipe.

And yes, it was delicious!  It really reminded me of cake doughnut holes, which was an unexpected yummy bonus. 🙂

I actually used buckwheat, which is a seed, and completely gluten free (of course) in my recipe, but almond flour or brown rice flour will work just fine too, it will just be a little fluffier. I kind of prefer the denseness–yummmm!

But I’ve learned the most valuable trick with my gluten-free baking.  The treats keep better if refrigerated and actually taste better the next day or two than right out of the oven. My theory on that is that enriched white flour is very drying in a recipe, so it will taste best right out of the oven. But these gluten-free yummies actually tend to produce moister recipes, which get more delicious by the minute and hour after they are baked.

To get that doughnut flavor, I actually frosted the Doughnut inspired Carrot Cake with our “Lemon Glaze Frosting” in our “Beauty In Every Bite DESSERTS” cookbook, while the cake was still slightly warm. Then I refrigerated it overnight and took it out in the morning and BAM!!  It was amazing!!  You could also refrigerate the cake and then frost for a more frosted finish, but I really loved these with the frosting glaze, soaked into the cake–mmmm!  They really tasted like those cake doughnuts of yester-year, but you can celebrate because THIS Doughnut inspired Carrot Cake is actually good for you too!

Doughnut Inspired Carrot Cake

5 cups carrot pulp (or grated)

1 cup apple pulp or apple sauce

1 cup organic raisins

4 eggs

3/4 cup coconut sugar or pitted dates

2 teaspoons pure stevia extract

1 cup USDA certified organic avocado oil

1 tablespoon pure vanilla extract

1 cup pineapple pulp (or crushed)

2 cups buckwheat flour

1 cup organic tapioca flour (starch)

1 1/2 tablespoons Organic Cinnamon Powder

1 1/2 teaspoons baking soda

1 teaspoon Pink Himalayan Sea Salt

1 cup chopped raw walnuts (optional)

Preheat oven to 350 degrees F (175 C)
Grease and flour 1 9×13″ pan, using coconut oil and almond flour
Mi all ingredients together in a large bowl until well blended. Pour into pan.
Cook 45 minutes.  Remove and cool 10 minutes and frost immediately with our “Lemon Glaze Frosting” in our “Beauty In Every Bite DESSERTS” cookbook If you don’t have that, whip together raw honey and coconut oil and slather it on top.

It started with pinterest.  I saw a pin for chocolate ice cream and had a little tiny tinge of interest.  Okay, may more than just a little teeny tiny bit, because I went right into the kitchen and started whipping together my own healthy version.  And guess what?!!  It really is amazing!  And as always, it is gluten-free, sugar-free, soy-free and dairy-free, and guilt free of course!motivatinoal quote

Raw Chocolate Banana Split Ice Cream Recipe

2 frozen bananas (peel them before freezing or life will be very frustrating!)
2/3 cup almond, rice, or thick coconut milk
1 teaspoon pure vanilla extract or scooped out vanilla bean
2-3 pitted certified organic dates (yes, take out the pits–I’ve learned that the hard way too 🙂
2-3 tablespoons raw certified organic cacao powder
chopped nuts to sprinkle on top
Mix all ingredients (except chopped nuts) together in a blender until blended well.  Pour into a glass bowl and place in the freezer for at least 30 minutes.  I took mine out a little early-ugh, yes…I was maybe a little impatient.  But it was still delicious!

Remove from freezer and scoop into bowls.  Sprinkle with chopped nuts.

Makes 2 servings (unless you feel like being a pig of course –only speaking from experience, heh-heh!)

Ok, YES!!! I LOVE crepes. And the funny thing is I used to think they were good, but nothing to salivate over (that’s my yardstick 🙂 But it all started one stormy night last fall, when I went to a blogger event where they were serving crepes. I have to admit, they smelt good, but I knew they were full of ingredients I didn’t want in my body, so I just inhaled. 🙂

But the next day, I had to play. I went to my kitchen and gathered up the best of the best crepe recipes I could find, and tore into them. I replaced all of the not so good ingredients and then I thought of the aroma I wanted to fill my house with as these cooked, and viola!! This is the recipe I put together and it is seriously mouth watering.

Whether you’re a crepe lover or not, you will be after trying this delicious Grain-Free Crepes Recipe – no gluten, dairy, sugar, soy, or guilt either! It is seriously a Paleo or Southbeach dieters dream come true! And it will seriously put any other traditional crepe recipe to shame.

Crepes are one of the easiest things imaginable to make and are great for large gatherings because they are so easy and go so far.  I’ve cooked them up at a few gatherings and people are astonished, because they are not only SO tasty, but they are that, PLUS completely healthy.

Crepes can be a lot of fun too, because literally, the sky is the limit when it comes to toppings. It’s a great way to add more fruit to the diet and will be delicious with all kinds of fruit–peaches, mango, berries of every kind, cinnamon spiced apples, bananas, and the list goes on! 🙂

Lol, don’t panic, if it’s not quick and easy, it doesn’t happen in our book. So we are hooking you up with a super simple way to make your own, also because we can’t find any manufactured almond milk that isn’t chemically laden. Have you? If so, let us know!

