It’s a blizzard outside, and there’s nothing better than a warm bowl of soup on a day like today.Salmon Bisque Soup--healthy, hearty and really tasty! And of course gluten-free, sugar-free, dairy-free, and soy free

This is probably the funniest recipe I’ve put together, yet it turned out so great! Inspired by the cold, I searched for some good soup recipes and went through, picking ingredients and textures that I thought would compliment each other and came up  with a couple of recipes that sounded pretty savory for Corn Chowder and a Salmon Bisque.  So I tore into them to see what would come of them

At first, Corn Chowder sounded really good, and I had a Pinterest buddy request that I do a healthy version of one.  So I was, yeah, maybe a little bit snug, thinking I was going to get so much accomplished today, lol.  You know how that goes, lol.

So I started cooking away and then realized there was no corn in my corn chowder recipe and that it had gone a very different direction.  It smelt good, but what was I cooking??  I had all of the ingredients, but then decided it needed some spinach.  Of course, I had none.  So a happy accident in the kitchen led us to the technique I’m sharing with this recipe.

I actually started with the second ingredients below, got them simmering and removed them from the heat.  Then I had barely cooked the stalk with the sweet potatoes, plantain, etc. so I turned off the heat and covered them tightly…and ran to the store.

I think I was gone 15-20 minutes and came back, threw in the last ingredients and it was the perfect serving temperature too.  So I tried to write it out like that, but it truly turned out perfectly.

So I guess you could say today’s life lesson would be…”when life gives you the wrong soup, laugh, and make it the best wrong soup ever”…  okay, so maybe I’m not exactly what you might call poetic, but I like getting the laugh in there somewhere, haha!

But I was on to something (a pretty amazing something btw) and yes, that’s when this Wild Salmon Bisque Soup was about to be born! It is absolutely delicious, and then some! Get your taste buds ready for some pampering, and your body is in for even a bigger treat!

Wild Salmon Bisque Soup Recipe

  • Prep Time: 10-15 minutes
  • Cook time: 10, let set another 10 minutes
  • Yield: serves 4

FIRST INGREDIENTS
6 cups organic chicken broth
2 large yams, cut into thin circles, then quartered
1 plantain – cut into 1/4inch pieces

SECOND INGREDIENTS
2 tablespoons USDA certified organic avocado oil
salmon – 1 small fillet, 4 ounce
1/2 cup hormone free ground turkey
1 large onion – chopped
2 large garlic cloves – minced

THIRD INGREDIENTS
4- 5 cups fresh spinach, organic
2 tablespoons USDA certified organic avocado oil

HERBS & SPICES
1 Tablespoon organic parsley
1 teaspoon certified organic dried basil

1 teaspoon organic peppercorns

1 teaspoon sea salt
1/2 teaspoon certified organic oregano

Instructions:

Heat the FIRST INGREDIENTS together in a large pan on medium heat for about 2 minutes, then cover tightly.  Leave it on the heated burner, but turn the heat off.  Let set, while you start with the second ingredients.Simmer the SECOND INGREDIENTS together in a skillet on medium heat.  Stir together for 4-5 minutes, then pour into the large pan, containing the FIRST INGREDIENTS.  Cover quickly, and let set.Add the THIRD INGREDIENTS just before serving to maximize the nutritional content.For more nutrition and flavor, remove from heat and add in the herbs & spices.  Stir and serve.Serve right away….yeah, delicious!
