Cinnamon Toast & Honey Butter – get your skin glowing!

This was just a random snack I was eating and I snapped an instagram picture.  No biggie….at least that’s what I thought for about 1 minute, lol!   Suddenly I was flooded with requests.  So I posted it on our naturesknockout.com and our viewers loved it.  So I guess you could say this one is back by popular demand, lol.

Just because

it’s different,

doesn’t mean

it’s impossible!

But beyond that, it’s worth loving for lots of reasons.  Here are a few:

  • super quick to make
  • delicious healthy snack (no gluten, dairy, sugar or soy)
  • the aroma is amazing
  • the ingredients are all beautifying, inside and out

And if that’s not enough, here is a little more insight as to why we love these ingredients…

CINNAMON & GINGER

Cinnamon is a given on cinnamon toast, but it’s a good thing, because it’s loaded with anti-inflammatory antioxidants which make your skin glow beautifully.  Many studies have led us to believe that inflammation is the very root of aging and disease.  So eating cinnamon and ginger help retard inflammation and allow our bodies to thrive.

Ginger is even higher on the antioxidant and anti-inflammatory scale and that’s the main reason we add it to this snack.  It has a stronger taste, so you may try a little at a time, but if you’re really wanting better results, we think this a a great place to indulge. 🙂  Yeah, we’re a little shallow like that, but we believe you’ll feel better too.  So whatever level of motivation you have, we say enjoy! 🙂

HONEY

Some people worry about the high sugar content because of diabetes or hypoglycemia, so if that’s a problem, we say just omit the honey and throw on a little date sugar instead.  In other cases, some people have inflammatory reactions to honey…but here are our thoughts on that.  Tiffany can eat “raw” honey, and does great, but if she has regular store bought honey, she is in pain right away with her rhuematoid arthritis.  We’re researched it through and through and the only difference we can find is that raw honey is NOT heat processed, while regular honey is.  So we believe that heat alone is enough to chemically restructure honey, making it a foreign invader to some people.  Because of that, we only eat raw honey and eliminate potential problems and embrace the immune boosting benefits of honey.  Btw, we won’t link to our favorite honey because we recommend buying it locally for the best immune system boost.

COCONUT OIL

We’re big lovers of coconut oil and could devour the fragrant smell that explodes from it.  There is some controversy surrounding it because it is a saturated fat, but we’ve seen enough good research on it and some great doctors who endorse it that we feel confident that it has many great health promoting properties.  Here is a video we did: A Billion Uses for Coconut Oil

PEACH COBBLER — Paleo — NO sugar, gluten, dairy, or soy!

The other day, we headed up to the mountains for a family reunion. I’d like to say that we’ve been such an outstanding example of healthy eating that everyone in our family refuses to eat anything not so good. But, I guess the right answer is “not so much”…we are human, and we live in a human world, and even our family members are not yet converted. BUT, many are thinking it’s important, and in our world, that is a step! 🙂

So before heading up, I threw together a delicious raw strawberry pie (recipe in our BEAUTY BITE DESSERTS COOKBOOK and it was devoured just about as fast as it took me to open the lid. Of course it made me happy to see everyone lap it up and rant and rave about how yummy (AND healthy) it was!  That is happiness, I must admit. But the real good is that it gets people thinking…there are amazing replacements that make transitioning so much more simple and fun.

Then they pulled 3 dutch ovens off of the flames, and served some very delicious looking peach cobblers. Yes, my mouth was watering, but I knew they were loaded with not so good ingredients. So I called it good with my last bite of strawberry pie. BUT, I couldn’t get those peach cobblers off my mind.

With a mound of peaches in the fridge and more coming off our tree, I decided to do some experimenting, and that is what led me to this recipe, which has been a HUGE HIT! I’m so happy with it, and know you will love it too.