Delicious Crepes Recipe

RECIPE

  • Prep Time: 5-10 minutes
  • Cook time: 3-5 minutes
  • Yield: 14-16

Ingredients:

  • 1 1/2 cups almond milk -hit link for recipe- these are the best almonds 
  • 3 hormone free omega 3 large eggs
  • 1/4 cup organic coconut oil
  • 1 teaspoon pure organic vanilla extract – I make my own, it’s super easy of course, so if you’d like me to post it, let me know!
  • 1/2 cup organic coconut flour
  • 1/2 cup organic tapioca starch 
    3/4 teaspoon Pink Himalayan Sea Salt
  • 1/4 teaspoon raw, unaltered green organic stevia powder

Instructions:

  1. Heat a skillet to medium heat.
  2. Mix all ingredients together in the blender.
  3. Use an addtional dab of coconut oil on the pan and let sizzle, covering area well.
  4. Drop a small amount (about 3 tablespoons) of batter onto the hot skillet.  Roll the pan to thin the layer of batter and expand the size of the crepe.
  5. Let the batter bubble and become a solid crepe. Then slide the crepe onto the spatula and quickly flip it to finish the back side.  Allow to brown slightly.
  6. Serve with any of the toppings in our Desserts Cookbook or your favorite choices of fruit.

Ready for the most amazing chocolate fudge syrup? Yes, it’s gluten-free, sugar-free, dairy-free, and soy free, and sooooo yummy! It’s our own version that we cooked up, almost by accident and we’ve been celebrating ever since, lol.

You know how things sometimes happen for a reason?  Well, this is one of those “things”…alleluia!  My sister was staying with us on a visit and she started asking what she should use to improve her skin.  That’s like asking a pack of wolves if they’d like to eat you, haha, so of course, I marched her down to my kitchen and started whipping up some nutrients in a dish.  I loaded it with antioxidants and omega 3 fatty acids and moisture.  I slapped it on my face and had her do the same.  But before I knew it, she was licking her bowl clean…. ummm, excuse me?! 🙂

It’s a little hard to take someone seriously with chocolate slopped all over her face, but…as I thought about it, I realized she was onto something, hmm.  I knew it should taste pretty yummy with the ingredients it contained, so I licked my own lips and as far around my lips as my tongue could reach…and yes, you guessed it, before long I had licked my own bowl clean.

It really tasted great and I could see that it had some real potential.  I thought about how to thicken it and mixed up a few versions before, viola! This recipe came together. And it’s delicious on any of our baked goodies or on good old fashioned cut up apples, bananas, strawberries….ummm get the idea?

Raw Hot Fudge Recipe

  • 1/4 cup raw cacao powder
  • 2 Tablespoons organic coconut oil
  • 2 tablespoons raw honey
  • 2 tablespoons organic tapioca flour (starch) or organic almond flour
  • 1/4 teaspoon organic cinnamon (optional)
  • 1 teaspoon probiotic powder (optional)
  • few drops of extra virgin olive oil (use to thin it and for added Omega 3’s)

Mix all of the ingredients together in a mini blender for the most incredible fudge topping.  If you want it thicker, let it set in the fridge for 30 minutes before serving. It can be used over many of the desserts in this book or it makes a delicious dip for bananas, apples or fresh pineapple.  

And btw, don’t forget that if there’s anything left over, your face will be forever grateful if you decide to share.  And if you do, just apply it directly to the skin and allow it to set 10 – 15 minutes.  Use a moist cloth to remove.

RAW MACAROON COOKIES RECIPE

  • 2 cups raw organic almonds
  • 2 cups raw unsweetened coconut
  • 1/3 cup cold pressed coconut oil
  • 1/3 cup raw honey
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon himalayan sea salt

Mix together in a food processor and roll into 1″ balls. Place in refrigerator 1 hour until they slightly harden. Serve.  Store in the refrigerator (if there are any left! :).

We’ve had so much fun with Pinterest, especially in the recipe category!  Mainly because people post amazing recipes, but many of them aren’t exactly healthy.  We post them in our “Recipes to be Converted” board and decide which ones to do based on the repins and the likes we get.

I had just barely posted this pin when I noticed it was flourless, so I thought maybe I’d post it in our “Healthy Recipes” board, but when I went to the website it was posted on, I realized I could make a few tweaks to make it even healthier.

Soooo, after posting it on instagram, etc. I was flooded with requests to share the recipe. So of course, that is what I’m doing.  You guys have great power over me, haha! 🙂

I really love the taste & texture of these cookies.  If you’re not a fan of coconut, just leave it out and you’ll have a little flatter cookie with a brownie-esque taste.  Hmmm new word, but I think I like it 🙂  I guess those are the perks of being the one doing the posting, lol.

chocolate walnut brownie cookies

If you go onto our Pinterest (naturesknockout) you’ll find that we love to pin. This recipe was born from one of those repins, and thank goodness, it is so yummy!

!1/2 pure cocoa bar, 4 oz. (70% or higher) 1/4 cup coconut oil
1 teaspoon pure stevia extract
1 egg, hormone free

1 teaspoon pure vanilla extract
1/2 cup almond meal or almond flour

4 Tablespoons organic cocoa
1/2 teaspoon gluten-free, aluminum free baking powder
1/2 cup chopped organic walnuts
1/4 cup certified organic coconut flakes (optional)
1/4 cup coconut sugar

!Preheat the oven to 350oF or 175oC.

Place the cocoa bar into a zipper bag and crush it into small chunks. Set them in a glass cup and set that into another glass bowl of hot

tap water in order to slightly melt the cocoa chips. Just set that aside and combine all of the other ingredients into a large glass bowl. Mix with a wooden spoon.

NOTE: The coconut is optional. If you use it, the texture is more chunky (as pictured) and thick; if not, they are just as yummy, but a little more flat.

Next, throw the walnuts into that zipper bag and crush them. Pour the crushed nuts into the mixture, and then stir in the semi-melted chips as well.

Drop by tablespoons onto an un-greased cookie sheet. Makes 1 dozen. Bake between 15-17 minutes. Store in the refrigerator.
