This recipe is inspired by the adorable Julieg on youtube, julieg713 She recently tried out coconut oil and we’ve been texting back and forth as she’s been finding some of the many amazing things you can do with coconut oil. But today, she texted me and said she’d used it with brown rice and added in some spinach and it tasted just like fried rice. hmmmmm that sounded good. 🙂
go here So I immediately went to the kitchen, where I always have a pot of cooked brown rice waiting. I didn’t have any spinach but I did have some mustard greens. Mustard greens? eek! Actually, the mustard greens were a complete accident and I blame it on whole foods for not labeling their greens. It may have been ok, but they were honestly gross in a blueberry green smoothie. After that failure, I asked our fb friends for some good recipes. Some of them sounded amazing, but I didn’t have all of the ingredients. So when Julie texted me today, I started thinking of what I had available that would work for a “fried rice”… I pulled out the mustard greens, then went to my garden and grabbed a handful of fresh chives and an orange pepper. And here is what else I came up with:
Healthy Fried Rice Recipe
- cooked brown rice (or riced cauliflower)
- coconut oil
- hormone free egg (great source of B12, but optional for vegans)
- mustard greens
- orange or yellow pepper
- fresh chives- cut
- powdered kelp or dulce
- sea salt

- 4 cups cooked brown rice (or riced cauliflower)
- 2 tablespoons coconut oil
- 1 hormone free egg (great source of B12, but optional for vegans)
- 1/2 cup mustard greens – chopped 1 orange or yellow pepper – diced
- 1 handful fresh chives- chopped
- 1/2 teaspoon powdered kelp or dulce sea salt – to taste
- peppercorns – to taste
source site DIRECTIONS: Heat coconut oil in a skillet and add the egg. scramble it and add in the rice. Warm for a minute or 2, then add all of the other ingredients quickly. Warm for about 1 minute and remove from heat immediately. Serve. BTW – We found a new friend, “coconut aminos” .. it’s a wonderful replacement for soy sauce and gives it a wonderful similar flavor. I love that it has no processed soy in it. But it’s an optional ingredient you can pour over the top of the mixture before serving. That’s itl I LOVE simple, lol!
