Paleo Pho Soup

If you’ve never had Pho before, you’ve been missing out! And now we’re about to share our Paleo Pho Soup Recipe. It’s so delicious, fresh, tasty and easy to make too. And I think this is very likely the BEST Pho recipe I’ve tasted. We use our own organic homemade broth to make it not only tasty, but full of more nutrients, including collagen, which we believe to be an incredible healer for the gut.

And btw, don’t let any of these ingredients scare you. They are just a little different, but can be found in an Asian Market or at this ORGANIC MARKET that we LOVE and have teamed up with to give you the freshest & finest ingredients at prices no one else has been able to beat!

Here’s our Paleo Pho Soup Recipe:

INGREDIENTS

  • 8 ounces of rice noodles (if you can’t have rice, we recommend zucchini noodles (delicious & easy!)
  • 1 lb. organic lean beef sirloin
  • freshly ground pepper – to taste
  • sea salt – to taste
  • 1 white onion or 3-4 scallops
  • 3 cups organic beef broth – homemade if possible for most nutritional value!
  • 3 cups water
  • 3-4 inches of fresh ginger root
  • 4 star anise pods
  • 1 organic cinnamon stick – YES, believe it or not! 🙂
  • 1 jalepeno pepper – seeded if you aren’t a heat lover
  • 1/2 cup fresh cilantro or basil leaves
  • 2 tablespoons Umeboshi vinegar or coconut aminos
  • 1 1/2 cups fresh bean sprouts

DIRECTIONS

  1. Prepare rice noodles according to the label directions. If you are using zucchini noodles, use a spiral slicer, and it just takes less than a minute to have amazing raw noodles ready to go!
  2. Place a large pot over high heat. Cut up and tenderize meat, then salt and pepper it. Sear the meat until the outside is browned, but the inside is still rare, just a couple minutes on each side. Remove from the pan and set aside.
  3. Add onion and ginger to the pot and cook just a few minutes.
  4. Add the broth, water, star anise, cinnamon and vinegar or coconut aminos and turn the heat to low and simmer for 10 minutes.
  5. Remove the star anise, ginger root, and cinnamon stick.
  6. Pour into bowls and add the noodles, cilantro, and bean sprouts.
  7. Serve

It started out with a few extra potatoes from Sunday dinner, and turkey sausage that was sitting in the fridge. I always have kale on hand, and then a brilliant idea came to me–“could I make a healthy version of Olive Garden’s Zuppa Toscana soup?! So I started playing and this is what I came up with.

Oh, and it If you’ve been following us, you’ll know that we are BIG fans of the benefits of making organic bone broth at home. So of course, I will have to say that this Olive Garden Zuppa Toscana Knockoff is the perfect recipe to use our Homemade Chicken Broth in as well, so you can get the most health benefits from this soup!

K, so long story short, lol. YES! This is a delicious recipe.

  • 1/4 cup certified organic avocado oil
  • 1 pound of ground turkey Italian sausage
  • 1 medium onion, chopped
  • 6 cloves garlic, minced
  • 1-2 teaspoons organic fresh basil
  • 1-2 teaspoons dried organic oregano
  • 1-2 teaspoons dried organic thyme
  • 2-3 tablespoons crushed red pepper flakes
  • 2-3 medium red potatoes, chopped
  • 4 cups organic chicken broth
  • 2 cans heavy coconut milk
  • 1 teaspoon sea salt
  • 3-4 cups chopped kale

In a large pan, saute ground turkey, onions, and garlic in avocado oil over medium heat until onions are softened. 

Add all other ingredients except kale to the pot. Cover and cook for 30 minutes

Add the chopped kale and simmer for 15 minutes.

Serve

We kind of set you up, lol! 🙂  Not really, but we mentioned in our Homemade Broth post that we would be happy to share a recipe for some yummy Homemade Chicken and Rice Soup and you bit! (or slurped?!)  