  • Prep Time: 15 minutes
  • Cook time: 20 minutes
  • Yield: serves 8

Ingredients:

PEACH MIXTURE
1 cup organic raisins – soak in 1 cup water while cutting up peaches
16 fresh peaches – peeled, pitted and sliced into thin wedges –
1/2 cup coconut sugar
1/4 cup honey
1 teaspoon stevia
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon fresh lemon juice
2 tablespoons tapioca starch (flour)

PEACH TOPPING INGREDIENTS
1 cup tapioca starch
1/2 cup coconut sugar
2 teaspoons baking powder
1 teaspoon stevia powder
1/2 teaspoon sea salt
3/4 coconut oil
1/2 cup water

Instructions:
1. Preheat oven to 425 degrees F (220 degrees C).
2. Set raisins in water aside to soak, while cutting up peaches
2. Peel and slice fresh peaches
4. Drain raisins and add them to peaches.
5. In a 13×9″ baking pan, combine all ingredients in PEACH MIXTURE. Stir together to coat evenly and set aside.
6. In a large bowl, combine the TOPPING INGREDIENTS together until somewhat smooth.
7.Pour topping over PEACH MIXTURE and smooth it over the top.
8. Bake 20-25 minutes. Remove and serve with our COCONUT MILK ICE CREAM or WHIPPED TOPPING, in our BEAUTY BITE DESSERTS COOKBOOK

This Raw Porridge, (Carameled Apples & Cinnamon) is a much loved favorite breakfast treat of ours, but was inspired by one of our wonderful facebook beauties. We asked a random question the other day and as always, you all came through. Thank you again, for inspiring us on this journey that we all are sharing together!

This is our version of Raw Porridge, a totally raw, quick, and delicious way to give your morning that powerstart that it needs.

Instead of listing the shopping list, I shot a picture 🙂 The milk is almond milk that I made myself. You can watch the video for that below.

INGREDIENTS:

Ingredients –

3 tablespoons organic Chia seeds
almond or coconut milk – 1 cup (more if desired)
1 organic apple – chopped
raw honey – to taste
2 tablespoons raw walnuts
organic cinnamon – to taste
unsweetened coconut chips – optional

Instructions

Place the chia seeds in a bowl, with the milk, and let set for 10-15 minutes. While it sits, chop up the apple, and gather the rest of the ingredients. Stir together and serve. Get ready for a mouth watering delicious treat that you will come to crave!  🙂

Anyone up for a delicious veggie omelet? A couple days ago, we just wanted to play with you a little bit. So we posted a quick request on our facebook page, asking for your favorite go to healthy breakfast ideas. And you made us salivate, lol!  We’ve always known that we love you, and as always, you came through.

We get asked all the time what we do for breakfast every day. It’s funny, we’ve found a variety of delicious breakfast dishes, and we share them all of the time. But when I saw a comment about a favorite omelet, I was instantly in the mood to share. Another one that caught my eye was Chia Seed Porridge, which is another love love LOVE!  (watch for our version next week 🙂

But for now, this delicious veggie omelet is just one of those wonderful yet quick fall-back foods that we’ve come to love. It’s super quick to whip up, and incredibly delicious with all kinds of fresh veggies and herbs, especially those that may be growing in your garden!  mmmm…maybe it’s time to share it 🙂

 DELICIOUS VEGGIE OMLETTE RECIPE

  • Prep Time: 10 minutes
  • Cook time: 5 minutes
  • Yield: 1

Ingredients:

1 egg, hormone free, omega 3 enriched
1-2 tablespoons water
1 small handful, fresh chives – chopped
1 leaf mustard greens or spinach – chopped
1/2 cup organic cooked & drained beans
1/2 avocado

Instructions:

Heat coconut or olive oil in a skittle over medium heat.

Place egg and water in a cup or bowl and stir well.  Once the pan is hot, pour the egg onto the bottom of the pan and roll pan to spread evenly.  Allow to cook a minute before adding all of the rest of the ingredients.  Cook another minute or two and fold 1/2 of the egg over the other.  Slide from pan onto a plate.  Make sure to use homemade or organic ketchup for the perfect finish.

