Walnut Fudge, or Almond Fudge with no sugar, gluten, dairy or soy & make it in 5 minutes!

INGREDIENTS

  • 1 cup organic cold pressed coconut oil
  • 1 cup organic maple syrup or certified organic brown rice syrup
  • 1 cup unsweetened certified organic coconut chips
  • 1/3 cup raw organic cacao powder
  • 2 tablespoons certified organic carob powder – (or just add in this much raw cacao instead)
  • dash of pink himalayan sea salt
  • 1 cup raw walnuts (or almonds) 

DIRECTIONS

Just drop ingredients, except nuts into a food processor and mix well Then add in nuts and pulse 2-3 times.

This video shows how super fast and simple it is to make this, but if I’ll also post it all down below. But before I do, there’s something really cool about this recipe that I want to share with you…

This very recipe is what I used to free myself from my sugar addiction.  And yes, I was a true addict, I have to admit.  I loved anything with sugar and ate it constantly, so even the thought of ever getting off of sugar was something I really couldn’t have even imagined.

it’s heaven, right?!

But I did.  And this is how….I made this fudge recipe about once a week and kept it in my refrigerator.  Every day, while I was off working on sets or if I had an event to go to, I would constantly be flooded with incredible desserts.  I never realized how much sugar was constantly lying before me…just trying to lure me in.  But as long as I knew I had my fudge at home, waiting for me, I was fine and I could turn away even the most chocolatey temptation.  It was actually really cool 🙂  and I was very proud of myself!  So, I pushed many treats away and just kept on going.

Then, about 6 months into the ordeal, I went to work on a movie and time flew by too fast.  I didn’t have time to get to the health food store to restock some of my ingredients and had to go 2 weeks without my fudge.  But guess what?!!  That was also when I realized I was no longer addicted to sugar.  Because we had a caterer that was huge on elaborate desserts and yes, they were strewn everywhere, every single day.  But I had no cravings, urges, or need to indulge because I was finally free! Yay!!!  So that’s my story, and the funny thing is, I probably was off of sugar sooner than 6 months into it, but that’s okay, because I enjoyed a lot of this fudge anyway.

Oops, a little note–if you watch the video, we don’t use agave anymore at all.  We really don’t trust it and Tiffany gets really inflamed from it.  After I did this video, we did a lot of research, and concluded that it is processed at hot temperatures and that may be enough to cause a chemical reaction that could be potentially dangerous.  So instead, we use 3/4 cup raw honey or 1 cup pitted dates to sweeten this instead.

The Best Pecan Pie Ever. Must I say more? Of course you know the answer to that. Oh and psst, this recipe is in our new  “Beauty In Every Bite Desserts” Cookbook 🙂

I have a really adorable friend, Rachelle, who also happens to be a nutritionist.  So I offered to send her a copy of our Dessert cookbook to review.  When she wrote back, she mentioned she was really excited to get it and was hoping it would contain some sort of  yummy pecan pie recipe.

OH. Silence. I gulped.

What had I been thinking? I LOVE Pecan Pie. Every Christmas for 15+ years the Alexanders who lived right across the street would bring us a savory warm Pecan Pie right out of their oven. Gorg. And delicious.

But life changed after I reinvented my diet. After that, I would look at those beautiful Alexander pies and drool. That was something I missed. So I would stare at them blankly, and munch on a pecan instead.

So of course!!! It was time to make the best pecan pie ever. And I think we need to thank Rachelle for this recipe. I know your taste buds will anyway. That’s for sure.

I guess there was only one glitch to making the best pecan pie ever. Being the recovering perfectionist that I am, I was determined that this recipe needed to be out of this world.  OK, so maybe I’m not recovering. Argh.

So I did some figuring, and some baking, and…other than the fact that I blew up my dehydrator drying my pecans, this pie seriously came together magically! It’s so delicious and really very easy to make. (the dehydrator didn’t fair so well–it literally blew up in flames and luckily I still have a kitchen to bake in, but that’s another story.. and I’ll end that one with–I don’t really trust American Harvester Dehydrators anymore–eek!)  Did you know that I called them and they wouldn’t even stand behind it? Wow. And phew on them. Hello Excalibur.

