Healthy Fried Rice Recipe (using brown rice or cauliflower)

This is our Healthy Fried Rice Recipes — If you’re looking for authentic Chinese cooking, this isn’t exactly that, but will give you the delicious flavor and flair of it with healthy twist.  This recipe is inspired by the adorable Julieg on youtube,  julieg713  She recently tried out coconut oil and we’ve been texting back and forth as she’s been finding some of the many amazing things you can do with coconut oil.  But today, she texted me and said she’d used it with brown rice and added in some spinach and it tasted just like fried rice.  hmmmmm that sounded good. 🙂

So I immediately went to the kitchen, where I always have a pot of cooked brown rice waiting.  I didn’t have any spinach but I did have some mustard greens.  Mustard greens? eek! Actually, the mustard greens were a complete accident and I blame it on whole foods for not labeling their greens.  It may have been ok, but they were honestly gross in a blueberry green smoothie.  After that failure, I asked our fb friends for some good recipes.  Some of them sounded amazing, but I didn’t have all of the ingredients. So when Julie texted me today, I started thinking of what I had available that would work for a “fried rice”… Healthy Fried Rice RecipeI pulled out the mustard greens, then went to my garden and grabbed a handful of fresh chives and an orange pepper. And here is what else I came up with:

Shopping List

  • cooked brown rice (or riced cauliflower)
  • coconut oil
  • hormone free egg (great source of B12, but optional for vegans)
  • mustard greens
  • orange or yellow pepper
  • fresh chives- cut
  • powdered kelp or dulce
  • sea salt
  • peppercorns

INGREDIENTS:

  • 4 cups cooked brown rice (or riced cauliflower)
  • 2 tablespoons coconut oil
  • 1 hormone free egg (great source of B12, but optional for vegans)
  • 1/2 cup mustard greens – chopped 1 orange or yellow pepper – diced
  • 1 handful fresh chives- chopped
  • 1/2 teaspoon powdered kelp or dulce sea salt – to taste
  • peppercorns – to taste

DIRECTIONS: Heat coconut oil in a skillet and add the egg. scramble it and add in the rice. Warm for a minute or 2, then add all of the other ingredients quickly. Warm for about 1 minute and remove from heat immediately. Serve. BTW – We found a new friend, “coconut aminos” .. it’s a wonderful replacement for soy sauce and gives it a wonderful similar flavor.  I love that it has no processed soy in it.  But it’s an optional ingredient you can pour over the top of the mixture before serving. That’s itl  I LOVE simple, lol!

Vegan Sundried Tomato Bean Soup

I’m not sure that I’m in love with the cold rainy weather right now, after being blessed with such beautiful sunshine. But I know it’s wonderful to get the moisture, and I will be in love with how spectacular it will make the mountains look in a few weeks, so for those reasons, I’m really grateful.  But on a chilly night like tonight, I didn’t really feel like a cold salad, so this Vegan Sundried Tomato Bean Soup was a wonderful answer.

It’s actually a complete original, based on what I had in my kitchen tonight. But when I posted it on Instagram, Twitter, & FB, we got so many requests for the recipe, sooo of course, here I am.  🙂

It’s actually pretty fast and basic. If you cook your own beans, Id recommend that, but if you don’t, you can use organic canned beans and it will taste great.

VEGAN SUNDRIED TOMATO BEAN SOUP

RECIPE

  • Prep Time: 10 minutes
  • Cook time: 5 minutes
  • Yield: 4

FIRST INGREDIENTS
1 1/2 cups cooked (or 1 can) white beans
1 1/2 cups cooked (or 1 can) pinto beans
2 cups water
tomato – 1 whole organic, sliced
1/3 cup sundried tomatoes
1/2 sweet onion – sliced
2 fresh garlic cloves
3/4 – 1 teaspoon, depending on kick you like chipotle powder
1/2 – 1 teaspoon, depending on kick curry powder
sea salt – 1/2 teaspoon (optional)
cilantro – 1 bunch, organic

SECOND INGREDIENTS
3 tablespoons extra virgin olive oil (EVOO)
1/4 cup per serving rice or almond milk cheese

INSTRUCTIONS

Place the FIRST ingredients together in a pan until warmed, not too hot. Just cook it for a few minutes, then remove it from the stove.

Just before serving, add in the EVOO and stir. Pour into bowls and add 1/4 cup vegan cheese to each serving.

Detox Salad & Dressing

I think detoxing sounds like the most disgusting thing ever. It sounds stinky and bitter and bland. At least that’s what I used to think. But this Detox salad & dressing will defy the disgusting image you may have in your mind (like I used to have.)  It is actually delicious, satisfying, and really makes you feel better and better with each bite. It’s awesome!

The funny thing is this post wasn’t planned (at least by us anyway!) It was just another lunch, but with detox in mind. And if you read our posts “My Healthy Diet Backwards,” you’ll know why. 🙂 But when I posted it through Instagram, the messages and comments poured in, asking us to post the recipe. So you can thank our cute friends everywhere for this recipe.

The salad is just nothing but nutrients and rich in omega 3 fatty acids, which are essential for safe detoxification. The omega 3’s are found in 3 items in this salad–the wild salmon, the walnuts, and  the extra virgin olive oil in the dressing.

For those of you who look at the ingredients and see, “nutritional yeast,” don’t be alarmed. You’ll stop scrunching up your nose when you learn how nutritional those flakes are, power loaded with B vitamins, in fact they happen to provide the only plant source of vitamin B12, which we never want to become insufficient in.  We love them! Nutritional yeast flakes have a bit of a cheesy taste and are also great to sprinkle over all kinds of salads and vegetables just as they are.