Anyway, we heard from many of you, requesting more soup recipes from homemade broth…so we want you to know that we hear you and care about what you are asking. So of course, here ya go…and oops, just so you know, many of the items in this recipe can be found locally, but we’ll add links to some of the harder to find items. Some of our viewers were surprised that we aren’t vegan. We once were, but our focus has always been on eliminating as many chemicals from the diet as possible.   • 1/2-1c pre shredded cooked chicken
  • 1 serving cooked organic brown rice or organic quinoa
  • 1 ripe avocado
  • 1 handful of cilantro, hand shredded
  • 2 cups homemade chicken broth
  • Pink Himalayan sea salt and freshly ground organic peppercorns to taste

how to make Real Homemade Broth, super easy and so delicious, but amazingly good for you too. I also love how it makes the whole house smell so yummy! 

Here is a video that shares some of the amazing benefits I’m already seeing after I’ve started adding Real homemade broth to my diet every day!

If you take a second, just look up the ingredients in store bought broth. If it doesn’t make you sick, it probably will when you eat it. I say that kind of joking, but sadly kind of not.  I have to admit that I was shocked. Even when we were eating a completely Raw Vegan Diet, we were using pre-made vegetable broth, made by someone who didn’t have our best interest in mind.

Every thought we think

If you’re vegan, this post may not be for you, although, it is possible to make some pretty good vegetable broth–maybe we’ll just do that for you, would you like that?…and we also have plenty of other recipes that also contain no sugar, no gluten, no dairy, no soy, and especially no chemicals that you will love as well.

Here’s how easy the broth is to make…

Homemade Broth (from organic chickens of course)

Nutrient rich chicken Stock. 

  • 1 bones of an organic chicken (gizzards/giblets neck and feet if possible) 
  • 1 Organic onion (if possible) peeled and quartered
  • 3 organic carrots cut into 1” pieces
  • 3 Organic Celery sticks cut into 1” pieces
  • 3TBS RAW ORGANIC apple cider vinegar (WITH THE MOTHER) 
  • 1 Basil leaf
  • 2 tbsp himalayan sea salt (or more if desired) 
  • Thyme (dried or live) about 4 sprigs if live or 2tsp if dried
  • 2 tsp USDA organic celery salt
  • organic peppercorns as desired.
  • 3.5 quarts of filtered COLD water (filtered if possible) 

Pre-heat oven to 400

Roast chicken bones for 1 hour in oven and gizzards, giblets 30-45 minutes or until crisp.

When done, in a large pot or large crock pot (at least 4 qt) combine all ingredients including bones. 

Turn on high till it comes to a rolling boil (30-45 minutes) then turn temperature to low and slow cook minimum of 8 hours. I like to let this simmer for at least 72 hours (3 days) but follow the directions recommended for your stove or crockpot. (Just be smart, we want to keep you around as long as possible! 🙂 The idea is that the longer you let the water ‘Broth’ simmer, the more nutrients seep into your water and the more “rich” your broth will be! 

Taste broth and if it needs more flavor add some more vinegar and seasonings. The vinegar is a crucial element to your broth, as it helps pull the nutrients out of the bones! Plus adds a great flavor and is great for you!

OLIVE GARDEN Pasta Alfredo Healthy Knock Off

INGREDIENTS

  • 1 lb. grain-free quinoa or gluten-free brown rice fettuccini noodles (these are way cheaper in bulk, thus this particular link, but it’s nice to have extras on hand because you’re going to really love this recipe, lol! 🙂
  • 1 can pure coconut milk
  • 1 teaspoon certified organic garlic powder
  • 1/3 – 1/2 cup rice milk cheese, mozzarella flavor – to taste (optional)
  • 2 Tablespoons lemon juice (or juice of 1 lemon)
  • Himalyan sea salt – to taste
  • organic rainbow peppercorns ground – to taste (these are really pretty as well as tasty)
  • 2- tablespoons Nutritional Yeast Seasoning
  • 1 tablespoon certified organic Italian Herb Seasoning
  • 1 tablespoon organic chia seeds – ground
  • 1/3 cup organic extra virgin olive oil (cold pressed)

INSTRUCTIONS

  1. Boil the  noodles as directed.
  2. Place all the rest of the ingredients, except the olive oil, in a high powered blender and blend 2-3 minutes, until pretty warm, but not too hot.
  3. Add in the olive oil, just for about 10 seconds
  4. Pour over a bed of warm fettuccini noodles.
  5. Laugh at how much time & money you just saved & at how much better you feel than if you would’ve eaten somewhere else! 🙂

Fried Chicken Gone Healthy!

