Mmmm, my mouth is watering..Cashew Sesame Salad & Ginger Dressing

I was craving ginger when I came up with these 2 recipes. Maybe because I love the slightly hot zesty flavor, but actually….I also love the fact that it is loaded with anti-inflammatory qualities (which btw, helps keep our bodies young 🙂

So this is what I came up with…a delicious Cashew Sesame Salad & Ginger Dressing, which were so delicious and was super easy to blend together.

I really loved it and knew Tiffany would too. So when she came over to do a makeover video with me, I whipped up some of this amazing Cashew Sesame Salad & Ginger Dressing.  You can see how she liked it on the video below….  Afterward we gave our cute model, Sharlee, some too, and I wish we would’ve gotten that on camera, because she LOVED it too. But then, I don’t know who wouldn’t!  Lol!  🙂

Are you ready to try it?  Here is what you’ll need…

CASHEW SESAME SALAD
  • 1 apple – cored & chopped. Peel if desired and soak for a few minutes in water and lime juice to keep from browning 
  • 4-6 cups fresh spring greens 
  • 1 thinly sliced sweet onion
  • 3-4 thinly sliced radishes
  • 1 handful cashew nuts

Instructions:

Chop apple and place in a shallow bowl. Cover with water and lime juice. Set aside, then chop and mix together the remaining ingredients in a large bowl. Strain out apple chunks and stir them into the salad. Add dressing (below) just before serving.

 

ASIAN GINGER DRESSING

  • 3/4 cup extra virgin olive oil
  • 1/3 cup coconut aminos – this can be found at health food stores or online
  • 1/3 cup organic apple cider vinegar
  • 3 tablespoons raw honey
  • 2 cloves garlic, minced
  • 1/4 teaspoon ginger root powder
  • 1/4 cup water

Instructions:

Mix in blender and refrigerate for 1-2 hours before serving.  Unless–you’re starving and want to eat right away (it’s still yummy served right away too!)

Okay, guilty!

I made these delicious & oh so Yummy Vegan tacos and posted them on instagram–and I did NOT post my recipe!  What in the @*&(#$ was I thinking????  🙂

SO I’m here to redeem myself and share a super easy recipe that was absolutely delicious.

Here is how I made my yummy Vegan Tacos — which were really mouth watering, delicious and filled with all of the good and none of the bad. They taste as good as they make you look!

OOps, I also added some thinly sliced raw zucchini, but it is optional (just adds more nutrients if you happen to have it on hand.

  • Prep Time: 10 minutes
  • Cook time: 2 minutes
  • Yield: 2

INGREDIENTS

2 organic corn tortillas
1/2 cup organic beans, black or pinto, cooked & mashed
1 radish, sliced
1/4 tomato, diced
1/2 avocado
1/2 cup kale, diced

SALSA MIX – Or make our amazing 5 minute Best Salsa Recipe Ever
1/4 red onion
1/2 tomato
1/4 teaspoon chili powder

 

INSTRUCTIONS

Heat the beans and tortillas over the stove for just 2-3 minutes, until warm.  Remove from heat and place all of the other ingredients on the taco.

Mix the Salsa Mix in a mini blender and pour over individual tacos and serve.

So yeah, our focus is always on making foods healthier, but you can’t beat this one…5 minutes – delicious, healthy, easy to make & affordable, yay!

If you’re looking for authentic sushi, prepared by a sushi chef, this recipe is not that.  Just so you don’t get distracted by all of the things we don’t do “right.”

Just take healthy,

add in some love,

NOTE on the liquid aminos.  At the time we filmed this, we used the type which we showed, which is a soy base.  Since then, we stopped eating all soy and have changed to “Coconut Aminos”  It has a soy like taste and works great, without the worry of soy in the diet.