Another thing to keep in mind, is the cilantro is added because it is one of the best vegetables for detoxifying. It has been shown to actually help the body release toxic chemicals and heavy metals.  For that reason, I go out of my way to always make sure that I’m buying organic cilantro…can you imagine the chemicals something like that could contain if it’s not organic???

Lol, I think I may need your help!  I made this detox salad & dressing up, but can’t quite think of a name for it. It’s soo delicious, is a bit tangy, zesty…and very yellow. For those of you who try it, please help me give it a name!  That would be awesome 🙂

Delicious Detox Salad

RECIPE

  • Prep Time: 10 minutes
  • Yield: 2-4

Ingredients:

bed of dark organic leafy greens – washed well and chopped
1 bunch cilantro – organic, washed
1 cup blueberries – organic
1 cup strawberries –  organic
1 cup chopped wild salmon – precooked
1/2 cup chopped walnuts , raw
1/2 sweet onion

 
Amazing Detox Salad Dressing
1 cup extra virgin olive oil
2 Tablespoons organic apple cider vinegar
2 garlic cloves, minced
1/4 cup nutritional yeast flakes
1 teaspoon date sugar or raw honey
1/2 teaspoon organic dry mustard
1/4 teaspoon organic black peppercorns

Instructions:

Wash and cut all of the vegetables and fruits, chop them, and throw them together.

For Dressing, Place ingredients together in a mini blender and blend until smooth. This dressing does not have to keep in the refrigerator, isn’t that cool!?!

Mmmm, my mouth is watering..Cashew Sesame Salad & Ginger Dressing

I was craving ginger when I came up with these 2 recipes. Maybe because I love the slightly hot zesty flavor, but actually….I also love the fact that it is loaded with anti-inflammatory qualities (which btw, helps keep our bodies young 🙂

So this is what I came up with…a delicious Cashew Sesame Salad & Ginger Dressing, which were so delicious and was super easy to blend together.

Your first

step to

I really loved it and knew Tiffany would too. So when she came over to do a makeover video with me, I whipped up some of this amazing Cashew Sesame Salad & Ginger Dressing.  You can see how she liked it on the video below….  Afterward we gave our cute model, Sharlee, some too, and I wish we would’ve gotten that on camera, because she LOVED it too. But then, I don’t know who wouldn’t!  Lol!  🙂

Are you ready to try it?  Here is what you’ll need…

CASHEW SESAME SALAD
  • 1 apple – cored & chopped. Peel if desired and soak for a few minutes in water and lime juice to keep from browning 
  • 4-6 cups fresh spring greens 
  • 1 thinly sliced sweet onion
  • 3-4 thinly sliced radishes
  • 1 handful cashew nuts

Instructions:

Chop apple and place in a shallow bowl. Cover with water and lime juice. Set aside, then chop and mix together the remaining ingredients in a large bowl. Strain out apple chunks and stir them into the salad. Add dressing (below) just before serving.

 

ASIAN GINGER DRESSING

  • 3/4 cup extra virgin olive oil
  • 1/3 cup coconut aminos – this can be found at health food stores or online
  • 1/3 cup organic apple cider vinegar
  • 3 tablespoons raw honey
  • 2 cloves garlic, minced
  • 1/4 teaspoon ginger root powder
  • 1/4 cup water

Instructions:

Mix in blender and refrigerate for 1-2 hours before serving.  Unless–you’re starving and want to eat right away (it’s still yummy served right away too!)

I always try to pull together a good mix of protein, complex carbs and healthy fat and I think this recipe nailed it!  Because of that, it makes a complete meal all by itself (a very yummy one too) but I have a couple of other ideas on how to serve it below.You’ll love how simple it is to make too…

Fruitful Salmon Salad Recipe

  • Prep Time: 5 minutes

Ingredients:

1 can, drained wild salmon
1 1/2-2 cups organic grapes
1 stalk celery
1-2 tablespoons extra virgin olive oil
1/2 teaspoon turmeric
1/2 teaspoon rosemaryInstructions:

Just slice the grapes in half and chop the celery.  Then place all of the ingredients in a bowl and stir together.  Serve alone or eat as a complete meal.  It’s also delicious served over fresh cantaloupe or rolled in a lettuce wrap–yummm!

Chicken & Yellow Rice

My grandpa used to run a restaurant in Key West, Florida where he served the most amazing yellow rice. He was a chef and put as much love into his dishes as he did food, so for me, yellow rice brings back wonderful, delicious memories.

Years ago, I asked him for his recipe, and he was happy to share, but a very sad thing happened–I lost his recipe. So this is kind of a monument to my sweet grandpa, with a twist of very healthy alternative ingredients. I know his recipe took all day to cook and was so savory…but the first time I made this version, it reminded me of that chicken and yellow rice dish he always created with love.

For those vegans and vegetarians amongst us, it’s also very good without the chicken and could easily be added to your recipe file as well.

One really exciting note, this is a great way to add turmeric to your diet which is the most anti-inflammatory spice in the world. Besides that, this dish is gluten-free, sugar-free, dairy-free and soy-free, of course! 🙂

Chicken & Yellow Rice Recipe

1 cup brown rice, soaked rinsed
2 1/2 cups vegetable broth
3 shallots or 1/2 yellow onion, chopped
1 carrot – chopped
1-2 cups diced free range, wild chicken (optional)
2 tablespoons avocado oil
2  garlic cloves
1 1/2 teaspoons sea salt
1 teaspoon turmeric
1/2 teaspoon cumin
1-2 sprigs cilantro – chopped

Place rice and broth in a large pot and bring to a boil.

Stir in all other ingredients, and lower heat. Cover tightly and cook for 45 minutes. Check starting at 30 minutes to be sure you don’t burn the bottom of the rice. Once rice is finished, remove from heat and allow to sit 5 minutes. Fluff with a fork and serve.