And btw, don’t panic, you really don’t need a dehydrator to make this recipe, either. I just like to presoak and dry all of my nuts because they do have a protective coating that can be a little toxic for our tummies and can cause cramps and icky things like that. So that’s just me. You can do what you want. I have a feeling you probably will anyway. So enough about that.

Another exciting moment (in the making of this pie) was when I realized that my beautiful marble rolling pin..was ahemmm, gone!  Vanished. Then I remembered–I had thrown it out when I had learned how to eat healthy.  I remember thinking I would never use that thing again–so I donated it to a local thrift store. Ummmm WHAT?!!  Slap.

So when I rolled out this actual crust, I just used a filled water bottle.  It worked, well kinda.  So I really just pressed the dough into the pie dish, but it still worked just fine.  I do recommend rolling it out with a rolling pin, but when you don’t have one for some really dumb reason, don’t panic, there’s always another option.  Kinda like life, huh? 🙂

The Best Pecan Pie Ever

CRUST
3/4 cup organic tapioca starch
3/4 cup organic almond flour
2 tablespoons coconut sugar
1/2 teaspoon pink himalayan sea salt
1/2 cup extra virgin , cold pressed coconut oil
5-6 tablespoons filtered water
 
FILLING
3 eggs hormone free, omega 3 enriched 
1/3 cup raw honey
1 cup coconut sugar
3 tablespoons extra virgin , cold pressed coconut oil
a pinch of pink himalayan sea salt
2 cups raw organic pecan halves

Directions

PREHEAT oven to 350ºF or 175ºC

CRUST. Stir together crust ingredients except the oil and water. Add oil using a pastry blender. Add water, 1 tablespoon at a time until it forms into a ball. Roll out on a well (GF)floured surface. Place in pie pan and shape it really cute 🙂 Refrigerate.

SAUCE. Stir together all of the sauce ingredients with a spoon. Remove thepie shell from refrigerator and pour the sauce into it.

For safety, place a large cookie sheet under the pan as it cooks, in case of spill over. Bake for 25-30 minutes. This pie needs to be cooled and refrigerated 2 hours prior to serving. That kinda thickens it and makes it so authentically amazing.

Store in the refrigerator.

Best Banana Nut Bread Recipe Ever - grain-free, sugar-free, paleo, dairy-free watch out!

Ok, are you ready for the best banana bread recipe ever? Ok, of course there is a catch…actually I think we need to add that this is the best banana nut bread, whether you’re grain (or gluten) intolerant or not! Paleo, Southbeach, Gaps dieters are about to fall in LOVE all over again! 🙂

I really love banana nut bread.  I remember my mom used to make it and I loved the savory smell that filled the house and then the taste–yumm!  I used to slather it with butter, but don’t recommend that anymore.  But the beautiful truth is that you don’t really even need it to have additional oil because this is going to be one of the moistest banana (nut or not) bread you’ve sunk your teeth into.

It’s seriously amazing. It really is the Best Grain free Banana Bread Recipe I’ve tasted. And the texture gives no hint that it’s healthy either.  It looks, feels and tastes as good, if not better than any of the traditional banana bread recipes, but this one happens to be gluten free, and refined sugar-free, dairy-free and soy-free.  I guess we might as well add peanut free and unhealthy fat free too.  It almost sounds like we’ve got nothing left, right? Wrong. lol, we actually have a very amazing loaf of the best grain-free banana bread around.

Okay, a little word of warning before you look at the list of ingredients and start hyperventilating.  It only looks like a long list, but it’s really not bad at all.  If there are new ingredients that look a little different, just know that they will soon become some of your new best cooking friends.  So breathe…and jot down the few things you don’t have, then add them to your eternal pantry.