Ok, so it’s not really fried, but will definitely give Fried Chicken a run for its money–hmmm, maybe not the best cliche, lol, sorry about that. It’s never been one of my strong points. But that said, this faux fried chicken is super simple, delicious, and cuts out all the grease, grime, gluten, grain, and will definitely make you the star of the show (well, table anyway 🙂

So get those Southern cravings ready because this recipe will quench them and make you wonder what took you so long. 🙂 Do I say that every time I post a recipe, sheesh. But the truth is, this is really delicious and I think you’ll absolutely love it and I hope it rocks your world! No need to crave fried chicken any more, yay. 🙂

And about the chicken, Tiffany and I ate a Raw Diet for 1 1/2 years and loved it. We did miss some of that savory home cooking, so we adjusted it back to a High Raw & Mediterranean Blend. So yes, we do eat chicken and wild salmon. When it comes to chicken though, there are some things to know.

Our concern has always been more about eliminating toxins and embracing as many nutrients as we possibly can, so we only eat organic chicken. And we know what it eats, because I have a son who raises chickens with a friend on the side. Most of the chicken feed available now days is genetically modified corn or soy, so chicken can be sold as “natural” even if it has had that type of diet. As far as we’ve been able to find, in the States, I believe it must be truly organic through and through if it is USDA Certified. But I could be wrong…because I still don’t know if that means they raise it on non-gmo grains exclusively, do you know? I’d really love to find that answer if anyone knows it, so we can let everyone in on what it really means.

A little off topic, but you know what’s so weird to me? The chickens Trent raises for us get BIG. And they don’t use any hormones or antibiotics at all. So WHY do you think they use them?? I know what I think, but I’d love to hear your thoughts and feedback on it!

When you buy a “natural” chicken, it may say it has “no hormones or antibiotics added” umm, does that make you even just a little bit mad? Of course they haven’t “added” any hormones or antibiotics to that dead chicken. Sadly that is all that it means.

So needless to say, we eat meat sparingly, so when we do eat it, we want it to be good. And this is a great recipe that we want you to love, because it is so much better for you than the alternative.

FRIED CHICKEN GONE HEALTHY

Yes, one last thought before we begin, I highly recommend using certified organic ingredients whenever you can, so I’ve searched high and low for the best deals on each of the following certified organic ingredients that we love to use…k, enough abuse, here ya go:

  • 2 eggs (optional – read why below)
  • 1 full chicken cut into pieces

FLOUR MIXTURE

  • 1 cup almond flour
  • 1 cup certified organic coconut flour
  • 1 tablespoon certified organic italian seasoning
  • 1 1/2 teaspoons certified organic sea salt
  • 1 teaspoon certified organic turmeric powder
  • 1 teaspoon certified organic fresh peppercorns
  • 1/2 teaspoon certified organic garlic powder
  • 1/2 teaspoon certified organic chipotle pepper

I’ve actually found that if I wash the chicken, then cover it and stick it in the fridge for several hours or even overnight, it becomes tacky enough that I don’t need any eggs in this recipe. The flour mix will stick perfectly and it’s not near as messy, but if you prefer the mess, be my guest (actually that would be LOTS of FUN!)

1. Preheat oven to 450 F. or 230 C.

2. Prep the chicken as described above. If you’d rather use eggs, then skip this step.

3. Place all of the flour mixture ingredients together in a bag and shake together.

4. If you didn’t prep the chicken in the fridge, just place 2 eggs in a bowl and dip each piece in the egg mixture) otherwise ignore this step. Sheesh, have I confused you? I am so sorry–it sounds a little complicated, but it really isn’t. I promise!