INGREDIENTS

Wasabe powder – desired amount
Water – follow manufacturers directions
Organic nori sheets
Brown rice, quinoa – pre-cooked (or riced cauliflower)
Avocado
Fresh spinach
Organic coconut aminos
Wild salmon – make sure it’s treated!!
Extra virgin olive oil – as desired

INSTRUCTIONS

  1. Place all ingredients in separate containers and lay on nori roll.
  2. Roll it up and seal the edge with a little water.
  3. Slice roll and serve with the wasabe and coconut aminos.

Wild Salmon Bisque Soup

It’s a blizzard outside, and there’s nothing better than a warm bowl of soup on a day like today.Salmon Bisque Soup--healthy, hearty and really tasty! And of course gluten-free, sugar-free, dairy-free, and soy free

for that matter!

This is probably the funniest recipe I’ve put together, yet it turned out so great! Inspired by the cold, I searched for some good soup recipes and went through, picking ingredients and textures that I thought would compliment each other and came up  with a couple of recipes that sounded pretty savory for Corn Chowder and a Salmon Bisque.  So I tore into them to see what would come of them

At first, Corn Chowder sounded really good, and I had a Pinterest buddy request that I do a healthy version of one.  So I was, yeah, maybe a little bit snug, thinking I was going to get so much accomplished today, lol.  You know how that goes, lol.

So I started cooking away and then realized there was no corn in my corn chowder recipe and that it had gone a very different direction.  It smelt good, but what was I cooking??  I had all of the ingredients, but then decided it needed some spinach.  Of course, I had none.  So a happy accident in the kitchen led us to the technique I’m sharing with this recipe.

I actually started with the second ingredients below, got them simmering and removed them from the heat.  Then I had barely cooked the stalk with the sweet potatoes, plantain, etc. so I turned off the heat and covered them tightly…and ran to the store.

I think I was gone 15-20 minutes and came back, threw in the last ingredients and it was the perfect serving temperature too.  So I tried to write it out like that, but it truly turned out perfectly.

So I guess you could say today’s life lesson would be…”when life gives you the wrong soup, laugh, and make it the best wrong soup ever”…  okay, so maybe I’m not exactly what you might call poetic, but I like getting the laugh in there somewhere, haha!

But I was on to something (a pretty amazing something btw) and yes, that’s when this Wild Salmon Bisque Soup was about to be born! It is absolutely delicious, and then some! Get your taste buds ready for some pampering, and your body is in for even a bigger treat!

Wild Salmon Bisque Soup Recipe

  • Prep Time: 10-15 minutes
  • Cook time: 10, let set another 10 minutes
  • Yield: serves 4

FIRST INGREDIENTS
6 cups organic chicken broth
2 large yams, cut into thin circles, then quartered
1 plantain – cut into 1/4inch pieces

SECOND INGREDIENTS
2 tablespoons USDA certified organic avocado oil
salmon – 1 small fillet, 4 ounce
1/2 cup hormone free ground turkey
1 large onion – chopped
2 large garlic cloves – minced

THIRD INGREDIENTS
4- 5 cups fresh spinach, organic
2 tablespoons USDA certified organic avocado oil

HERBS & SPICES
1 Tablespoon organic parsley
1 teaspoon certified organic dried basil

1 teaspoon organic peppercorns

1 teaspoon sea salt
1/2 teaspoon certified organic oregano

Instructions:

Heat the FIRST INGREDIENTS together in a large pan on medium heat for about 2 minutes, then cover tightly.  Leave it on the heated burner, but turn the heat off.  Let set, while you start with the second ingredients.Simmer the SECOND INGREDIENTS together in a skillet on medium heat.  Stir together for 4-5 minutes, then pour into the large pan, containing the FIRST INGREDIENTS.  Cover quickly, and let set.Add the THIRD INGREDIENTS just before serving to maximize the nutritional content.For more nutrition and flavor, remove from heat and add in the herbs & spices.  Stir and serve.Serve right away….yeah, delicious!