The one little note I’ll share is make sure to only use green powder stevia, which is the pure form it comes in.  I don’t recommend any trademarked brands because they’ve been chemically altered. We believe that it makes a big difference, especially if you’re struggling with your health at all. You’ll notice coconut milk in the recipe below, HOWEVER, it’s super easy and fun to make. Best Banana Nut Bread Recipe Ever

  • Prep Time: 10 minutes
  • Cook time: 40-45 minutes
  • Yield: 2 loaves

WET INGREDIENTS
6 ripe bananas
1 cup coconut oil (cold pressed, non-refined)
2/3 cup organic coconut milk
3 eggs, hormone free, omega 3 enriched
2 tablespoons lemon juice
DRY INGREDIENTS
1 cup coconut sugar
2 teaspoons raw organic stevia (green powder)
1 3/4 cups organic almond flour (this is cheaper when purchased in bulk)
1 3/4 cups organic tapioca starch
1 1/2 teaspoons organic baking powder- gluten & aluminum free
1 teaspoon natural baking soda
1 teaspoon Pink Himalayan sea salt 
1 cup chopped Raw Live Walnuts (optional)

Instructions:

  1. Preheat the oven to 350 F or 175 C
  2. Grease 2 loaf pans with coconut oil.
  3. Mix the WET ingredients together in a large bowl, using a hand mixer.
  4. In a separate bowl, stir all of the DRY ingredients together, then pour them into the bowl with the WET ingredients.
  5. Pour the batter into the greased pans, pouring equally between both pans.
  6. Place in oven and cook 40-45 minutes.
  7. Allow to cool and serve

Store anything that’s left (if any 🙂 in the refrigerator.

This was another Pinterest Inspired recipe that made me stop and force myself not to drool.  Then I went to work on mass reconstruction and conversion to make this amazing Pumpkin Crumb Cake – with no grain, gluten, refined sugar, dairy or soy, of course!

I’m really excited because we’re heading to my mom & dad’s for Thanksgiving this week and I’m doing desserts and sweet potatoes–ohmygosh, I have the best recipe for those too.  If you’d like that recipe, let me know asap and I’ll get it posted too!

But I love doing desserts because it’s so fun to come up with family favorites that I transform into yummy healthy alternatives.  The poor family actually had to choke down some pretty sad dishes through the early years, but now they actually like what I create–big whew on that (especially for them, lol!)

This recipe actually looks like a ton of ingredients and like it would be really hard, but the truth is, it’s really simple.  The secret is to have all of these ingredients all of the time. 🙂

And I guess you could use canned pumpkin if you need to, but it’s actually really fun to use those perfectly good pumpkins that may be sitting around as fall decorations (not the plastic ones tho-yikes!)

PALEO PUMPKIN CRUMB CAKE RECIPE.

  • Prep Time: 15 minutes
  • Cook time: 20 minutes
  • Yield: 12-15 servings

FIRST INGREDIENTS
1 cup USDA certified organic avocado oil
2 eggs, hormone free, omega 3 enriched
2 bananas
1 cup pitted certified organic dates
2 1/2 cups raw pumpkin meat – cut into chunks

SECOND INGREDIENTS
1 cup organic buckwheat or oat flour
1 cup organic tapioca starch
2 teaspoons organic baking powder- gluten & aluminum free
2 teaspoons organic ground cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon organic green stevia powder
1 teaspoon sea salt

TOPPING MIX
2/3 cup organic cold-pressed coconut oil
1 1/2 cups organic old fashioned (gluten free) oats
1 1/2 cups coconut sugar
1 1/2 cups organic almond flour
1 tablespoon organic ground cinnamon
1/2 cup walnut pieces

Instructions:

  1. Preheat oven to 350ºF or 175ºC.  Grease a 13”x9” cake pan, using coconut oil and gluten free flour.
  2. Combine all of the FIRST ingredients in the blender and mix until smooth.  Pour into a large bowl.
  3. Add in all of the SECOND ingredients; and mix together with a hand mixer.  Pour into pan and place in the center of the oven.
  4. Bake for 15 minutes.  Prepare TOPPING MIX by mixing all ingredients together in a bowl.
  5. Remove from the oven and sprinkle the TOPPING MIX over the top.  Place back in oven another 5-10 minutes.  Remove and serve.
  6. Store covered, in the refrigerator