Btw…

This is one that’s easy to ad-lib, and it’s hard to go too wrong. We love the avocado as a healthy fat, but if you’re trying to get used to no cheese on your omelet, an avocado makes a wonderful replacement and can give that cheese like texture (kind of) At first, we couldn’t imagine an omelet without cheese, and we were using almond or rice milk cheese, but now that time has gone by, we’ve actually realized we don’t even care about the cheese at all–and that cheese or no cheese, this omelet is delicious!

These delicious Gluten free Blueberry Pancakes – are amazing! And if that’s not enough, they are super quick and easy to throw together.  In fact, you’ll probably wonder why you ever got side tracked, thinking you could only make pancakes from a mix.  Why not whip these up and get all of the benefits of anti-aging eating while enjoying something yummy that you love.

Gluten Free Blueberry Pancakes – gluten free, grain-free (a little Paleo love), sugar free, dairy free, soy free & chemical free

REVISED RECIPE

Ingredients:

  • 3/4 cup organic almond flour (or pulp from almond milk recipe below!!)
  • 1/4 cup organic coconut flour
  • 1/4 cup organic tapioca starch 
  • 1/2 cup almond milk -hit link for recipe- these are the best almonds 
  • 2 eggs – free range, hormone free
  • 1/4 cup USDA certified organic avocado oil
  • 2 tablespoons apple cider vinegar
  • 1/4 cup coconut sugar (this version browns up) OR if you like them light, use 1/2 teaspoon of raw organic green stevia powder instead
  • 1 teaspoon organic baking powder (aluminum & gluten-free)
  • 1 teaspoon organic baking soda
  • 1 pinch of Pink Himalayan Sea Salt
  • 1 cup fresh organic blueberries

Serve with blueberries on top. You can throw some into the batter for a yummy treat, although keeping them raw will maintain all of the nutrients. Or live dangerously and split the difference!  

Also add raw honey or pure maple syrup – for topping, if desired.

Instructions:

  1. Combine all ingredients together in a bowl and mix with a spoon. It will have a few lumps, but don’t worry 🙂
  2. Set batter aside 5-10 minutes (the longer, the fluffier they will be)
  3. Heat a large, skillet or griddle over high heat (400%) and grease well with coconut oil.
  4. Spoon batter onto hot skillet and cook until bubbles begin to form. Then flip, and continue cooking until golden brown on bottom.

Serve warm and top with raw honey, pure maple syrup (without sugar of course), or add fresh berries and one of the sweet cream or coconut cream recipes in our dessert cookbook–yummm.

Ok, YES!!! I LOVE crepes. And the funny thing is I used to think they were good, but nothing to salivate over (that’s my yardstick 🙂 But it all started one stormy night last fall, when I went to a blogger event where they were serving crepes. I have to admit, they smelt good, but I knew they were full of ingredients I didn’t want in my body, so I just inhaled. 🙂

But the next day, I had to play. I went to my kitchen and gathered up the best of the best crepe recipes I could find, and tore into them. I replaced all of the not so good ingredients and then I thought of the aroma I wanted to fill my house with as these cooked, and viola!! This is the recipe I put together and it is seriously mouth watering.

Whether you’re a crepe lover or not, you will be after trying this delicious Grain-Free Crepes Recipe – no gluten, dairy, sugar, soy, or guilt either! It is seriously a Paleo or Southbeach dieters dream come true! And it will seriously put any other traditional crepe recipe to shame.

Crepes are one of the easiest things imaginable to make and are great for large gatherings because they are so easy and go so far.  I’ve cooked them up at a few gatherings and people are astonished, because they are not only SO tasty, but they are that, PLUS completely healthy.

