Coconut Beet Berry Pancakes – gluten & grain FREE

We have a fun summertime obsession! We found the cutest organic farm and we visit it all throughout time summer for all kinds of beautiful fruits & veggies, honey, and fresh eggs. It’s awesome, and most items are just a fraction of the cost.

Coconut Beet Cranberry Pancakes

The farm isn’t “certified organic” and that’s because they want to keep the prices down. So for the same head of organic cabbage we’d pay $7 for at the grocery store, we just pay $1. 

So if you think buying organic is too expensive, it may be that it’s been regulated to the point of insanity, and that’s what you’re really paying for. If you find farmers you trust, and you know they use completely organic care, you can save yourself a lot of money and a lot of worry.

But that’s not what this post is about! 🙂 The other day I was at the farm, and I picked up some beets. The farmer’s wife said she makes beet pancakes and they are really good. She must have read my mind as she went over to a little stash of some sort and pulled out a recipe card and handed it to me. “Red Beet Pancakes”…wow. I hadn’t even thought of that one yet, lol.

So the next morning, I looked over her recipe and started swapping out everything I could to make it even more healthy. 

And this is what I came up with!!

AND btw, they were amazing!! It’s fun because the batter is bright pink, but as they cook, the outsides of them brown up. So for kids especially, it’s fun to cut into them and see that pretty pink color!

Coconut Beet Berry Pancakes

DRY INGREDIENTS

  • Coconut Beet Berry Pancakes
  • 1 1/4 cup brown rice flour (if you need grain free, use almond flour)
  • 1 cup organic unsweetened shredded coconut
  • 3 Tablespoons coconut sugar
  • 1 teaspoon natural baking soda
  • 1 teaspoon organic baking powder (aluminum & gluten free)
  • 1/2 teaspoon sea salt
  • 1 cup dried cranberries (sweetened in fruit juice)

WET INGREDIENTS

  • 1 cup fresh beets, cut into chunks
  • 1 1/3 cups coconut milk
  • 2 tablespoons lemon juice
  • 1 free range brown egg
  • 2 tablespoons organic avocado oil
  • 1 teaspoon pure vanilla extract
  1. Heat a griddle to 400º
  2. Mix all of the DRY INGREDIENTS together in a big mixing bowl and set aside.
  3. Place all of the WET INGREDIENTS in a blender and mix until smooth.
  4. Stir the Dry + Wet ingredients together in the mixing bowl. If it seems to wet, add a little brown rice flour until the batter is a nice consistency.
  5. Drop a little coconut oil onto the griddle just before pouring the pancakes out. Let them cook until they are pretty bubbly on top. Then flip until done.
  6. Serve.

I’ve always loved pancakes, and I love that breakfasty (oops, new word!) way they smell up the whole house and make things feel so yummy and comfy. Maybe it’s because my dad had a little Saturday morning tradition and he would whip up a big yummy breakfast for us, but there is something really comforting to me about breakfast foods, especially warm light pancakes.Easy Pancake Loaf - grain free and gluten free

So with that in mind, I’ve been experimenting with some healthy ingredients and am happy to say that we have whipped up some pretty amazing pancakes! AND if you like trying new things, and don’t really want to stand there and wait for them to turn just right, pancake after pancake, I think this is going to be a real treat and a HUGE relief to you! Because in stead of waiting and flipping, you can whip them up in just 3 or 4 minutes, put them in a bread pan, and let them bake, go get dressed, do your hair, or whatever else you needed to get done.

These have all of the flavor and moist light delicious taste of pancakes, but are really just a fraction of the work!

Easy Pancake Loaf - grain free and gluten freeI’ve been playing with banana flour lately and it’s becoming a real true love! It’s a grain-free flour that’s made from green bananas. It is actually classified as a resistant starch, which means it acts a lot like soluble and insoluble fiber by easing the passage of food through the digestive tract, yet is slowly digestible like soluble fiber. It’s being used to aid in weight loss, and studies are indicating that it may greatly reduce risk of obesity, diabetes, and colon cancer. So yeah, a LOT of coolness going on there!