5. Coat a cookie sheet lightly with avocado oil.

6. Drop Chicken, one piece at a time, into the bag. Shake and coat well.

7. Place chicken on greased cookie sheet and bake for just 20 minutes for the juiciest most delicious chicken ever!

Dig in (before everyone else does!)

That’s right, this is the best salsa ever! Get ready for the most delicious and by far the most nutritious salsa that has ever passed through your lips! It contains 30+ fresh fruits & vegetables and only takes 5 minutes to make!

I grew up in the heart of New Mexico, where you can find some of the best Mexican Restaurants around. So when people as what my guilty pleasures are, they don’t tend to be the typical pastries and pies, but tend to take me back to my roots…just good authentic Mexican Food.

So if I’m picky about anything, salsa would be found on the top of the list. It has to be good. I love a gently textured and bright red sauce that has the perfect little kick. So this recipe isn’t loaded with kick, but instead loaded with flavor, has a wonderful texture and did I say is loaded beyond anything you’ve ever tried when it comes to nutrients!

best salsa recipe everBEST SALSA EVER

  • 1/3 cup fresh organic cilantro
  • 2 teaspoons fresh lime juice
  • 2 bunches of organic green onions
  • 3 cloves fresh garlic
  • 3 cups organic tomatoes (or 2 14.5 oz. cans – not drained)
  • 1 4 oz can diced green chilis (not drained)
  • 1 teaspoon organic cumin
  • 1 teaspoon pink himalayan sea salt
  • 1 teaspoon macro greens superfood
  • 1/2 teaspoon Organic Aceola Cherries, Dehydrated 
  • 1/2 teaspoon Probiotic Powder

Place all ingredients in Blender and pulse 4-8 times, depending upon the texture you prefer. Serve.

NOTE: If you’d like a fermented salsa, for greater probiotic value, just place this salsa in a jar and cover with a lid. We added a probiotic starter to the recipe above, which will allow the entire product to become rich in natural probiotics!!  Leave it on the counter for 2 days, then place it in the fridge. I wasn’t really planning this Nacho Salad Supreme post, but I was just sitting here, chowing down my lunch – feeling both excited & emotional with the few comments I got yesterday, because the two of you mentioned you also have RA (Rheumatoid Arthritis). So now I’m in a real dilema–do I post this recipe on mmmmmMonday or Friday Fun & feelings??! And then, why do I manage to complicate the simplest things, lol.

So for those of you who are counting, mmmmMonday wins.

I don’t know what exactly gets me emotional right now. I really don’t think it’s the Nacho Salad, jk, lol. Could be that Im just an emotional baby, or maybe because every now and then it hits that I am not fighting this disease alone. I know that, and we hear from so many people suffering, on a daily basis, sadly.

But for some reason, the 2 notes that came in yesterday really got me. I think because they both mentioned they felt they were the only one’s struggling like they are, and I remember those lonely, desperate feelings way too well.

I’m sure you guys have just as much to share on RA, or other autoimmune diseases, if not more. So thank you for the messages. In fact, please comment on our posts, let us know how you’re feeling, what victories you’re having, what you’re learning, how you’re growing! I would love for this blog to be place where we can all build each other up & talk amongst ourselves about our ailments… and for those who don’t have RA or an auto immune disease or anything of that sort.. hopefully this can be a place that empowers you to continue eating & living a healthy lifestyle and preserving your beautiful health!

Nacho Salad Supreme

INGREDIENTS

2 handfuls of certified organic non-gmo corn chips

1 small tomato chopped

1 bunch organic cilantro – shaved & chopped

1 avocado, chopped

1/4 chopped red onion

almond or rice milk cheese (optional)

1 scoop organic black beans – cooked and drained

1 scoop organic refried beans – cooked, drained and mashed

INSTRUCTIONS

  1. Heat up the beans.
  2. Place heated beans, chips, and cheese on a pie pan or cookie sheet and broil quickly (about 2-3 minutes) and remove from oven.
  3. Top with the remaining ingredients. (If you are a cheese lover, but trying to get away from cheese, guacamole is an awesome alternative!