Crepes can be a lot of fun too, because literally, the sky is the limit when it comes to toppings. It’s a great way to add more fruit to the diet and will be delicious with all kinds of fruit–peaches, mango, berries of every kind, cinnamon spiced apples, bananas, and the list goes on! 🙂

Delicious Crepes Recipe

RECIPE

  • Prep Time: 5-10 minutes
  • Cook time: 3-5 minutes
  • Yield: 14-16

Ingredients:

  • 1 1/2 cups almond milk -hit link for recipe- these are the best almonds 
  • 3 hormone free omega 3 large eggs
  • 1/4 cup organic coconut oil
  • 1 teaspoon pure organic vanilla extract – I make my own, it’s super easy of course, so if you’d like me to post it, let me know!
  • 1/2 cup organic coconut flour
  • 1/2 cup organic tapioca starch 
    3/4 teaspoon Pink Himalayan Sea Salt
  • 1/4 teaspoon raw, unaltered green organic stevia powder

Instructions:

  1. Heat a skillet to medium heat.
  2. Mix all ingredients together in the blender.
  3. Use an addtional dab of coconut oil on the pan and let sizzle, covering area well.
  4. Drop a small amount (about 3 tablespoons) of batter onto the hot skillet.  Roll the pan to thin the layer of batter and expand the size of the crepe.
  5. Let the batter bubble and become a solid crepe. Then slide the crepe onto the spatula and quickly flip it to finish the back side.  Allow to brown slightly.
  6. Serve with any of the toppings in our Desserts Cookbook or your favorite choices of fruit.

Caramel Crunch Sticky Buns Recipe

  • Prep Time: 5-10 minutes
  • Cook time: 20 minutes
  • Yield: 12-15 servings

Caramel STICKY BUN INGREDIENTS

  • 2 bananas – peeled
  • 3 eggs, hormone free, omega 3
  • 1/3 cup organic cold pressed un-refined coconut oil
  • 1/2 cup certified organic dates (pitted)
  • 1 Tablespoon pure organic vanilla extract
  • 2/3 cup organic coconut flour
  • 1/4 teaspoon pink himalayan sea salt

CRUNCHY TOPPING

  • 1 cups raw walnuts
  • 3 heaping tablespoons raw honey
  • 1/4 cup, unrefined organic extra virgin coconut oil
  • 1 Tablespoon organic cinnamon powder
  • 1 teaspoon coconut flour

Instructions:

  1. Preheat oven to 350F or 180C.
  2. Grease muffin tin cups with coconut oil.
  3. Mix together all of the sticky bun ingredients in a food processor.
  4. Pour into the muffin tin cups, 3/4 full.
  5. Place in oven for 12-15 minutes.
  6. Mix Topping ingredients together in a small bowl.
  7. Remove sticky buns from oven when complete and spoon topping over the buns.
  8. Place back in oven for 5 minutes.
  9. Remove and cool enough to serve.

Enjoy our Grain-free Pecan Pancakes Recipe.  Gluten-free, dairy-free, sugar-free, soy-free. Fast and easy to make and delicious!

And what better way, than to start a new day right, than by eating wonderful, delicious things that will also make our bodies healthier, and yes, more beautiful!

Mmmmm, you’re in for a treat!  They are super simple to whip together and take about the same amount of time as any pancake mix that isn’t going to make you feel better, or look better, for that matter either.

If you have our Beauty In Every Bite Dessert recipe book, these Grain-free Pecan Pancakes are also amazing topped with the Vanilla Cream and fresh blueberries or strawberries.  Or you could make up our Caramel topping, which is amazing with the pecans, or for chocolate lovers, our Hot Fudge recipe with fresh strawberries…and the list goes on and on!!

Grain-free Pecan Pancakes

Ingredients:

1/3 cup almond flour
1 banana
1/8 cup almond butter or sunbutter
3 fresh eggs, hormone free, omega 3
1/2 teaspoon pure stevia powder (if you can have unrefined sugars, you could substitute with 2 tablespoons coconut sugar)
1 teaspoon pure vanilla extract
coconut oil – use for frying in skillet and instead of butter to serve
raw honey – instead of syrup
raw pecans – shelled

Instructions:

Heat skillet on medium.

Place all ingredients in a blender and pulse a few times.  Don’t over mix.  Place a dab of coconut oil onto hot skillet and then pour pancakes onto the hot surface.  Cook until bubbles form, and flip once.  Remove from skillet and serve with a little coconut oil and pecans.  Drizzle raw honey over the top.