Alright, let’s go…

INGREDIENTS

1 ½ cups pure coconut milk (if you want to make whipped cream from it, used canned and follow our whipped cream recipe)

¼ cup USDA Certified Organic avocado oil

2 large free-range eggs

1 tablespoon coconut sugar or ¼ teaspoon pure liquid stevia

1 1/2 cups banana flour

1 ⅓ tablespoons aluminum-free gluten-free organic baking powder

½ teaspoons pink Himalayan sea salt

topping items: strawberries, banana, maple syrup — those are what I used, but it’s up to you, let me know what you try!

 

DIRECTIONS

  1. Heat oven to 350º
  2. Grease 1 bread pan with coconut oil.
  3. Mix all of the above ingredients together in a mixing bowl
  4. Pour into the pan and place in preheated oven for 20 minutes.
  5. Remove, slice, and serve with topping items of choice.

It’s time for a Vegan Pumpkin Milkshake

Today I went hiking in the mountains behind our house. Can I just say that I love the Fall? The leaves in this picture are from my little hike, so vibrant and beautiful. Oops, before I get side tracked, no, I didn’t put leaves in my smoothie, lol! But I thought they would be perfect in a photo.

The beauty of nature

is everywhere.

So when I came home to a pumpkin waiting for me to think up a wonderful way to use it, my heart practically skipped a beat. YES, a Pumpkin Milkshake, YAY! 🙂

Vegan Pumpkin Milkshake

Vegan Pumpkin Milkshake

  • 1 cup coconut or almond milk
  • 1/2 frozen banana
  • 1/2 orange, peeled
  • 1 cup chopped pumpkin with skin (or 1/2 cup pumpkin puree
  • 1-2 teaspoons pure maple syrup, black strap molasses, or 10 drops liquid stevia
  • 1 scoop Raw Whole Food Vanilla Protein Powder
  • 1 teaspoon Raw Organic Green Superfood Powder
  • 1 teaspoon Macro Life Naturals Macro Greens Superfood Powder
  • 1 tablespoon extra virgin olive oil (or coconut oil)
  • 1/2 teaspoon pumpkin pie spice
  • 2 handfuls ice

Blend well and serve. This smoothie constitutes as a complete meal.

Tiff’s Fried Eggs With a Twist

It’s so funny how we think we’re in charge of our kids, when sometimes I think they really have very different ideas, lol.

So when I tried these fried eggs with a twist, it was actually a pretty fun experience. And the kids thought they were in charge, but deep inside, I think I got the last laugh.

Love taking the time

to prepare healthy food 

for your body,

celebrate every single

nutrient in it,

and savor the fact

that the food you eat

not only becomes

food for the body,

but also for the soul.

It was a much better option than those sugary cereals that have no real nourishment and leave them hungry an hour later. These fried eggs were super simple to make, colorful and creative, and kept their tummies full a lot longer than the ugly alternative. So yeah, I think it was a win-win all the way around.

It’s a simple idea that I’m sure will make breakfast fun, yet with a whole new twist on fried eggs. My kids really loved these, and of course we did too.

Sometimes it’s just fun to do things differently, so this is a cute idea to shake up your breakfast routine. And ps, a great way to sneak a few more nutrients into your kids diet!!!!!

Fried Eggs With a Twist

Ingredients:

3 bell peppers, in your choice of colors

10-12 eggs, hormone free (free range)

3 tablespoons avocado oil

Directions:

Slice and core bell peppers into 1/2″ rings.

  1. Heat oil on skillet
  2. Place bell pepper rings on the skillet
  3. Break eggs into each ring.
  4. Add sea salt & black peppercorns
  5. Fry on each side until done
  6. Serve

I love south-of-the border flavor, for just about anything…even breakfast!

So here’s a yummy quick & healthy scrambled eggs recipe, with a fajita flavor that everyone in our household loves.  In fact, my pickiest eater said these Paleo scrambled eggs were one of his favorites.  And psssst, it’s a great way to hide a lot of veggies too!

Actually, speaking of that, I love to add them at the end of cooking, just enough to soften them slightly but in order to hold onto the greatest nutritional value.

