Snickerdoodle Cookies Recipe

This recipe is gluten free, grain-free, dairy free, sugar free & no one will ever know!
I LOVE Snickerdoodles! They take me all the way back to 7th grade, when I was so excited to sign up for Home Economics (not because I thought I’d be an amazing homemaker, but because we’d get to make cookies–dahhhh, a person has to have priorities 🙂
But for some reason our teacher was more into sewing than cooking which I really wasn’t thrilled about. So when she finally agreed to let us make some cookies, my life changed for the better.
The cookies we made were Snickerdoodles and they were ahhhmazing! I don’t know if it was because we had been starved in that class, and our bodies were trying to hoard, but I couldn’t get enough of those yummy treats.
So when it came to changing our diets, I was determined to come up with a good, safe alternative, come heck or highwater or whatever those cliche’s might be 🙂
The really exciting thing is, I think we did it! This recipe is not only gluten-free, grain free, dairy-free, and sugar free, but it also has some ingredients that help boost our nutritional intake-yay!

- Prep Time: 10 minutes
- Cook time: 10-12 minutes
coconut oil – 1/2 cup
(hormone & antibiotic free) egg – 1
lemon juice – 1 teaspoon
liquid stevia – 1/2 teaspoon
vanilla extract – 1/2 teaspoon
3/4 cup almond flour
3/4 cup tapioca flour
1/3 cup coconut sugar
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon baking soda
2 tablespoons organic coconut sugar
1 teaspoon cinnamon
- Preheat oven to 350°F or 175°C.
- Combine FIRST ingredients in blender and mix well.
- Place SECOND ingredients in a large bowl. Stir, then add in FIRST ingredients from blender and mix.
- Drop into walnut sized balls and roll in sugar coating mix. Slightly press down with the bottom of a cup.
- Bake 10-12 minutes. Don’t over bake and cool on rack. We prefer to leave out overnight and the next day they will have a perfect delicious crispness!
