Oh gosh, this olive garden zuppa toscana healthy knockoff soup is absolutely amazing.
In fact, I was a little bummed because my husband gobbled it down so fast that there are no leftovers. Sigh. But the other good thing is that it is really easy to make, so guess what i’ll be making again very soon, lol!

It started out with a few extra potatoes from Sunday dinner, and turkey sausage that was sitting in the fridge. I always have kale on hand, and then a brilliant idea came to me–“could I make a healthy version of Olive Garden’s Zuppa Toscana soup?! So I started playing and this is what I came up with.
Oh, and it If you’ve been following us, you’ll know that we are BIG fans of the benefits of making organic bone broth at home. So of course, I will have to say that this Olive Garden Zuppa Toscana Knockoff is the perfect recipe to use our Homemade Chicken Broth in as well, so you can get the most health benefits from this soup!
K, so long story short, lol. YES! This is a delicious recipe.

- 1/4 cup certified organic avocado oil
- 1 pound of ground turkey Italian sausage
- 1 medium onion, chopped
- 6 cloves garlic, minced
- 1-2 teaspoons organic fresh basil
- 1-2 teaspoons dried organic oregano
- 1-2 teaspoons dried organic thyme
- 2-3 tablespoons crushed red pepper flakes
- 2-3 medium red potatoes, chopped
- 4 cups organic chicken broth
- 2 cans heavy coconut milk
- 1 teaspoon sea salt
- 3-4 cups chopped kale
In a large pan, saute ground turkey, onions, and garlic in avocado oil over medium heat until onions are softened.
Add all other ingredients except kale to the pot. Cover and cook for 30 minutes
Add the chopped kale and simmer for 15 minutes.