One little cool thing that happened to us was that we also started falling in love with vegetables once we stopped cooking them to death too. There’s something crazy good about the flavors and the crispiness veggies can add to any dish when they are the last thing to go into a recipe and not allowed to be heated too long.

RECIPE

4 eggs (hormone/antibiotic free)
2 tablespoons almond or coconut milk
2 tablespoons avocado oil
1/4 cup mini red bell pepper – chopped
1/4 cup mini yellow bell pepper – chopped
1/4 cup tomato – chopped
1/-2 green onions – chopped
1/2 avocado – chopped
1 ear of GMO-free USDA Organic Corn – optional

1/2 cup almond or rice milk cheese – optional

DIRECTIONS:

  1. Heat skillet to medium heat. Add avocado oil.
  2. In a medium bowl, mix together eggs and non-dairy milk. Pour into heated skillet and cook, turning with a spatula while cooking.
  3. Just a few minutes before they are finished, add the vegetables and stir together until warmed, but still crisp.
  4. Remove from heat and serve.

Great with HOMEMADE DIY KETCHUP, SALSA or chili sauce!

Have you ever looked at the ingredients in your ketchup? If not, you may just want to wander into your kitchen and check it out. It was after I saw high fructose corn syrup, propylene glycol, artificial colors, artificial flavors, and on and on that I decided there had to be a better route.

I’ve found that some of the truly organic ketchup’s contain ingredients that I’m fine with, but if you run out, or want something fresh, or want to save $$, here is a recipe I think you’re going to love.

Today I’ll be making HOMEMADE BEAN BURGERS, SWEET POTATO FRIES, and of course KETCHUP and mustard (another easy and fast recipe I’ll be happy to add if we get enough requests–hint hint, please comment below) and I know it will be yummy. As I was getting my groceries together I thought of you, and thought maybe you’d like this simple and delicious recipe.

DIY KETCHUP RECIPE

1 cup fresh tomato – chunked up
2 tablespoons extra virgin olive oil
2 Tablespoons apple cider vinegar
1 Tablespoon sun dried tomatoes
1-2 pitted dates
1/4-1/2 teaspoon sea salt

Place all ingredients in a mini blender , and blend until smooth.

This will thicken after it sets about 15 minutes. Makes 3/4 cup and will last  5 days in the refrigerator.

I found this idea on pinterest , and am so sorry that I can’t find the original source for it. But I loved the idea and whipped it up today with what was in my fridge.

Makes 6 Egg Muffins

Life begins the second

you decide you are

ready to LIVE it,

and no longer

wish to merely exist.

Paleo Egg Muffins Directions:

Preheat the oven to 375F and start chopping up fresh veggies. You could us just about anything, but this is what I had in my fridge today:

  • 1/4 red onion
  • 1/2 avocado
  • 1 bunch organic cilantro
  • 1 tomato
  • 1 red or green pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon basil
  • 1/2 teaspoon chili powder (if you like a kick)
  1. In a mini blender or a cup, whisk together 4 eggs and 1/4 cup almond or coconut milk and the spices. Set aside.
  2. Grease the muffin tin cups with avocado oil.
  3. Chop the vegetables, then drop a mix of them in each tin.
  4. Pour the egg mixture over the vegetables, almost to the rim of each cup
  5. Almond or rice milk cheese (optional)
  6. Bake for 20 minutes

Serve warm with organic ketchup or serancho hot sauce. When I’m just making 6 muffins, I’ll often mix up a batch of grain free muffins to bake in the other 6 tins. Try our recipe for Caramel Sticky Buns with these, or just on their own for a real treat!

PALEO Grain-Free Tortillas

Ingredients

  • 2 eggs
  • 1/2 cup water
  • 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1/4 teaspoon sea salt

Directions

  1. Heat a crepe pan over medium heat.
  2. Place all ingredients in a blender and mix well.
  3. Spray or pour avocado oil on the pan
  4. Quickly pour tortilla mixture onto the hot pan, turning to cover all the way to the edges of the pan.
  5. Allow to bubble, then turn with a spatula. Cook until done.
  6. Serve