  • 1 can wild salmon – drained (sockeye has the most nutrients)
  • organic grapes (red grapes are most nutritious)

Fruitful Salmon Salad Recipe

  • Prep Time: 5 minutes

Ingredients:

1 can, drained wild salmon
1 1/2-2 cups organic grapes
1 stalk celery
1-2 tablespoons extra virgin olive oil
1/2 teaspoon turmeric
1/2 teaspoon rosemaryInstructions:

Just slice the grapes in half and chop the celery.  Then place all of the ingredients in a bowl and stir together.  Serve alone or eat as a complete meal.  It’s also delicious served over fresh cantaloupe or rolled in a lettuce wrap–yummm!

So I decided to give it a try…

I went out to the garden and saw some additional items that I thought might be yummy in it.  Then I decided to add some more Italian type spices… and ohmygosh!!  It was delicious!

This Raw Sundried Tomato Cashew Pesto Sauce & Zucchini Pasta Recipe was super easy, super tasty, rich in balanced nutrients…..so you know what that means???  Yes, here it is..

Raw Sundried Tomato Cashew Pesto Sauce & Zucchini Pasta
  • Prep Time: 15 minutes
  • Yield: 4

Ingredients:

1/4 cup sundried tomatoes – fill water in cup and soak while setting up
1 fresh tomato
1/2 cup raw organic cashews
1 handful fresh chives (or 1 scallion)
1-2 cloves fresh garlic
1/2-1 teaspoon dehydrated red chili peppers
1 teaspoon sea salt
1 teaspoon fresh peppercorns, ground
1 teaspoon dry certified organic oregano
1 teaspoon certified organic Italian Seasoning

1/2 teaspoon dulce or kelp
2 tablespoons lime juice
2 tablespoons Extra Virgin Olive Oil (cold pressed)
1-2 ZucchinisInstructions:

Combine all ingredients (except zucchini and olive oil) in the blender.  Let blend about 4 minutes to warm while preparing zucchini noodles.

Use a spiral slicer for zucchini to get an angel hair pasta noodle.  Place raw zucchini in slicer and prepare noodles.

Add olive oil to the pesto sauce and pulse once or twice.

Stir sauce into noodles and serve.  Makes 2-4 servings, Raw Sundried Tomato Cashew Pesto Sauce & Zucchini Pasta 🙂

Chicken & Yellow Rice

My grandpa used to run a restaurant in Key West, Florida where he served the most amazing yellow rice. He was a chef and put as much love into his dishes as he did food, so for me, yellow rice brings back wonderful, delicious memories.

Years ago, I asked him for his recipe, and he was happy to share, but a very sad thing happened–I lost his recipe. So this is kind of a monument to my sweet grandpa, with a twist of very healthy alternative ingredients. I know his recipe took all day to cook and was so savory…but the first time I made this version, it reminded me of that chicken and yellow rice dish he always created with love.

For those vegans and vegetarians amongst us, it’s also very good without the chicken and could easily be added to your recipe file as well.

One really exciting note, this is a great way to add turmeric to your diet which is the most anti-inflammatory spice in the world. Besides that, this dish is gluten-free, sugar-free, dairy-free and soy-free, of course! 🙂

Chicken & Yellow Rice Recipe

1 cup brown rice, soaked rinsed
2 1/2 cups vegetable broth
3 shallots or 1/2 yellow onion, chopped
1 carrot – chopped
1-2 cups diced free range, wild chicken (optional)
2 tablespoons avocado oil
2  garlic cloves
1 1/2 teaspoons sea salt
1 teaspoon turmeric
1/2 teaspoon cumin
1-2 sprigs cilantro – chopped

Place rice and broth in a large pot and bring to a boil.

Stir in all other ingredients, and lower heat. Cover tightly and cook for 45 minutes. Check starting at 30 minutes to be sure you don’t burn the bottom of the rice. Once rice is finished, remove from heat and allow to sit 5 minutes. Fluff with a fork and serve.
